Maria- I have never figured out how to make small batches of anything so hop in the car and come on up! You are always welcome in my home!

I have two bits of good news. Our aide (the one that had knee surgery) will be back tonight! We are going to cut back her hours & days, mostly because the cost is just killing us.

While DH was on the phone with DVC checking something for our Oct trip, he booked another one!!! :banana: We'll be taking Alexis with us again!

I hope that you are able to manage a schedule that works for all of you!

Your Bob is fantastic!!!!!!!!!!!!!!!!!! I am so happy that the three of you are going to be going together. I just got through telling Buddy that if he wants to enjoy that innocent magical vacation style with Kady he better giddy up and agree to a trip! There will always be time with her but I don't think we are going to be enjoying the "sweet" vacations much longer.

Nancy, Your dinner sounds soo good! Also thanks for posting your recipe! I bought some red lentils. We have a Lebanese rest. here that makes a delicious soup & I was going to try to come up with a recipe that tasted like thier's! Now I don't have to make up the recipe, but you know I will also still have to "tweak" it myself! :laughing:

I did not have any red lentils, actually I don;t know what kind they were :confused3 Is there a big difference?

Kat, I'm almost ashamed to post this recipe. It is super easy, but it is a favorite of the kids.

Cheese-Stuffed Meatloaves

Gretchen- ever since Lauren, I think, posted the pizza muffins I have been making my meatloafs that way. I never thought to stuff them with cheese though, that will be next!

You are way better than I was when my Mom was sick, I seldom cooked and even then it was pretty quick

Nan, I don't know if they will taste different or not! I had been looking for recipes for a Lebanese lentil soup & I noticed most called for red lentils. I usually just by the regular ones sold in the grocery (greenish brown) then when I was hunting for something else in the bins at Whole Foods I noticed the red lentils. So I'll have to cook them sometime this week & let you know!

Yes, You need to get Buddy in gear! Does Kady get out of school for President's Week? ;);) wink, wink, hint, hint! Wouldn't that be fun!!!!:wizard:

When he found out, he could get 2 nights at WL & 3 at Bay Lake Tower he booked it! :yay: I'm so excited to stay at both of these resorts. My only worry is it's also President's Week! :eek: So I'm sure it's going to be super crowded, but oh well. We'll be taking Alexis with us again! :cutie::dance3:

Sheryl I am so glad to hear of your wonderful DH. Wow, what a guy. You all know theContemporary is my FAVORITE resort. Lucky you!!

The poor man is practically trying to run whenever I mention Disney lately :lmao: I do need to check Kady's schedule, I think they did away with teh February vacation after all of the snow days last year and goodness knows what else needed to be trimmed

If you tell me that your dungeon has a stuffed bird perched on a twig with earrings and a necklace I will :faint::lmao::lmao: I am supposed to get rid of my "stuff" but everything I try to toss Buddy keeps trying to get me to give away...but when I suggested getting rid of his dusty old stuffed pheasant that flew into his truck 25 years ago he is :scared1: :eek:. He knows better than to bring it upstairs.......it will be flying once again :thumbsup2

Ann -- I'm so glad you didn't have to cancel your trip!

Funny story: The kids and I were out running errands and for a break, I decided to stop at a local farm that has a small petting zoo and an ice cream stand. The kids each got a container of food, so they could feed the sheep, goats and donkeys. It was a pretty big container, so after a while, they got bored feeding the animals individual pieces and decided it would be far more efficient to just hold the container up the the animal's mouths and let them eat from it. Sounds like a good idea, right? Well, the animals were smart, and they just grabbed the containers out of the kids' hands so they could have the whole thing. I managed to wrestle one out of a goat's mouth, but in doing so, the food dumped all over the floor outside the pen. The goat was determined to have that food, so he just broke out of the pen. :eek: He was a pretty big goat, so all the little goats also escaped. I don't know what it is about Caili and goats, but those little goats were all following her and she was desperately trying to herd them back toward their cage while also trying to move toward the farmstand to tell someone the goats had escaped. She started running, and the goats all ran after her. She was yelling, "Goats! Goats!" It was hysterical. Things seemed under control when one of the farm workers came out, so I bought the kids their ice cream. As soon as they had it, the goats charged back over to Caili and were chasing her around the picnic table, hoping for a taste of the ice cream. One even jumped up on the table! Anyway, that was our adventure for the day.

We're having hamburgers, corn on the cob and salad for dinner. Although the sky just got pretty dark...I wonder if there are storms coming.

I'm so glad you won't be worrying as much about me! My DH is quite a guy, sometimes he's a guy I want to shove in the freezer! :laughing: But most of the time he's a pretty good guy! :laughing:

Busy weekend. We got Matthew moved and settled in. As we were leaving they were starting the grill for BBQ chicken and Corn on the cob. Oh my!! He will be just fine. I was so proud of myself. I didn't cry when I told him good bye. He was having so much fun how could I be sad. I waited till we were pulling out of town. Doug and I went and got a sandwich and he kept telling me it would be alright. And I know it will, but it sure felt good for him to keep telling me. We drove around town for about an hour and I finally realized that Doug didn't want to go home to the empty house either. We pulled into the drive and we both remarked it was sad to not see his truck in the drive. Oh well life does go on!! We shall be just fine in a few days.

My heart just breaks for you, I'm still trying to get used to not seeing Kyle's car in the driveway. I'm here for you.:hug:

Kat, I'm almost ashamed to post this recipe. It is super easy, but it is a favorite of the kids.

Cheese-Stuffed Meatloaves
1 1/2 cups pasta sauce, divided (I usually use whatever I have in the freezer, but you can use a jarred sauce)
1/2 cup Italian bread crumbs
1 egg
1/2 cup diced onion
1 1/4 pounds lean ground beef
1/4 teaspoon salt
1/8 teaspoon pepper
4 sticks string mozzarella cheese


Preheat oven to 400°F. Coat baking sheet with cooking spray. Combine in mixing bowl, 3/4 cup of the pasta sauce and remaining ingredients (except cheese); mix well.

Divide into four portions; shape around each string cheese, covering cheese completely. Seal tightly so hot cheese will stay inside; place on baking sheet. Bake 20–25 minutes.

Warm remaining pasta sauce and serve on top of loaves.

This week is busy. Tom is going away on business (pittsburgh), andrew and i get hair done, school shopping, riley to dr. (his tummy is acting up) and getting ready to go to the beach for a few days next week. we are going to wildwood crest NJ. its a dry town so I need to stock some alcohol too! ;)

We are having some really good chicken I made some time in the past, that Alex requested. I have no idea since most of my recipes are Nanatized :confused3. All he can tell me is that it was really good and had seasongs on it.:rolleyes1

Hi all, hope everyone is well. I had some things to do on the computer so I thought I'd pop over and say hi. It's been crazy here. Fortunatly the hurricane didn't bring any winds but really high tides and waves. Our beaches were closed because the waves were crashing on the stairs to the beach, there was no beach to be on. (Our beach parking lots are up on a bluff and you walk down to them.) Still today I could see the ocean waves breaking from my work (i've got a great view) and we are a few miles back.

Sheryl- We'll be at bay lake towers president's week. I'm glad presidents and mardi gras are the same week this year because we'll be there the next week too so I'm hoping our second week will seem quite. I think as long as you know it will be crowded you can deal with it.

Laura- I love your story! I have an image in my head of Caili running circles around the picnic table.

Gretchen- That meatloaf sounds like it would be a big hit in our house. I think of you often.

Off to do the mountains of work I should be doing. Pork of some kind tonight.

I'm glad you've been enjoying the goat story. I don't know what it is with Caili and goats. We have more funny goat encounter stories involving Caili than I think the average non-farming family has. The goats either escape or do something they aren't supposed to do, and Caili tries to reason with them. Maybe she's a goat whisperer. :laughing:

hamburgers are red meat, that calls for red wine, if you're having turkey burgers I go with white! You give me a food & I'll find a wine to go with it! :laughing:
