The What's for Dinner Thread - August 2014 (recipe index in OP)

Dinner last night was Pizza, for some reason it seems my go to lately.

Tonight we have asparagus, peppers, cucumbers, and David will have some pulled pork.
 
I am not sure what I am cooking tonight. I have to stop at Costco so I will probably pick up a rotisserie chicken and fix veg and salad to go with.
 

Tonight I hope I'm not to tired to make the Mahi dinner that I planned for last night.
 
Friday night! YAY!

Work is starting to feel steady. Hope it continues into next week and beyond.

WFDT? We decided to go with Fish and Chips tonight.
 
David is having an endoscopy this morning, positive thoughts and prayers appreciated if you do that.
so he gets to choose what ever he wants for food today!

He was diagnosed with Barrett's Disease about 10 years ago. It is a form of throat cancer, his was a very small amount.... but it was still there and now every other year he has to get the scope. So I am just hoping that everything is pink! Cancer free would be awesome.

Allison- did you make dinner?

PIO- I love fish and chips! We have a craft brewery near us and their beer battered fish is fabulous! I will bake fish, grill fish, and broil fish, but I refuse to deep fry it. WE go out for that treat!

Dinner last night was rotisserie chicken in gravy over noodles.

Tonight I think I am going to finish the leftovers in the fridge, so a mishmash!

I plan to make my red sauce today. I have plenty of fresh veggies that I will grate and add to the sauce, a riff on an old WW recipe. I also need to meal plan and then shop for the week because this day to day nonsense if killing me!

This is my tentative plan so far:

Whole Wheat spaghetti with red meat sauce and sausage

Mexican vegetarian lasagna using whole wheat lavash for the "pasta"

New England boiled dinner for Sunday.

Grilled steak if Buddy gets propane.

The lasagna is for work and will be shared with my coworkers. Buddy insisted that it does not look like food
so he is not going to eat it! LOL!
 
Well he is back there. I think I shared this before but not sure. David's family had an aversion to anesthesia and his grand father died about 11 years ago from a routine surgery that he never woke from. So David is very nervous, the Dr knows and they watch him very carefully and only give light amounts but it is still scary.

Poor thing did not sleep a wink last night.

Oh my gosh, I feel badly for him! I understand the fear, and there is nothing that alleviates it. The PA at my DR office did not understand my problem with an MRI, and had all kinds of solutions. No....Give me Valium. She was appalled, but finally agreed to two pills. OMG! Had she never seen House? Marisa dropped me back home drooling.... but it was better than the mess I would have been trying to have that procedure without any sedative.
 
We are done and waiting on results. David is awake and in recovery. Thank you everyone.
 
Barrett's is still visible but has not increased since last time and he is cleared for 3 years this time, so good news.

I did make the Mahi Mahi, Israeli cous cous and spinach. There was way too much fish. It was frozen Mahi from Trader Joes so I had to defrost and cook the whole package. But we ate everything else.

I also need to meal plan and then shop for the week because this day to day nonsense if killing me!

I go crazy when I don't have my meals planned out. Even if I change my mind and have to shift stuff around, I feel better just having a plan.
