The What's For Dinner Thread - August '09(recipe index in OP)

I ended up making shrimp last night at John's request. With a garlic-caramel sauce with sesame sugar snaps and jasmine rice. I should have made brown rice but didn't have time to wait for it to cook. This was one of those 20-minute dinners, we got home pretty late. It was good but I had not made sugar snaps in a while and forgot that you have to de-string both sides! I only de-strung one side. I would make the sauce again though.

Becky - is that bacon in the fried rice? We haven't tried that ingredient before in ours. Thanks for the Shrimp recipe. That will be dinner either Saturday or Sunday!

Yup! I often put bacon in my fried rice. I guess roast pork or chinese sausage would wok too, but I never have those in the house.

Becky, did you decide where your going with your airline tickets you won? Did you ever stay at 9 Beaches in Bermuda? It really has caught my attention.

We did not stay at Nine Beaches, but the day we rented a boat we drove by it. It's really cute! The beaches are smaller than I expected. And, there's a definite difference in the accommodations available. I would want to stay in one of the cottages out over the water. The nice thing about Nine Beaches is that it is not formal at all. John and I forgot how formal Bermuda is! Lots of folks in full suits and cocktail dresses at dinner. I'd definitely consider Nine Beaches for a future stay.

Hey Y'all,

We're home. We had a fantastic time! Great friends, good food & drink it was really the best. I had my house cleaner come while we were gone, so it was nice to come in late last night to a clean house. Our flight was bit rough but we made it home okay. I'm having real life shock right now, doing clothes & wondering where our dinner is coming from! ;)

I haven't read back yet, but I did see that Nancy & Buddy got some good news! I'm so happy to hear that. Prayers will continue for even better news.:flower3:

I feel really blessed to have the friends I've made here on the WFD thread. I've never laughed so much on vacation in my life! It was a true joy to meet everyone! We have some really good, good people here.:love:

I had no idea this was going on. :confused3 Some people from my school are going out your way for some professional development and someone mentioned the weather in that area was bad but I had no idea. How are things now?

The rain came as quickly as it went. It poured for a good 18 hours and then left town :confused3 It did bring a cold front with it (cold front here = below 70) but it's gorgeous outside now!

Aimee ~ I do Yoga every week. I LOVE it!! It is probablty the best thing I do for me every week. I also get regular massages, every month. That is also something that really helps with stress. I carry all of mine in my shoulders and a massage so helps this. Try it - young lady you need to take care of you once in awhile. And don't think for one minute that you are whining - we are all friends and that is what friends are for.

I'm glad you like yoga - a massage is a good idea, too! I've never had one :confused3 I have a friend at church that is opening her own yoga store/shop/whatevertheycallit so I will ask her on Sunday what her recommendation would be. I know there are places that allow you to pay $ and attend just a single class without a commitment.

I spent most of the day with DH and his "charges" - we went to the mall so they could play and run around for awhile. We are going to have breakfast for dinner - eggs, biscuits and gravy, bacon, and hashbrowns. Yum!

Aimee I think we are getting some of your rain. We are having flood warnings here.

My co-worker made it with no injuries though it was touch and go there for a while. We had limited electricity today at work no computers and phone for 4 1/2 hours. it made for a interesting day.
 
Bob and I have been trying for several weeks to go out for breakfast to this little german bakery/restaurant. They make the most delicious pastries and we've been wanting to go there to eat for some time.

It is true about Nebraska - if you don't like the weather just wait 5 minutes, because it WILL change.

That's what we say here in New England too. Yesterday it was nearly 70 degrees, today it was a damp, miserable maybe 50 degrees. Enjoy your weekend!

Did you post pictures of the bird costume?

Not yet because it is still all in pieces scattered all over my family room! I will post them once it is done. I will also post pictures of Caili in her new skating outfit on FB. For those not on FB and interested, I can PM the photo (I think...I've never done that before) or I can just post a picture of the dress.

Thanks for all the good luck for Caili tomorrow. I am a nervous wreck. I don't know why because she always skates well. I think it is because she forgot her program earlier this week (that never happens) and her coach was still changing the program tonight. Caili isn't worried. In fact, she is bouncing off the walls with excitement. Anyway, I probably won't be back here until Sunday, but maybe Becky will post the results.

Dinner tonight was ravioli with a fresh tomato sauce, pizza dough rolls, and salad.

Janice- last year there was a woman who worked with Marisa who kept coming to work with pneumonia. Marisa used to call her Pneumonia Girl. She baked cookies for Christmas for everyone but Risa and her coworker tossed them and thought that they should call hazardous waste to remove them from the building. Seriously, who comes to work coughing, snorking and spewing germs all over their coworkers so close to the Holidays!
Ellen- Have a fun weekend and have two of those things for me, They sound so yummy!

The part went well. Marisa took a lot of pictures and will post them. The girls had pizza for supper and plenty of treats. I made the traditional Witches Hat, a spider cake that was really cute and also had doughnut holes and doughnuts. We had a spider theme and I was able to get a Spider Balloon thing for one of the decorations. The karaoke idea paid off. The girls had a ball singing and it kept them occupied for a long time.
 
I just started using my crockpot for the days my daughter has soccer. There is a fun blogsite that has recipes. I can't put in the link yet, I just joined this site and it won't let me put in links. But if you type "365 crockpot" it should come up. Hope this helps simplify your life! :dance3:

Not much going on here. Just same old business. I was trying to get out of going to a Halloween party tonight, but turns out I have no excuse. So, I had to go buy a costume last night--b/c no way would my girlfriend let Scott and I come over w/o costumes. So, I'm going as Cleopatra (Emma's choice) So, we'll probably be eating there. I've got to figure out a snack to take, and I've been asked to bring sangria as well.

Hope everyone has a great Saturday. I'm headed out for a morning run in a bit. Waiting for the sun to come a bit more so it will start to warm up outside.

Sorry ladies but I am behind and not sure when I will be able to catch up today.

I just wanted to say hello and wish everyone well.

I am waiting for Emma to wake up so I can run to Target get some diapers and a birthday gift for DS before his birthday on Tuesday. It is so hard getting out without him. Today has been a total wasted day because of the rain and DH being on call.

Today DH is out of town for a family reunion. (interestingly, the reunion that evidently caused my inlaws to throw me under the bus last year and caused the rift in our relationship :rolleyes1) I actually have the entire day off so I am resting (Sheryl-Nan-Glynis-Other Moms - take note! LOL) and will do a few piddly projects around the house. I also need to pick up some things for our costume skating party tomorrow night.

I will likely just pick up something for dinner. I'm thinking sushi from my new favorite restaurant...
 
Hi everyone we're back! I have read back and caught up finally.

Lauren - I'm so sorry about Riley. :hug: I know you are heartbroken and worried sick. I would be too. I'm sure he will get along with just one eye, but that doesn't make you not grieve over it. And I saw your post about a possible cleaning person but didn't see whether or not you made a decision. My vote is ABSOLUTELY! You have enough on you without having to run around and clean constantly for house showings.

Kat - I hope you and Johnny had a great time at Universal and that you didn't have any more tooth problems.

Sheryl - :cool1::cool1: Woo Hoo to Alexis on those grades!!!!! And to think she was out so much. Way to go Alexis!

Nancy - I'm thrilled that Buddy doesn't have cancer. I've been praying and wondering but didn't call because I wasn't sure I could make it through the conversation without sobbing. :hug: I know the carpal tunnel is nothing to sneeze at, but that is a heck of a sight better than cancer!

Aimee - I've never tried yoga, but honey you have been through so much that at this point I think you need to try anything that may offer you some relief.

Bethany - I saw your post about your parents' close call and wow, I know you had to be scared. :scared1:

I enjoyed meeting everyone and we had such a good time. Dinner at CG was good, but I thought the food at Citrico's blew CG away! My Mom really enjoyed herself and I appreciated how everyone made her feel right at home. She said I had wonderful friends. :lovestruc I know I do.

Sheryl is right, we need to plan a WFD get together. It was so much fun getting together, we need to do it again.

We stayed at Bay Lake and loved it. The photos don't do that place justice. It was comfortable and roomy and we decided we may have a new favorite place to stay.

But other than meeting with friends and our beautiful villa our vacation was a bust. Kenny's 22 year old nephew overdosed at the beginning of the week so he went home early Tuesday morning, attended the funeral Wednesday afternoon and returned to Disney late Wednesday night. This is the same nephew that I have told all of you about that has wrecked more cars than I can count and was seriously injured a couple years ago in a motorcycle accident. I don't mean to sound unsympathetic, but I am just so aggravated that he has caused his family so much needless pain.

Then Tuesday morning, Mom came down with the 24 hour stomach bug. She made me leave her in the room and insisted that I take the girls to the Halloween party. They really enjoyed the parade, but we only stayed a couple of hours.

Then I woke Wednesday morning not feeling really well. I thought I was just tired but as the day wore on, I started feeling worse and worse. Well ladies, I caught the flu. By Thursday evening, I had a fever over 104 and Kenny took me to the urgent care clinic. Completely misnamed BTW. Not urgent and not a great deal of care. But anyway, I left with some tamiflu and we decided not to tempt fate any longer and left a day early - Friday morning.

Hailey woke up Friday morning with a cough and a slight fever and her dr was nice enough to call in some tamiflu for her. Jessica - the therapist who was also keeping Tori was nice enough to pick it up and leave it here at the house for us since we arrived after our pharmacy closed. She is still feverish and coughing terribly but at least we came home early enough to get her started quickly on the tamiflu.

I still feel pretty cruddy and the bags haven't even been unpacked. I'm trying to ignore the things that need to be done around the house and take it easy.

Anyway, it's good to be back home sick or not.
 
Gretchen Sorry you all are not feeling the best :hug:. I understand about Kenny's nephew but it is still sad when people can't open their eyes and accept the love around them.:hug:

Aimee I think we all need a lesson is "rest". Doing odds and ends is not resting!:rolleyes1 Plop yourself on the couch put in a good movie and stay there.

Aimee, I have tried both. When I was first laid off pilates was a lifesaver for stress & relaxation. Both my DM & I have tried tai chi. Give it a shot, I think you'll be so happy you did.

Wanted to share this with you, simple, fattening & delicious.
Baby Eskimo


Recipe Ingredients

2 oz. Kahlua
2 Scoops Vanilla Ice Cream
8 oz. Milk
Instruction

Leave ice-cream out for about 10 minutes. Add ingredients in order, stir with chopstick (butter knife or spoon works too). Consume immediately and often. Nice and light, great for following a heavy drink.
 
1 lb ground beef
1 sm diced yellow onion
1 package sliced mushrooms
1 can campbell's golden mushroom soup
1/2 cup milk
1 small sour cream
1 Tbsp EVOO
Salt (to taste)
Pepper (to taste I used cayenne)
Worcestershire Sauce (to taste I tend to be heavy handed on this, I love it!)

Saute chopped onion in EVOO. Add ground beef and brown. Add mushroom till they begin to cook. Drain onion, beef, and mushroom mixture. Next stir in can of soup and 1/2 cup of milk. Once well incorporated stir in sourcream, then season to taste with S&P, and worcestershire.

Served over buttered egg noodles.
