The What's For Dinner Thread - Feb '09(recipe index in OP)

Dinner tonight will be some taco bake kit my DM is making.

I have to work tomorrow for a little while. Schools are closed and we are running a program so I have to go in early. Then I am coming home and taking a nap! :woohoo:
 
Laura--church was super cool! He's really, really good--I hope he really gets a chance to show that to America. Unfortunately, all the drama queen/kings get all the airtime. Our pastor did tell us that it was our duty to each vote 1 million times!:rotfl:

Tonight is going to be leftover pizza. I don't know how many people my parents thought they were feeding last night--but geez! At least the kids are happy, pizza is one of the major food groups in their diets!
 
Tried to catch up but the DIS is running so slow! What I saw so far was that Maria is sad. I'm sorry, Maria, what can we do to help?

The wedding was so much fun! My sister posted photos on Facebook but I don;t know if you can see them. Marisa is going to post when things are running faster.

We got sad news on the way home, Buddy's Aunt passed the night before. We had been with her until after 4 and left so that I could get to the rehearsal. She passed a few hours later but his family chose not to call us, they waited until after we were on the way home. :sad1:

I'll be back tomorrow hoping the things are going a little quicker, I am giving up trying to get to another page for now.

Good morning!

Just checking in really quick. I tried to check in yesterday but my phone service was really spotty, then when I was able to get on a real computer, the DIS was down, then it was so slow!

Anyways, I'm down in nola and I'm having a hop trip so far. I've gone to 2 parades but it feels like 4 because I saw the same one 3 times lol.

Okay... Gotta go. I am going in to work with my friend for an hour. Lol

As far as sleeping, yes still suffering from a lack of! That darn molar is right there but taking it's own sweet time cutting.

Hope everyone has a nice Monday. I need to do some major cleaning today. I have been letting it get away from me lately.

Not sure what will be for supper or if I have the energy to head over to my parents.

Tonight is going to be that yummy lemony-balsamic roast chicken. After I made it for the new mommy last week, I wanted it for myself!

Good Morning! We had a really great time yesterday...it turned out to be a Baby Shower for me! We received alot of great things from alot of great people...I was really surprised and thankful that everyone went so out of their way for us. The girl that organized everything did an awesome job, had great food and made an awesome cake. I felt like this: princess: .

I actually feel like I am hungover today from being on such a high yesterday.

Tom and A are off today...we have a few things to do and I am just going to throw some burgers on the grill and have a salad or something. I need to get my sugar down a bit so I have to be a good girl today!

It does sound strange but everything Kat recommends is always good so I am willing to try it. I'll try mostly anything once!

Little Emma:cloud9: was flipping around today. This was the first big movement other than flutters. 22 weeks and counting!

I am in the mood for spicey so tonight is blackened catfish and the sides I am still poundering.

The kids and I spent the weekend with my parents and Becky. Dinner yesterday was pizza and today we had cod pomodoro. I am sure Becky will post photos.

That sounds like such a nice weekend. I wish I was closer to my family. I am missing my Mom terribly but cannot make the drive anymore and she will not come and stay here. :sad1:

Caili does have skating tonight (she has a competition this weekend) so dinner will probably be leftover pizza from the weekend for me, and I'm not sure about the kids. They ate their leftover pizza last night.

Tonight I have a meeting so I'm eating out. I thought I'd do a "crash diet" to try and get slim for my sister's wedding but with all these lunch and dinner meetings, it's just not going to happen easily.

That is cute! Hopefully, Caili made it to school without breaking hers. It is so windy today, she was having trouble just getting the box on the bus without everything blowing away. Have fun next week!

Here's the recipe (I really think the key to them not spreading or puffing is that there is no egg.):

Simple Sugar Cookies

3 cups flour
3/4 tsp baking powder
1/2 tsp salt
1 cup butter
1 cup sugar
1 tbsp vegetable oil
1 tbsp milk
2 1/2 tsp vanilla extract
1/4 tsp almond extract (optional...I usually put it in, unless the cookies have to be nut-free)

In large bowl, mix the flour, baking powder and salt together. Set aside.
Cream together the sugar and butter using a stand mixer or electric mixer until light and fluffy. Add the oil, milk, vanilla and almond extracts and beat together until smooth.
Stir in the flour mixture until dough is smooth.
Divide the dough in half, and roll it out between sheets of wax paper until 1/4 inch thick.
Refrigerate the rolled out dough for at least 45 minutes. (I put mine in the freezer to speed things up.) It should be well-chilled and firm before cutting out.
Preheat oven to 375.
Using the cookie cutter of your choice, cut out cookies and put on parchment-lined baking sheets.
At this point, you can add sprinkles or colored sugar, if you want, or leave them plain if you plan to frost them.
Gather up the scraps of dough and reroll it once to make more cookies. (The rolled dough will probably need to be refrigerated again before cutting.)
Bake for 8-11 minutes until starting to brown slightly on the edges. Let cookies firm up for a few minutes before transferring to wire racks to cool.
If frosting, let cool completely (overnight is best).

These freeze really well and the recipe doubles easily (I can fit the doubled recipe into my stand mixer), so you can make them in advance.

Hi, everyone! I'm back and have to comment on this. I love to make sugar cookies, but really hate to frost them. My mom showed me this little trick: sprinkle your cut out cookies with powdered jell-o before you bake them. It bakes the jell-o into the cookie and they look and taste really pretty.

As you can see, I have my computer back! Yay!!! Now I'm just trying to catch up here and with Facebook and email. Yikes!

Friday I went to bowling, even though I can't bowl with my elbow feeling the way it is. I had fun just talking with my team and the others. They did some Valentine's gift give aways, and I won 2 large bags of M&M's just for being there! Hooray! I love M&M's!

When I got back, Alan and I went to the school to watch Katie's Valentine's Dance. It was so much fun! She looked so good, and was so happy. Boys were asking her to dance, some, so she wasn't a complete wallflower. They also played several waltzes for dad's to dance with their daughters, and mom's to dance with their sons. It was so fun for Alan to be able to dance with Katie. She was on cloud 9!

Saturday morning, I got up and made pink pancakes for breakfast with pink milk, and raspberry syrup for the pancakes! I also placed the kids cards and candy by their plates, and we had our special breakfast! They loved it! I love doing stuff like that for them, too!

After breakfast, we all got dressed and packed up the car to drive 2 hours to drive to our friends house for the day. It started snowing while we were driving, and it got really yucky! About 5 miles away from our destination, Alan was trying to flick some ice off the windshield wipers, and broke them! It was a tense drive to the town to get some new wipers, but we made it. We got there, and went to the matinee of "You're A Good Man, Charlie Brown" that our friend's daughter was in. She was a great Sally Brown! Then, the adults went to dinner at the Pie Dump. It's a little steakhouse. It was really good! By the time we left for home, the sky was clear, and we had pretty dry roads for the trip home. We got home about 11:00, and immediately crashed in bed!

Sunday was a quiet day, with church in the morning, and just relaxing in the afternoon. I even got about an hour nap! We had dinner with Alan's brother and his family, which was nice. We each fix a meal, then get together and everyone shares. Very nice!

Nothing much on the agenda besides laundry today! We are going to make a cherry pie, later to celebrate President's Day. Dinner will be Nancy's cabbage roll casserole. I'm excited to try it!
