The What's for Dinner Thread - August 2014 (recipe index in OP)

It's the start of Feb and I'm starting to think about low carbs. That's the bad news.

The good news? It kinda means more protein.

So WFDT?

I got some steak that I'll pan fry and we'll have zucchini from the garden and corn to go with it.

Hey, just dropping in your dinner thread and your post caught my eye. I am changing up my eating to try and lose a few pounds and this exactly my issue.

Right now I am looking at protein grams % vs calories %. I am on MFP and yowsa my carb/fat/protein ratio is just not right.

So far using hard boiled eggs and I picked up a Quaker Oat oatmeal with more protein.
 
It's Monday - weeeeeeeeeeeee here we go with another week.

Your garden harvest is amazing. What may I ask is the yellow thing that looks like a flower? I have never seen it before.

Kimmar ~ I guess I don't have to worry about a tag now - heck I don't even have an avatar right now.

You all know I don't do change well at all and I am NOT liking the changes here. I can't find anything at all!! I know it will be alright but right now I almost don't want to come here anymore. I am whining so I will shut it!!

Well the weather forecasters really got it wrong - oh so wrong - for us this weekend. We were told we would get a trace to nothing at all. WRONG!!! We got dumped on to the tune of around 6 -7" of the white stuff. But the worst part was on Saturday it rained all day until about 7 and then the temps plummeted and started snowing and blizzarding. We had gone to a send off party for the son of our best friends (he is shipping out to basic training for the Army today). When we left to head home around 10pm we almost didn't make it. We only had about 10 miles to go and it took us over an hour. I did NOT take it very well. I was scared to death. You couldn't see 5" in front of you and we had no idea if we were on the road or not. OH MY!! Parts of the interstate were closed and there were tragic deaths associated with this storm. Schools are closed today because of dangerous wind chills. I am ready for spring!!

WFDT ~ Pulled pork sandwiches, homemade bread and butter pickles, sweet potato fries and peanut butter pie.

....hey, it's not that bad...if you give me an idea of what you'd possibly might like as an avatar pic, let me know - I will look for one for you and tell you how to add it....worse case scenario, you could ask a tecchie on the Tech Board....

Ellen - DS is in Year 9 this year. Where did the years go? The yellow vegetable is squash. It's like zucchini.
I hope you're thawing out from the snow. Your weather forecasters sure got the predictions wrong so far!

Kimmar ~ Bless your heart - Thanks. I would like anything with the castle in it. I fiddled here yesterday afternoon for a bit and it's not that bad. I will adapt and get used to it eventually. I just have to relearn where everything is. Ok where is the smiley faces? Oh my!!

PIO ~ That is a squash like I have never seen before. How do you prepare it and what is it called?

Round 2 is on it's way. We are forecasted to really get hit starting tonight and tomorrow. They are warning everyone about driving in the morning. I would not be surprised if school was closed. We are to get 7 - 8" on top of the 7" we got on Saturday. The bad thing out here on the plains is there isn't anything to stop it from blowing and with white out conditions and wind we can get drifts to 15' or more and that is hard. Oh well it is suppose to be in the 40's by Saturday. What a mess!!

Hi folks! I've been hit and miss around here. Sunday would have been a great day for me to catch up here but you all know how that went. I hastily posted the last update on my TR yesterday. All I have left is thoughts and recap.

Tomorrow we head over to DL for two nights for me to decompress. I've been doing OK on the rather restricted diet, but last night I broke down and ate some Ghirardelli squares we had in the pantry. :blush:

Sunday night I made stuffed cabbage leaves. They came out great but were even better yesterday morning for breakfast.

Last night we had a whole ham, green beans and I broke down and fried some potato slices. Potatoes are Gluten free, right? I'm just not really supposed to eat them because of the glycemic index not the gluten part. Oh well besides the small slip up with the chocolate, I've really been restraining myself.

Tonight will be the challenge. Normally we go to a drive through. I plan on making turkey and bacon wrapped in lettuce. Maybe I will also make some peanut butter filled celery as a side. Pickles would be good too. Man thus is difficult!

Hope everyone else is doing fine!

Ellen - I cook the squash like I would zucchini. So, I've been using it in stir fries and the like. I hope you're staying safe in all that snow!

Alison - Enjoy DH. I'm envious! Sounds like you're adjusting to the new diet. Keep it up.



So, its hump night here and I'm so glad that we're on the downward spiral to the weekend. I've been staying off the sugar and the carbs this week and have that 'headache'. Hopefully, it'll clear up tomorrow. If nothing else, I have a massage and chiro adjustment tomorrow...so I'm sure that'll really help!

WFDT? Wednesday night dinner at mum's. I completely avoided the rice and went for the stir fry and seafood curry.

Checking in around dinner time. Looks like I'm in for a busy day at work tomorrow. I got an emergency call today and something unexpected has happened. I'll need to go sort it out tomorrow. With luck, some of the actions I started today will mean that we are in a better shape tomorrow to deal with it.

I've got some Monk Fish which I will panfry. I made a corn salsa to go with it. Corn off the cob, red bell peppers, red onion, cucumber, avocado, cilantro (optional for franandaj), salt, pepper and the juice of 1 lime. The salsa has been sitting in the fridge for the last hour. Just the fish to go.

I'm pretty sure I have salad greens in the fridge as well. So, lots of colour for dinner again tonight.

We like to hear about everyone's meals. You'll find we all eat a diverse combination of foods amongst us. Glad to have you aboard.

I'm on our annual pilgrimage to DL where we use up our DVC points for no other reason than we have them and should use them up. I had planned for us to have dinner at the Plaza Inn where they have a lovely fried chicken. However at 7PM (an hour before the park was scheduled to close) the restaurant was already closed. So instead we ended up at Tortilla Jo's. We had tableside made guacamole and steak fajitas split between the two of us. Since I got corn tortillas, the menu said it was one of their gluten free meals. There was only a sprinkle of cheese on the beans and I'm sure there was no sugar in there. Technically I kept to the diet.

We went up to the lounge after that. I didn't have any cookies, bit the doctor said I can have berries. I'm not sure what the brown stuff on the outside of the strawberries was, :rolleyes1 but I ignored that and ate it along with the berries. ;)

Tonight all bets are off. We're eating at Steakhouse 55 and I don't care what he puts in front of us, I'm eating all of it that I can! In the meantime I plan to be good today.

Alison ~ I am so proud of you!! You are really doing this diet. To me it sounds very hard, but I am sure you will be just fine. What did you end up having for dinner at Club 55?

Mystery Machine ~ I have to admit I am probably the most plain cook on this thread. I am from Nebraska - a cattle and farmer girl. I don't cook anything real fancy and it could probably be called plain also. We should fit right well together. LOL - still haven't found the smilies here!!

We got dumped on yesterday. There was no school and we even closed the Church. We got around 7", some places more, some less. It was snowing so hard at 7 yesterday morning that we couldn't even see the barn. It was total whiteout conditions for about 3 hours. But by noon it was done and the sun was shining. What a difference a few hours makes. We have a 25'+ snow pile in the Church parking lot that will probable be there until June. We are to be in the 50's on Saturday - Go Figure!!

WFDT ~ Corn chowder and homemade rye bread (in the bread machine)

It's Steakhouse 55, and the dinner is tonight. I have no idea what Marcel will feed us, but he always makes it special!

Alison - Brown stuff on the outside of the strawberry? I am SURE I have no idea what that could be either. But what a good thing you did by eating it with the strawb. I'm salivating at the thought of what Marcel could have fed you.

Ellen - DS is enjoying being back at school. I hope he pulls up his socks and works harder at school work thing year!! Love your new avatar too!

WFDT? I ended up eating the rest of the corn salsa. Its a hot day in Melbourne with temps in the 90's. It's going to stay like that for the entire weekend. I think cold meals are in order this weekend.

....we got back later than expected, so we stopped off at Boston Market....got the family meal for 5, which included 1-1/2 chickens, overloaded mashed potatoes, veggie medley, corn, mac'n'cheese, and cornbread....
