Amazing recipes here! I keep saying that I need to diet, but then another awesome recipe appears, and I put it off for another day :confused3 .


Friday was so busy here, we had quesadillas. Black bean refried beans with lime, tomatoes scallions and cheese and chicken and ccheese. Yummmmmm!

Saturday, DH and I went to 50th birthday party so dinner was out. This was when I decided I needed to lose weight. My DH and I used to go dancing a lot, but not so much anymore.....well we danced and he was not out of breath, but the jitterbug nearly gave me a stroke! No Kahlua cake for me for a while :guilty: .

Today I was supposed to go and clean out the rest of the furniture from my DS home in NY. Well, I packed a picnic lunch for us because a good portion of the 3 1/2 hour ride has no place to eat, and he lived 30 minutes from any civilization. We found out that he could leave the furniture with the house, so we cancelled, and I have tons of sandwiches to use up, so no cooking for me.
 
Last night: Dsis and the kids came over. We had grilled porterhouse steaks, and an unsuccessful tomato risotto (too acidic), plus green beans with almonds.

Today, my Dsis and I attempted to make gnocchi from scratch. Erm. Not so successful! Thankfully, we had the presence of mind to taste one before mixing them with my 'killer' sauce. Final menu was back-up-plan cheese ravioli with the sauce, garlic bread, and an arugula salad (same one I always post about).
 
Here is the chowder I am making for tomorrow's dinner, it is so tasty, and I basically lived on it in college:

Corn and Cheddar Cheese Chowder

1 large potato, peeled and diced
2 cups chicken stock, hot
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn
1 1/4 cups heavy cream (or half and half, or milk, whatever you like)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste
1/2 cup white wine

Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the wine and simmer for two minutes. Then add the cream. Whisk together and then pour this mixture into the potato/stock mix. Now add the corn kernels and let the soup simmer about 5-10 minutes. Stir in the grated cheese and stir until melted. Eat.

Serves 4
 
Hubby had an evening shift today so I just made tacos for lunch. I am cooking dd some fries and pizza rolls for dinner :rolleyes1

I do have a question if anyone can help me. I bought a boneless beef shoulder roast on sale. What can I do with it for tomorrow night's dinner? Preferably in the crockpot as dd has cheer. Also something that would go well with egg noodles as I have some I need to use. I already have plans for potatoes and rice this week so wanted something different.

So I know all of you wonderful cooks can help me out. Thanks
 
Check out the recipes on pg. 1 - off hand I know of two - Glynis's pot roast and Paula Deen's. Both are crock-pot recipes and both would go well with the noodles! :thumbsup2
 
Glynis, my dear you did it again - we had some friends over for a BBQ today and I did your Ranch Potato salad - big hit, especially with my son(16) who thinks everything is better with "Ranch", I had to make sure he left some for everyone else!! :thumbsup2
 
Did someone start a Thanksgiving recipe thread? If so, did I miss the link? I'd love to subscribe.

We went out to lunch today and DD is working tonight. So I think DH and I will either eat our leftovers from lunch or fix a sandwich.

I tried two yummy receipes over the weekend that I thought I would share! The first is a dip,

1. 1 Large can of Hot Tamales, the kind you buy in the grocery store, take the peelings off of the tamales.
2. 1 Large can of Hormel Chili with No Beans!
3. 1 Block Velveta Cheese!

Thats it, put it in the crockpot and mix it all up, serve with Fritos Dips or whatever. This was awesome!! My DH said he could eat it without the chips, LOL!

Pina Coloda Cake

1. One box white or yellow cake mix or coconut whichever your like.
2. One small can of Sweetened Condensed Milk
3. One can of Cream of Coconut Drink Mix (usually found where the alcoholic drink mixers are but no alcohol in it.)
4. One can crushed Pineapples (Can be any size depending on your pineapple likes, also can be optional.)
5. One Large Container Cool Whip
6. Shredded Coconut (Optional.)

Cook the cake according to the directions. While it's still hot, combine the Cream of Coconut and Condensed Milk in a bowl. Poke holes all through the cake and pour the mixture into the holes. Use all of the mixture and just smother the cake with it.

Put the cake into the fridge and let it cool very very well. When cool or cold drain the crushed pineapples and spread them over the cake. Put a little or alot depending on your likes.

Then smother the cake in the Cool Whip. Top with shredded Coconut!!!! Serve Cold!

VERY VERY RICH!!!!!!!! It's also good without the Pineapple and Coconut!
 
I had to work all day so DH grilled some chicken and we had mashed potatoes on the side. The girls just got done baking a batch of white chocolate chip cookies for dessert. :sunny:

That sounds very interesting to me cause I LOVE to eat canned hot tamales. I am definitely gonna try it!!
 
Today I made "Carolina Style Barbecue" (used pork loin) in the crockpot. I got the recipe for the rub and the vinegar sauce from my friend in Raleigh, but she usually makes in in a smoker, and I quartered her recipe for my amount of meat. It was good! I made it with low fat cole slaw and rolls. We had some "gifts" in the fridge, too. Sat. was my niece's christening and my Aunt made old fashioned Italian "gravy" (red sauce) with meatballs and sausage. Mmmm! So we had a little of that, too. :)

Tonight we are having Boo's Smoky Chicken Patties and French fries. I am cleaning house all day today so I needed something yummy and easy :)

ETA: Jadenlayne: My mom makes that pina colada cake often. It was my grandfather's absolute favorite. When he was so sick with cancer and had no appetite for anything, he asked for this cake. :sad1:
 
Jenny-thanks for posting the link to the holiday thread! Thanksgiving will be at my house for the 1st time this year, so now I'll have some fun stuff to try out!

Tonight will be roast chicken and new potatoes--probably rub some Herbs de Provence on both the chicken and pot. with some olive oil
