We are now living at the Nort West tip of Mississippi. It looks just like Slidell did when It first started getting populated. We JUST got a Dillard's!

Ohhhhhhh! New Orleans food - how I miss it. Dh and I can never figure out why the 2 places we lived in Florida (Tampa and Boca) don't have lots of seafood restaurants like New Orleans does (did). :confused3 Red Lobster REALLY doesn't cut it, know what I mean? :rotfl2:

The sun was shining brightly then POOF transformer blows. Entergy took its good ole time gettin around to fixing it. You can get a dose of New Orleans on Monday nite football. ESPN arrived en mass today. It should give the city some much needed "good" exposure!! Now I gotta go fry up dem pork chops dawlin!! :thumbsup2
 

My dinner tonight probably takes the loser pot when it comes to this thread: cereal. DH is at work, and DS says he had three helpings of school lunch today and is "stuffed". If anyone wants the recipe for my dinner tonight, just let me know! Okay, just kidding.
 
Here are requested recipes. The recipe for Paula Deen's pork chops calls for 6 cups of oil, I didn't like how they came out when I tried it that way, so now I just put about 1/2 inch of oil in the skillet so that they are not covered in oil, just able to fry nicely on each side. Also, her house seasoning is simply garlic powder, salt & pepper.

"Lady & Sons Fried Pork Chops"

6 c. vegetable oil
House seasoning
6 pork chops
1 c. buttermilk
1 c. all purpose flour

Heat oil to 350. Sprinkle house seasoning on both sides of the pork chops, rubbing in to the meat. Pour buttermilk over the meat and turn to coat all sides. Season flour generously with house seasoning. Dredge each chop into the flour and shake off excess. Place chops into the oil and cook until golden brown on each side. If the chops are thick, take one out when you think they are done and cut into it at the thickest part, cook remainder accordingly. Drain on paper towels.

This is by no means a healthy recipe, but occassionally INDULGE!!


The following recipe after prepping can be grilled, roasted or baked. My method is to place broccoli onto aluminum foil and wrap it up. Place the pack of broccoli on a cookie sheet and bake at 375 for approximately 30 - 45 minutes.

Lemon/Parmesan broccoli

3 large stems of broccoli (1 1/2 lbs)
1/3 c. olive oil
2 1/2 Tbsp fresh lemon juice
1/4 tsp. salt
1/8 tsp. pepper(freshly ground)
3/4 c. grated parmesan cheese

Cut broccoli into serving size stalks, leaving stem on (3 1/2 inch lengths). Hold each stalk vertically with flowerets down on a cutting board and cut in half.
Place broccoli into large plastic bag. Combine oil, lemon juice, salt and pepper in a bowl, pour into bag with broccoli. Seal bag and marinate at least 30 minutes. Can be done early in the day. Put parmesan cheese into another large plastic bag. When ready to prepare, remove broccoli from bag and place into bag with parmesan cheese and shake until well coated. At this point all that is left is to decide how you wish to cook it.

I worked from 7:30 AM yesterday until 9:00 pm............did anyone really think that a teacher only works 8:00 - 3:00 ????????? :rolleyes: So it was pizza night for us!

Tonight, I'm thinking of making lasagna.

Does anyone have a chili crock pot recipe???
I remember using ground meat in a crock pot recipe a few years ago, and it was terrible...the ground meat gets too??? too??? (can't explain it...but I didn't like it). So, I would want a chili recipe using chunks of meat (not ground) for a 8 hour crock pot cook.

I'm going to help my aunt with catering a high school reunion tonight so I'll be bringing home lots of leftovers. Roast beef, scalloped potatoes, green beans, pork bbq, fried chicken, & rolls. Hopefully it will last the next couple of days so I don't have to go grocery shopping before our trip. ;)

DS and I are going to a friend's birthday party, I don't know what they're serving for dinner. They always make great food though. DH won't be going to the party so he's on his own, which probably means McDonald's.
 
Last night I ended up making a pan-seared ribeye steak with blue cheese butter for DH, and a bacon-wrapped cheese stuffed chicken breast for me (didn't eat it though). I also made green beans, roasted cauliflower, and macaroni and cheese.

Today I think we are going out to dinner with my sister and my parents, though I have not heard from any of them yet, so plans may have changed.
 
Well, I'm finally trying it! Glynis' Pot Roast is in the crockpot. I surrounded it with baby carrots, Yukon Gold potatoes and Vidalia onions. Everyone that comes in the house remarks how great it smells, so that's a good sign. :)

I'm considering making a salad if I feel up to it. I've got a lot of work to do today and it will be nice to have dinner cooking itself. :)
 
Dislifer, I haven't tried my recipe in the crockpot yet, but I imagine it would turn out pretty good. I'd stir it around every few minutes when it's first cooking, but it has to cook to awhile, in the covered Dutch oven, which sounds like a pretty good match for a crockpot. The little chunks of beef are really tasty, too!
 
I just realized that I forgot to say how much I enjoyed Glynis's pot roast the other day. It was delicious! :thumbsup2
 
Thanks LuluLovesDisney! I'm just worried about trying a recipe that isn't a crock pot recipe. Am I being weird or what???!!!
