Pavlova




I made the Pavlova for Christmas lunch dessert. It will be a standing regular item on my menu plan from now on.



My starting ingredients:

  • 4 eggs whites (at room temperature)
  • Pinch of salt
  • 200 - 250g castor sugar
  • 2 tsp of cornflour (sifted)
  • 1 tsp white wine vinegar



Preheat oven to 120C. Line a tray with baking paper. Use a round baking tin to draw one large circle (22cm) then draw another circle inside it approximately 13cm wide.

Beat egg whites and salt until soft peaks form. Beat in sugar, a little at time until meringue is stiff and shiny. Sprinkle over sifted cornflour, vinegar and fold in lightly.You should be able to up end the bowl at this stage with no fear of anything coming out.

Grab a dessert spoon and scoop a dollop of meringue. Place this dollop between the outside and inside line. Repeat until a ring of meringue is complete. Create a second layer of meringue on top of the first until second ring is complete. Flatten the top by smoothing the meringue.

Place meringue in oven for 2 hours at 120C. When time is complete, turn off the oven and leave meringue in the oven until completely cool. This is very important as there will be less risk of the meringue cracking and collapsing. I made the meringue the day before and left it in the oven overnight.








Topping ingredients:

  • Whipped Cream
  • Berries and cherries (or any other fruit you like)
  • Raspberry coulis


When cool, spread with whipped cream, drizzle on raspberry coulis then decorate with cherries, blueberries, strawberries and raspberries.

Because my DH is lactose intolerant, I kept the cream off the meringue and only added it to the individual serves. It worked out great for all concerned. We could add as much or as little cream as we wanted.

I know that most of you have probably already seen these photos on FB, but here are few of the meals we enjoyed over the Christmas Holiday.

We had a lot of lobster leftovers, so I turned the empty shells and extra lobster meat into Lobster Bisque.



Then we had Prime Rib, Potato Latkes, and Green Beans. My mom and Fran did most of the hard work on the Latkes (peeling and slicing the potatoes, and chopping the shallots). I just fried them in the pan.

We have a lot of leftovers, Prime Rib, Meatloaf, Lobster Bisque, lobster meat. No Latkes left though. Fran has now caught my cold and I feel a little better. We'll have to see how we feel at dinner time tonight.

Do you have recipes for that yule log and lobster bisque?
 
Ellen - You asked to see the deck and outdoor furniture!

This is the front door. That's the 3-seater bench and the little side table that I washed down and oiled.







The decking and outdoor table/chairs are at the back. All of this area and the furniture was washed and oiled as well. It all looks quite nice and fresh compared to before.








And you can see the storage unit I was talking about just outside in this picture. That's the last bit of outdoor furniture that needed washing and oiling.

WFD last night? Pizza and salad

Tonight is broccoli and sweet potatoes David will add a Chicken breast.
 
Well I was going to make something with our leftover Prime Rib for dinner tonight, but Fran feels too sick to eat anything at all of a normal dinner nature. Instead I think I will make Linguine and Clams for me and whatever she deems fit. Probably a Ham sandwich or Chicken Noodle Soup.
 
WFDT?

DH is going to put some potatoes in the oven. A simple meal is probably best for all of us.
 
Dinner was good but I ate to fast, made my belly hurt.

I really like roasted broccoli, it is just so much better than steamed.
 
Happy Monday all,

We had a wonderful Christmas!! A bit different, as Liam was diagnosed with pneumonia on Monday before Christmas. He was feeling much better by Christmas Eve. The Dr. gave him 2 shots and a prescription. Then on Christmas Eve day Lilly had the stomach flu. Threw up all day and night. So they stayed home Christmas Day. Doug, Matthew and I went to Kearney to celebrate Christmas with them on Saturday. Jay & Elizabeth and boys were with Jay's family. So as we weren't all together at the same time it was a wonderful holiday spent with family and a good time was had by all. We felt truly blessed.

Kimmar & Brandi - sounds like you all had a wonderful Christmas.

I am going into my busy busy busy time. The next 3 weeks will be pure he**. I have to close books, open the new year, get the directory and reporter out, w2's out, tax statements prepared, scholarships paid and that is just what I can think of right now. So if I am hit or miss here for awhile please understand. I will try to at least pop in once in awhile. If there is anything important that I need to know. Someone please FB me!

WFDT ~ Cereal and toast!! I told Doug this morning - the kitchen is closed for tonight. I am so tired of cooking, baking and cleaning up. I am done!!

Brandi - How do you roast your broccoli? I normally steam or stir fry. I don't think I've ever tried roasted broccoli.

I'm seriously thinking of trying a vegan'ish diet for about 6 weeks or so. I've been eating so unhealthy lately!


Ellen - I hope Liam is feeling better now. Poor Lilly. Is she all better?

So I just cut the broccoli up, spritz with water, toss with seasoning, and place in oven at 425 for about 15 minutes.

If you want to try a detox look into the Eat to Live detox it is 6 weeks, and I lost about 15 pounds doing that, but I put it back on when I started eating again, but I felt amazing the last 4 weeks of it, the first week was a little hard. I checked the book out from the library.

It is not vegan per say it is plant based. Vegan is a life stye and Plant based is a diet only way of life. I still wear my leather shoes, have leather purses, and have animal products in my house. Vegans do not eat honey, and honey is part of my diet. among other things... :hyper:
