Today we're having those Mickey Mouse burgers from Kroger ::MickeyMo and garlic fries. I've got plenty of lettuce and tomato left from the BLTs the other day so I guess we'll have a tossed salad as well. :sunny:
 
We have tons of leftovers from yesterday - that will be dinner tonite. Have a great day everyone!!
 
Tonite I am trying Alton Browns stovetop mac and cheese with oven fried chicken drumsticks and a veggie.

Thanks. I did Glynis' last week. I'll try the Paula Deen next week. I am sick of cooking and cleaning. Doesn't the mcD's Monopoly game start today? Maybe McD's for dd and hubby for dinner. I don't eat it and don't like them to have it so it will be a treat for them. Dd has cheer AGAIN tonight.
 

Tonight is Chicken Cacciatore...I am trying a new recipe that was from the weekly grocery store circular...it is a quick recipe...pasta and either broccoli or salad...

Tonight I'm trying the Brushetta Chicken Bake. I'll probably have a salad with it. Any other ideas for sides?

Maybe I'll make the Banana Fudge Cake too. Why do I workout? :rotfl:
 
Glynnis' Pot Roast tonight along with a salad,bread and cake for dessert. My aunt is coming for dinner so I'm adding in stuffed clams as an appetizer.

This is my first time making Glynnis' Pot Roast BUT my boss made it last weekend and called to tell me how they all loved it. Then a friend made it mid-week and loved it! When the recipe first "broke out" on this thread I had just made a pot roast and we had eaten on it for 3 days, so I just had to wait a while before doing another. Looking forward to it!
 
I think I'm going to make a chicken pot pie and maybe a pumpkin cheesecake. :)
 
We're having leftover pot roast tonight. I did want to share what I did to make some yummy mashed potatoes last night.

I steamed fingerling potatoes until fork tender. I smashed them and added some of the cooking water back in, drizzled on some EVOO, added fresh ground pepper and shredded parm. cheese.

If any is looking for some new wonderful slow cooker recipes the latest edition of Cooking Light magazine has them. They're for beef, pork & lamb.

Where do you buy fingerling potatoes? I've always wanted to make them, but I can't find them anywhere.

I'm going to do something with chicken cutlets, but I haven't decided what yet. Any ideas?

Here is the chowder I am making for tomorrow's dinner, it is so tasty, and I basically lived on it in college:

Corn and Cheddar Cheese Chowder

1 large potato, peeled and diced
2 cups chicken stock, hot
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn
1 1/4 cups heavy cream (or half and half, or milk, whatever you like)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste
1/2 cup white wine

Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the wine and simmer for two minutes. Then add the cream. Whisk together and then pour this mixture into the potato/stock mix. Now add the corn kernels and let the soup simmer about 5-10 minutes. Stir in the grated cheese and stir until melted. Eat.

Serves 4

We had Kalua pork the other day. This is left over thrown back in the crock pot with a bottle of BBQ sauce, more smoke flavour and some W. Sauce.
 
The chicken was so good tonite!

Ranch Chicken
1/2 cup dry breadcrumbs 1/4 cup grated parmesan cheese 2 tablespoons yellow cornmeal 1/2 teaspoon italian seasoning 6 chicken thighs (skin removed) 1/2 cup bottled ranch salad dressing
  1. In a shallow bowl, combine crumbs, Parmesan cheese, cornmeal, and Italian seasoning.
  2. Dip chicken into salad dressing, then coat with crumb mixture.
  3. Place chicken in a greased 13x9 baking dish.
  4. Bake, uncovered, at 375 degrees for 45 minutes or until juices run clear.
I can't say my cream biscuits came out right.They tasted good, but were kind of dry and heavy. 1st attempt at biscuits :confused3 I'll try again.

Sorry it took me so long. DH kicked me off the computer all weekend, so this is the first chance I've had to catch up. Here's the recipe:

Mini Tuna Loaves

1/2 C. chopped celery
1/3 C. chopped onion
2 tsp. canola oil
3 cans solid white tuna, drained and chopped
2 C. soft bread crumbs
1/2 C. toasted wheat germ
2 eggs, lightly beaten
1/4 C. milk
2 Tbs. minced fresh parsley
1/2 tsp. dried thyme
1/4 tsp. salt
1/4 tsp. pepper
1/3 C. shredded cheddar cheese

In a small skillet, saute celery and onion in oil for 5 minutes or until tender. In a large bowl, combine the tuna, bread crumbs, wheat germ, eggs, milk, parsley, thyme, salt and pepper. Stir in celery mixture. Shape into 6 oval loaves. Place in a 15 X 10 X 1 inch baking pan coated with nonstick spray. Bake at 350 degrees for 20-25 minutes or until lightly browned. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

It's my recipe, and I'll tell you that you can adjust the ranch to taste. We like the ranch flavor, so I use quite a bit of dressing. If you want to try this, just add the ranch a little bit at a time.

Glad you like it! My family is not so keen on the mayo/mustard potato salad, so this was a great find for us! I love the bacon and the cheese, too! Very yummy! Hmmm, I'm going to have to plan on that salad soon!

Pina Coloda Cake

1. One box white or yellow cake mix or coconut whichever your like.
2. One small can of Sweetened Condensed Milk
3. One can of Cream of Coconut Drink Mix (usually found where the alcoholic drink mixers are but no alcohol in it.)
4. One can crushed Pineapples (Can be any size depending on your pineapple likes, also can be optional.)
5. One Large Container Cool Whip
6. Shredded Coconut (Optional.)

Cook the cake according to the directions. While it's still hot, combine the Cream of Coconut and Condensed Milk in a bowl. Poke holes all through the cake and pour the mixture into the holes. Use all of the mixture and just smother the cake with it.

Put the cake into the fridge and let it cool very very well. When cool or cold drain the crushed pineapples and spread them over the cake. Put a little or alot depending on your likes.

Then smother the cake in the Cool Whip. Top with shredded Coconut!!!! Serve Cold!

VERY VERY RICH!!!!!!!! It's also good without the Pineapple and Coconut!

Oh, yummmmmmm! That cake sounds heavenly!!!!!

I won a baking contest with a recipe very similar to that Pina Colada cake! I used white cake, no pineapple (my mom's allergic) but all the other ingredients were the same. I also used a bag of coconut and a jar of caramel topping and some coconut rum. I toasted the coconut in the oven until it just browned. After the cake came out of the fridge, I warmed up the topping, added a shot of the rum and stirred it around. Then I sprinkled the top with the toasted coconut. It really was fabulous! If you like coconut, definitely try it!

Tonight I caved and ordered food. I was busy watching/spoiling my 2 yo nephew today. It's on its way! (Chicken Francese with rice and salad :) )

Tomorrow is Crockpot Shrimp Newburg. :)
