The What's For Dinner Thread - August '09(recipe index in OP)

Last night, I fell asleep watching TV - just couldn't keep my eyes open! - so I moved to our bedroom at 8pm last night and slept until midnight. Got up, got a drink of water, watched 30 minutes of Big Brother After Dark, and fell back asleep :confused3 I think the last time I went to bed at 8pm was when I was 10 :laughing:

What a great thread...Im always battling for new dinner ideas!! Ive been watching the Food Network lately getting other ideas and inspiration from there!!

Great to see a lot of the "old regulars" and hope to meet some new ones!

Oh, and BTW: meatball subs for dinner tonite!

Well we were going to cancel our November trip due to DH's new job and funds. Paying for 4 airlines ticket and a park ticket soon for DS was really going to add to cost. When DH called to cancel the rep told him we had a promo code for free dining in Nov. :woohoo: So my personal travel agent (DH) decided we could do it if we drove (hopefully in our new minivan by then) and stayed in a value. :banana: We are all really excited and in WDW mode again. I booked my ADRS today online...love it!!! We got HDDR, Kouzzina, Kona, WCC, Crystal Palace, R&C, & Tutto Italia. Just had to share my excitement.

WFD- I made a frozen orange chicken asian kit. It was really good I added mushrooms, scallions and some chinese crispy noodles. We were out doing errands so I never got to make my Shish Kabob which is marinating...dinner for tomorrow.

We are hoping to be close to closing a deal on a Toyota. The dealership we walked out on yesterday already called us this morning. We expect to hear from the salesman early this week hopefully. What they offered us really wasn't a bad deal. We walked out and are really pushing our luck, we will probably take their deal if they don't come down but they do not need to know that yet.

Well I need to get these kiddos to bed. We decide to wait on the IMAC (which we love) for now. Prioritizing! But we did get a new Dell monitor, so my computer is up and running again.

I bought the groceries to make the Perogie Casserole sometime this week...I can't wait.

Talk to you all tomorrow, prayers and hugs to all. I feel like I am missing so much lately. Thanks all for the advice on buying for DSD.

The cobbler was good. It is also a WW recipe.

2 bags of frozen fruit still frozen, any kind I used peaches and tossed in a heaping cup of fresh blueberries

1 white cake mix

12 oz diet sprite

Put the fruit on the bottom of a 13x9 in pan
sprinkle the cake mix over the fruit
pour sprite over the cake mix

cover with foil and bake at 350 for 20 minutes. Remove foil and bake 40 more minutes

Hey all! Just poking my head in quick to say HI! I'm headed to drop Emma off at school and then off to work. This is her first day of getting to school "early" so she's a bit nervous. She wants me to walk her in again. No complaints out of me! I love to be needed. We had leftovers on Saturday night after church and then last night we grilled burgers. Not sure about tonight--but it will be quick. We have open houses at both kids' schools tonight. Busy, busy, busy!

Dinner tonight is chicken cutlet, broccoli. Going to use the marinade on the chcken that I made for the rum pork a few weeks ago.

Busy weekend. We got Matthew moved and settled in. As we were leaving they were starting the grill for BBQ chicken and Corn on the cob. Oh my!! He will be just fine. I was so proud of myself. I didn't cry when I told him good bye. He was having so much fun how could I be sad. I waited till we were pulling out of town. Doug and I went and got a sandwich and he kept telling me it would be alright. And I know it will, but it sure felt good for him to keep telling me. We drove around town for about an hour and I finally realized that Doug didn't want to go home to the empty house either. We pulled into the drive and we both remarked it was sad to not see his truck in the drive. Oh well life does go on!! We shall be just fine in a few days.

It is suppose to be in the 90's today with storms coming tonight through Wednesday so if I am going to grill, tonight might be the best night for it.

WFDT ~ Cheeseburgers, pasta salad and fresh cucumbers and tomatoes.

Ok I have rambled enough - thanks so much for always being here for me. I have no idea what I would do without all of you.

I am braising a bone in roast pork and will add carrots, rutabaga and potatoes. I am not even going to bother with a salad, I know I won;t touch it.

Kady loves the boxes of Madras Lentils that you can buy from Costco. I think that they are expensive but have been buying them becasue she eats it. Well, Marisa found a recipe for Lebanese Lentil soup online so I tweaked it to be a lot like the box taste (you know I have too ;)) and it is amazing!


Lebanese-Style Red Lentil Soup

Cook Time: 30 Minutes
Ready In: 50 Minutes
Servings: 8
"This is a wonderful, tangy, spicy soup that sort of resembles split-pea. I sometimes add grilled chicken breast or cooked and cubed sweet potatoes for texture. Have fun with it!"
Ingredients:
6 cups chicken stock
1 pound red lentils
3 tablespoons olive oil
1 tablespoon minced garlic
1 large onion, chopped
1 tablespoon ground cumin
1/2 teaspoon cayenne pepper
1/2 cup chopped cilantro
3/4 cup fresh lemon juice
Directions:
1. Bring chicken stock and lentils to a boil in a large saucepan over high heat, then reduce heat to medium-low, cover, and simmer for 20 minutes. 2. Meanwhile, heat olive oil in a skillet over medium heat. Stir in garlic and onion, and cook until the onion has softened and turned translucent, about 3 minutes. 3. Stir onions into the lentils and season with cumin and cayenne. Continue simmering until the lentils are tender, about 10 minutes. 4. Carefully puree the soup in a standing blender, or with a stick blender until smooth. Stir in cilantro and lemon juice before serving. I sauteed onions, carrots and celery with the garlic, used a stock I made from a hambone, and let it simmer until everything was very tender. I added cumin, coriander and turmeric. I pureed the whole thing and then added a can of crushed tomatoes and two cans of kidney beans. it is delicious!

Morning Y'all,

We have had some beautiful weather here the last couple of days! Low humidity aroud 40%! It's still getting into to the 90's but gosh it feels so much nicer without the humidity. Nothing much going on, we went to church & then out to eat somewhere we could sit outside & enjoy the weather. I didn't do any cooking this weekend.

I have two bits of good news. Our aide (the one that had knee surgery) will be back tonight! We are going to cut back her hours & days, mostly because the cost is just killing us.

While DH was on the phone with DVC checking something for our Oct trip, he booked another one!!! :banana: He didn't tell me he planned to do it, just starting asking about availabilty for Mardi Gras. When he found out, he could get 2 nights at WL & 3 at Bay Lake Tower he booked it! :yay: I'm so excited to stay at both of these resorts. My only worry is it's also President's Week! :eek: So I'm sure it's going to be super crowded, but oh well. We'll be taking Alexis with us again! :cutie::dance3:


Where have you found it cheap? I need to stay on the lookout but am rarely at places that sell much wine.

Today was a very busy morning at church but I was batting 1000 in the end.

Aimee, I'm sorry my cheapest place is a local grocery store. I have found it under $20 at World Market.

Sheryl -- I find it so hard to believe Alexis is having trouble with friends. She is so outgoing! I am sure she will be fine once the girls get to know her better.

We had a very nice weekend with Becky and John. The food was delicious. I think Beck forgot to photo the fish tacos from last night, but I know she has pictures of the seafood fra diavlo from today. YUM!

We're going to do a wait & see until Thurs. We have a class meeting that night.

Nancy, Your dinner sounds soo good! Also thanks for posting your recipe! I bought some red lentils. We have a Lebanese rest. here that makes a delicious soup & I was going to try to come up with a recipe that tasted like thier's! Now I don't have to make up the recipe, but you know I will also still have to "tweak" it myself! :laughing:
 
Kat, I'm almost ashamed to post this recipe. It is super easy, but it is a favorite of the kids.

Cheese-Stuffed Meatloaves
1 1/2 cups pasta sauce, divided (I usually use whatever I have in the freezer, but you can use a jarred sauce)
1/2 cup Italian bread crumbs
1 egg
1/2 cup diced onion
1 1/4 pounds lean ground beef
1/4 teaspoon salt
1/8 teaspoon pepper
4 sticks string mozzarella cheese


Preheat oven to 400°F. Coat baking sheet with cooking spray. Combine in mixing bowl, 3/4 cup of the pasta sauce and remaining ingredients (except cheese); mix well.

Divide into four portions; shape around each string cheese, covering cheese completely. Seal tightly so hot cheese will stay inside; place on baking sheet. Bake 20–25 minutes.

Warm remaining pasta sauce and serve on top of loaves.
 
Maria, actually I am too tired to cook. Thankfully, I planned ahead for these times. I had the loaves and the sauce in the freezer so it is just a matter of heating everything up and Kenny can manage that if I get tied up at my parents' house this evening.

quick fly by to say hi. i have been reading and keeping everyone in my thoughts and praying for all who need them.

Things are good here. This week is busy. Tom is going away on business (pittsburgh), andrew and i get hair done, school shopping, riley to dr. (his tummy is acting up) and getting ready to go to the beach for a few days next week. we are going to wildwood crest NJ. its a dry town so I need to stock some alcohol too! ;)

Dinner over the weekend was meatballs and pasta and yesterday we took a drive to Philly and had cheesesteaks from Pat's. Tonight will be grilled flank steak, taters and salad.

I should be able to check back later...the boys are going to the movies.
