Merle- I had such a craving for chinese a couple of weeks ago, I think someone was talking about it here. Called to place an order and they were closed for renovations! I was so upset, I'm not very pleasant when I'm hungry.

That's just wrong! Don't they know that people are out there craving that? :rotfl:

I have a fantasic appitizer that I thought I would share.

Mini Beef Wellingtons.

1 medium Shallot peeled and chopped very finely
6 oz mushrooms chopped very finely (I use a food processor for both)
1 1/4 sticks of butter
Salt and pepper
Phyllo dough (use Safeway's brand)
8 oz filet Mingon (sp) trimmed and cut into 1 1/2 by 1/2 by 1/2 inch squares.

Saute shallots and mushrooms with salt and pepper to taste in 2 tbs butter, till all moisture is gone. Let cool.

Cut the phyllo dough into 3 strips then cut in half so each sheet will yield 6 pieces.

Melt remaining butter.

coat 1 piece of cut phyllo with melted butter, then at one end put one piece of meat and 1 tsp mushroom mixture, roll up meat in phyllo and when covered fold in sides and finish rolling.

Repeat till all meat is used.

Bake at 375 till golden brown (10-12) minutes. Or alternately freeze them and then bake frozen for 20 minutes.

These are a little labor intensive, but man on man are they good. The reason you need the safeway phyllo is it not as papery as other brands, you need to be able to roll it without it breaking.
 
I would shred it and freeze the meat.

Thanks for the advice! I did end up shredding it, and sadly found there is not much meat on them :confused3 We can use it in the future.

Then we get hime, have dinner and Marisa is calling me, Trouble is panting, crawling and crying! All in a 5 minute span. The emergency vet is 45 minutes away, Marisa and Jeff took him. Hhad thrown a clot. He is 16 and was not going to make it so they had to have him euthanized, both were a mess and i guess Jeff was worse coming home. Trouble is really their cat. I cannot wait for Monday

Today is Wed, which means I'll be eating on the run. I have leftovers from lunch so I may warm those up and eat them later this afternoon.
 

This week is moving into a week that just sucks!

I LOVE this!

Well, I am cooking tonight--but not for my family. A good friend of mine had a baby last weekend and I'm taking dinner over to her and her family. Making Becky's yummy Lemony-Balsamic Mustard roast chicken, some homemade mac and cheese, and then some veggies and fruit w/dips. As for my own family, they are on their own tonight. I'm headed out with my sister (however, we'll probably just stay in and watch AI tonight--one of the guys is from our hometown and is one of the worship leaders at our church! Kris Allen is his name--praying he makes it through tonight!)

Marilyn - I saw your post on the food porn thread about eating at T-Rex. How was it and while you're at it, where else did you eat at?:goodvibes
 
We're eating at T-rex this trip....Ross doesn't know it yet, but he LOVES RF so he will really enjoy this. He doesn't even know it is there, hehehehe.

Crap, a small plane crashed here in town...not too sure what happened yet. Looks like on someone's front lawn.
 
Lauren--YIKES! I pray that everyone involved is okay!

Kathy--We ate at T-Rex in January. We were wandering around DTD around lunchtime and there wasn't a wait. So we decided to try it. Now if you or your kids love dinos, this is the place to be. It's super similar to RFC (there's a storm thing--I think it's supposedly a meteor hitting the earth every 10-15 minutes). And the food is similar too. The food was pretty good--we just ate appetizers, nachos and quesadillas. The different rooms are pretty neat. The bar is supposed to feel like you're under this giant jellyfish under the sea. And the first part has the great big T-Rex in it. My favorite part is the ice room, though. Thought it was pretty cool. I will say that we probably won't eat there again unless requested by the kids--they are both scared of RFC right now, so it will be awhile. On a totally different note, I took your advice from many moons ago and Scott and I ate at BlueZoo in January also. OMG! It was fabulous!!! And the service is awesome too.

Okay, mac and cheese is ready to come out of the oven, so over to my friends' I go! BBL!

It was good. My cousin and I had the T-Rexadillas (quesadilla's) and my sister had this huge chicken sandwich. We only ate half of our food and had the rest for dinner, it was good even cold.

Like Stephanie said, there is a meteor shower and the dino's all react to it. We ate in the Ice Cave and the "ice" changed colors, during the meteor shower it turned red. Our waitress encouraged us to go take pictures around the restaurant. I even took one in the bathroom, it was really nice. My sis was excited because it had all electronics in it, soap dispenser, water, toilets and paper towel dispenser. :rotfl:

We walked in T-Rex and looked around, looks really cool. It had just opened and the lines were super long so we never were able to eat there.

Thank you all for your thoughts and kind words. It was a stressful day and losing Trouble was just horrible. He was a cat who did not know he was a cat. He behaved like a puppy, watched animal shows on TV, played fetch and was so much fun. He came in 16 years ago riding on Buddy's shoulder and spent over a year there. For years he climbed him like a tree whenever he had a flannel shirt on and spent every night with Marisa and Jeff. I miss him already and the other two are all out of sorts today.

Chris had a nice day today, she is tired but alert. Buddy got in late so we decided not to go, it would be too late for her.

Dinner is Gretchen's maple chicken, sweet potatoes and salad. Marisa and Erica took Kady out for dinner and bowling. They are joining Dawn, Donny's GF and her oldest.
 
Gregg- those look so good! We don't have a Safeway around here but I bet because I don't know the difference the other brand, would work out.

I'm not sure what other brand to recomend, but the one that Walmart sells is definately not it, I tried it and it would just fall apart when I tried to roll it.

I did this with an entire beef loin for a party I was catering.

ETA another I did was bacon wrapped dates.

Pit the dates wrap a piece of bacon around it, you only need enough bacon to go around once, secure with toothpick and bake till bacon is done. If you want to get really fancy you can stuff a nut of your choosing into the pit hole as well.
 
Nancy I am sorry to hear about Trouble. :hug: I can't imagine what it will be like without one of my babies. 2 of my cats are getting up there at the ripe ole age of 14.
 
I'm glad that there is a use for Safeway dough. I was not happy with it when I was using it for studel. I bought a couple of boxes and refuse to waste food.
 
Gregg, That sounds good & not too difficult! We don't have a Safeway around here either. Do you think moistening the phyllo with a damp towel would help?


Robin, Sorry about your inlaws! I guess you'll have to be satisfied in knowing they didn't get your yummy sweet potatoes! ;)

I am falling very far behind on this thread. I know there's a lot going on. I've read it all but haven't posted much on this thread. Between being sick and busy, I'm having a hard time keeping up with this thread since it moves so fast.

I went to the doctor on Monday, she had me go back in on Tuesday for blood tests. They had to take the blood from the back of my hand because it was not flowing out of my elbow. :confused3 Anyways, the things they were testing for were all negative, so yay! :goodvibes Apparently, it's just a virus. A really obnoxious one, but it should be on it's way out soon. This is day 13 of this, so it should be making it's exit any day now.... I am feeling noticeably better, so that is something. Still not 100%, but I should be soon. Especially since next week is a week off for me. :woohoo:

Any update on the plane crash in the front yard?

Sheryl - Sorry to hear about your DD and her upcoming surgery, and yours, and your anxiety with finding a good health aide.

Merle, We love FF too! Did you enjoy it?

We loved Yak & Yeti. My sis and cousin had the steak and shrimp dish and both really loved it and that is saying something coming from my cousin, she is SUPER picky. I had the duck and it was really good too. We all had the wonton dessert. It's really good if you have a little ice cream, wonton and pineapple altogether.:cloud9:

FF was great too and I really have to say our waiter was the best. As I said DC is sooooo picky, won't eat anything "unusual", she was steaked out and wanted the pork but didn't like the sounds of what came with it. My sister tells the waiter and he had the chef give her roasted potatoes and green beans instead. And on top of that DC and sis wanted the bags they use for people to carry the leftovers even though we didn't have any and he went out of his way to make sure we got some.

Sis and I had the potato wrapped snapper which was to die for and the Key Lime dessert.
