Kathy - I am so very proud of you for your commitment to quit. I'll be pulling for you and praying for you. However, your smoking or not smoking does not in any way affect how I feel about you personally, anymore than I hope my being overweight doesn't affect how you may feel about me.

Thanks Gretchen, I have some weight to lose but decided to conquer this first as I'm sure I'll pack on a few more pounds. I've been reading that even if you don't eat any more than when you were smoking, your metabolism changes. So I'm just going to wait until after our vacation to start dieting.

One one my neices is actually going to spend an extended semester in Australia (26 weeks) and my other neice is going to London. Its alot different from when I was young. I went to a local school so my going away was the WDWCP...:thumbsup2
 
Hi gang! I have a bit of a silly question. I'm wanting to attempt Chicken & Dumplings, but I'm really not sure what to serve with it. It's not something I grew up eating, so I'm at a loss as to what works. Any favorite sides?

Glynis, I'll probably be giving your Chicken & Dumplings crock pot recipe a whirl. What do you normally serve the troops when this is on the menu?

Kathy-You didn't mention the quitting smoking thing on the NOLA thread, so I'll offer my support here. My dad gave up smoking for the umpteenth time the day my oldest son was born (happened to be beginning of Lent). He finally decided to make it stick - for 8 &1/2 years! I understand it's a tough addiction to beat, and nothing will work until you make the decision to be done with it. You're a STRONG woman - just take it one day at a time, heck, one hour at a time! Just keep posting to the DIS - All that typing will keep your hands & mind busy! Here's a :hug: and a big :cheer2: that you've made the decision.

Old Fashioned Coconut Pie

1 1/4 c. coconut
1 c. milk
1 T. flour
3 eggs, beaten
1 c. sugar
1/2 stick of butter, browned
pinch of salt
1 pie shell

Mix 1 c. of the coconut with remaining ingredients and pour into pie shell. Dust nutmeg over top if desired. Bake at 350 until set about 30 minutes. While baking or before baking, toast the remaining 1/4 c. coconut and sprinkle on top of pie when finished.
YUM...thank you for that one! I might have to make that this weekend sometime..i love me some coconut pie!!! ;)

Has anyone else tried the Jack Daniel marinades in the pouch. This is now the second time I used them. I don't think I'm ever going to go with my own recipes again they are so easy and good.

On a food related note: Do you use any of those packaged " crock pot beef stew" seasonings with your beef stew? I am itching to buy a nice crock pot this fall/winter and i know Greg would love some homemade beef stew..but i have NO CLUE how to even make it..just wondering if i could throw various seasonings in and it would come out good, or should i just get one of those seasoning packets???

Beef stew in the crock is easy! Here's what I threw together (literally).

Stew meat (approximately 1.5lbs)
Flour
Salt / Pepper / Cayenne Pepper / Garlic Powder
Cooking oil
1 Med. onion, diced
Baby carrots (small package)
4-5 small Red potatoes, diced

Dust the stew meat with flour (probably 1-2 Tablespoons), then season liberally. Brown stew meat in pre-heated pan lightly coated with oil (I only use enough to prevent the meat from sticking). Dump seasoned meat into crock with onion, carrots & potatoes. Cook in crock until beef is fork tender. (My cooking time was probably 3-4 hours on Low, but my crock cooks FAST).

We like our beef stew with lots of gravy, so I think I added a packet of brown gravy mix and a small amount of water (probably no more than 1/2 cup).

Kathy I'm glad your doing good. Did you go "cold turkey"? Your trip to the WDW will help get you over the Hump since no one will be smoking. It's hard to be around smokers for a while.

MA pigletfan I have a really easy beef stew recipe at home I'll post it tonight you can make it in about 1 hour.
 
Kathy, good for you to quit! I know it's hard, I read that it is harder to quit smoking than it is to quit heroin. I've never smoked myself, but DH's parents and sister used to. They've all managed to quit over the years, and they are all a lot healthier because of it. His sister in particular was having lung problems until she quit. His Dad and Mom were able to go cold turkey, his sister needed medication to get off--but she was smoking two packs a day. I am so glad that she was able to stop.

It was good! The grits were nice and creamy, and the shrimp were very sweet.

I usually serve a nice green salad with it. You could do steamed broccoli, or green beans, too. There's enough starch with the dumplings, but you could do a rice dish if you felt like you needed it!
 
I have no idea what's for dinner tonight! It will depend on whether or not Alan gets sent to California. He got back from Washington state early this morning, and we're in "wait" mode to see if he gets sent to relieve the photographer they sent down a couple of days ago. If he goes, we'll do something simple, maybe breakfast for dinner. If not, I'll maybe do lemon cream chicken, with brown rice and broccoli. Stay tuned!

Kathy - 8 days is an amazing accomplishment. I've heard that it takes 21 days to make a habit, but only 3 days to break that habit. You are well on your way!!! I'm so proud of you!!! Babysteps, girl, babysteps!!! Feel free to come here to vent when it gets difficult!!! You can take your cravings out on us!!!

We're having leftover Taco Soup. It was tasty so I'll share the recipe - HA!

Taco Soup
2 lbs. ground beef, browned
1 small onion, chopped (I left it out)
4 oz. can green chiles
1 pkg. taco seasoning
1 can hominy or corn (I used hominy and I drained it prior)
3 (14.5 oz.) cans stewed tomatoes
1 can kidney beans
1 can pinto beans
1 pkg. Ranch dressing mix
1 ½ cups water
Salt and pepper

Throw it all in the crockpot and let it simmer. We topped out with some crushed chips and cheese.

Actually knowing that Disney was going totally smoke-free was the so called "last straw" for me. After that it was just mentally getting ready to do it. I went to my Dr and he prescribed the new medication Chantix for me. I did a lot of research on it and my Dr said he has had 100% success rate with the patients he has prescribed it for. So far so good, no side effects at all!

You may be sorry you said that.:rotfl: The first three days were hard, since then it's been hit or miss, some days are worse than others. Today, so far has been great.

When Kyle and I went on the college tour this morning, I was saddened to see how many college kids are smoking. These kids grew up knowing how bad it is for them. When I started smoking there were no warnings, labels, and TV ads for cigarettes were everywhere. I didn't know better.

It was a little rough walking through the campus and seeing the cigarettes and smelling the smoke. It was my first time since I quit that I was exposed to that. BUT I WILL DO THIS!!!!!!!!!:cool1:


Becky - Those pics are amazing as usual, especially the lobster & mahi tacos!!!:cloud9: And you are right it is a fact that the nicotine addiction is harder to kick than heroin, but I'm gonna do it!!!!
 
MApigletfan, we were on St. John, in the USVI. It's our favorite vacation spot. This was our 6th trip there since 2003.

Aimee, here is the shrimp and grits recipe. Ladies from the south please do not pick on me for my likely heretical take on this dish!

Shrimp and Grits (adapted from a recipe on epicurious)

¾ cup quick-cooking grits
2 ½ cups chicken stock
2 tbsp. milk
3 tbsp. cream cheese
4 tbsp. butter
1 bunch scallions, chopped—some greens reserved for garnish
1 lb. shrimp, peeled and deveined
1 ½ cups corn kernels
Salt and pepper to taste
Juice of one lime

Melt 1 tbsp. butter in a saucepan. Add the scallions (except for the ones you are reserving for garnish) and sauté for a few minutes, until just tender. Add chicken stock and bring to a boil. Lower the heat and stir in the grits. Cover and cook 5 minutes, stirring occasionally.

Stir the milk and cream cheese into the grits, cover again, and cook over low heat for about 7 more minutes, until the grits are tender. Set aside.

Meanwhile, season the shrimp with salt and pepper to taste. (You could also add Cajun seasoning here, I think that would be really tasty)

Melt 1 tbsp. butter in skillet and add the corn. Saute for a few minutes, until crisp-tender. Scrape the corn into a bowl and set aside.

Melt the remaining butter in the same skillet, then add the shrimp and sear on both sides until just cooked through. When the shrimp is almost cooked, add the corn back into the pan with the shrimp to reheat it, and season with salt and pepper to taste. Sprinkle the lime juice over the skillet contents.

Plate a mound of grits, top with the shrimp-corn mixture, and garnish with the scallion greens.

Serves 3-4.

Way to be strong!!!! It can't have been easy to be around all that smoke. Your posts sound strong, and full of enthusiasm! You are going to beat this!!!
 
Well, my dh's grandmother passed away this morning right before sunrise... the nurse in ICU said it often happens right before dawn.... I like to think the sun rose as she ascended to heaven. :sad1: Since we need some serious comfort food here- I'm making a huge lasagna. We will probably get 3 meals out of it (one of those being my breakfast tomorrow). It was weird, I just HAD to get to the grocery store this morning... I had NO idea what I was going to buy....

TigerKat, congratulations on going smoke free! That is great news! I will cheer you on :cheer2: Keep it up! I have been smoke free for over 12 years now, it is still hard sometimes, but I am so glad that I did it. It is very hard though, so I do commend you!!

Tonight we are having pork chops, twice baked potatoes and brussels sprouts.
