Wow, we were chatty today! It took me forever to catch up!!

Nancy, were you asking me if I have advance notice on DH's dinners? I could not tell. If so, then yes, I always know in advance. I actually love egg dishes for dinner, and I don't eat red meat (or cook it at home for DH much) so, our dinners were equally pleasing to both of us. The only problem for me is that my parents eat WAY earlier than I am used to, so I was not very hungry.

Kathy, your son is a cutie, you must be so proud!

Jenny, I am glad to hear that Ed is doing better, though sorry he has to go back in. You guys have been so strong all along.

Piglet483, did you marry my brother when I was not looking? :confused3 Seriously, my brother has severe self-imposed dietary restrictions, such as no vegetables at ALL, exceptions are butternut squash, but only if pureed, and potatoes, as long as they are PLAIN potatoes, or french fried or mashed (with no add ins). He LOVES chicken, but only white meat. Also, no ground chicken or turkey or sausages from those meats. He will eat roast turkey, but no gravy with it. He does eat other meats like beef and pork, but only in certain cuts. and is very picky regarding fish, and if the meal is vegetarian, forget it! He MUST have lemonade with his meals. He absolutely refuses tomatoes.

Here is the deal. He is 28 years old, He is at the Sunday linners that you must know about since you said you read the thread. I refuse to cook special for him. He finds what he can to eat from what's there, he (or my Mom :rolleyes1 ) makes himself something to eat, or he does not eat at all. I don't care. He's a grown man, he is not going to starve. I will concede to him in small ways, like last Sunday when we had linguine with clams, I dished him up a plate of the pasta with no tomatoes, herbs or clams, just pasta. He has no allergies, just aversions. I feel he could benefit from trying new foods and so don't pander to his extremely limited palate.

That brother-related rant said (I guess you can tell your issues struck a nerve with me...;) ), I once made an amazing manly meaty sandwich for a Super Bowl party... maybe, since you want to have something you know your husband would like for this tailgate, you would like to try this recipe? It's easy, it's meaty, and it's a sandwich! I'll post that and the buffalo chicken dip recipe for you.
 
Bonnie's Buffalo Chicken Dip

4 boneless, skinless chicken breasts halved, about 2 lbs., poached and shredded with 2 forks
1 12 oz. bottle Frank's Hot Sauce
2 8 oz. pkgs cream cheese
1/2 C. chopped celery
1 16 0z. bottle of ranch or blue cheese dressing
8 oz. shredded sharp cheddar or jack cheese

Preheat oven to 375 F. In a 13X9X2 baking dish, combine the chicken and bottle of Franks and smooth to an even layer. In a saucepan over mediuim heat combine cream cheese and ranch or blue cheese dressing. Stir until smooth and hot. Pour evenly over the chicken and sprinkle the celery on evenly over it all. Bake 20 mins uncovered then sprinkle on the cheese and bake until just bubbly and melted. Let stand 10 minutes before serving. Serve with sturdy scoopers like celery sticks or corn chips.

And then, the meaty sandwich:

Italian Hero Sandwich

1/4 cup red wine vinegar
1 tsp. dried oregano
1/2 tsp. dry mustard
salt and pepper to taste
1/2 cup olive oil

combine all ingredients well and set aside.

1 loaf italian bread, preferably with sesame seeds, about 2 feet long, cut in half lengthwise
1/2 cup seeded and chopped pepperoncini* (leave off if your DH hates spicy food. They are not really spicy though)
1/2 cup seeded and chopped cherry peppers*
2 cups finely shredded iceberg lettuce
4 tomatoes, sliced, then sprinkled with salt and drained on paper towels for at least 20 minutes and blotted dry (keeps the bread from getting soggy)
5 ounces thinly sliced salami
5 ounces thinly sliced cappicola
5 ounces thinly sliced mortadella
5 ounces thinly sliced spicy salami (optional!)
5 ounces thinly sliced provolone cheese

*both pepperoncini and cherry peppers are found jarred in the international aisle--pastene is the brand around here.

Lay out foil long enough to completely cover the sandwich when wrapped.

Place the bottom half of the loaf on the wrap and put on the pepperoncini and cherry peppers. then add lettuce, then tomatoes. Drizzle over a few tablespoons of the oil-vinegar mix, reserving remaining dressing. Layer meats, one type at a time distributing evenly down the length of the bread, and finish with a layer of the cheese.

Drizzle remaining dressing over the cut side of the top half of the loaf. Place on sandwich and wrap tightly in foil. Set aside for at least one hour, or refrigerate up to four hours, to develop flavors. Slice into 3" pieces to serve.

I hope in a month or so that I'll see a different in my overall health. They told me I could bring in food, things to do, etc since I'll be there from 1030 - 330 or so; I think I'll drive through ChickFilA and bring in "brunch" to tide me over.

My dinner tonight was Taco Bueno. I adore their mexidips and chips, it was on the way home, and I'm alone tonight with the dogs =)

I have a pile of recipes I'm desperate to try but we never seem to be home these days...

Aimee - please take care of yourself! You are very important to us! Let us know how things go, ok?

I just wanted to post an update on DD. I went to work today and when I got home, she was laughing and having a great time with the evening therapist. She ate a PB&J this afternoon and seems to be much better. I really appreciate all of the prayers and concerns for her health. Like Kyle, I feel like I have a family here even though we haven't met. Thanks to all of you. :grouphug:

I am glad that you posted the recipe. I made something like this years ago when I was selling Pampered Chef and it was a nice football meal. There is something satisfying about layers of sliced meat and some nicely seasoned veggies between good bread while you are perched in an armchair watching Monday Night Football!

YUM! i am SOOO making this for my next Patriots get together :) I might just have one just to make the meaty sandwich!!

Can I rant today? My sister is divorced and has been for almost 15 years. Her Ex is the nastiest man on the Planet and has had her in court for most of that time. He never cared about the kids until they became a tool to use against my sister. I can't even count how much has been wasted on lawyers. My sis has supported her children, bought everything for them, and sent the girls to college. He has not bought them a pair of sneakers, but he did clean out their bank accounts and sell a car that my sis bought for one of the girls. He kept the money. He is suing her for $100 thousand dollars in back support etc, but the judge offered some settlements and he would choose $3000 a year for ten years. My sis was ready to pay just to make him go away. He has not worked in 15 years. She had won the court case but the presiding judge's written decision did not make sense so it was overturned on appeal.

Well, as I said, she was prepared to settle because he has made the kid lives a nightmare and has forced them to choose sides over and again, the youngest is so stressed that she avoids both of them. Yesterday my niece, her oldest DD called her and asked her to co-sign a loan for a car that she was buying for the youngest. It seems one more promise gone, the money set aside for the car gone, and he will not make good on it.

My niece is working two jobs, in grad school for her Masters and is the mother hen to the girls, her sister included, living in the home she rents. She took her savings to put toward that car but it is not enough and she already has her own car payment. My sis would help but the girls are trying to do this themselves.

I am so angry, I cannot understand how anyone would steal from their children and then make them feel guilty if they take help from their mother. And then blame all of his woes on her, and make his kids bear the burden of his lazy vindictiveness! My sister will find a way to help the girls without damaging their pride, and we are going to as well. My DH still cannot understand how he has not helped them yet :confused3, he does not understand what man would let his children struggle or go without.

I am generally a believer in Karma and will usually let others be the judge, but if my sister changes her mind and lets the court case go forward, I am going to changing my tune. If you will, I would appreciate help with keeping my mouth closed. I have not said much to the kids at all about their Dana and never about his family...spawns of evil as well... but it is going to be harder now. Right now I feel like I have a volcano exploding inside and I cannot let my wonderful nieces know that I know. They are always sworn to secrecy in regards to their father's financial deficits and they are legion.

What a mess this "man" has made for his children!!
First of all, I too am a true believer in Karma...and this "sperm donor" (he doesn't seem like much of a father) will get his, and I feel sorry for whomever is standing close by when he does!!
You vent away all you need to here with us...let us hear your frustrations and anger on it so that you can keep those lips sealed for now. There might come a time that you have no choice but to let your thoughts be made aloud, until then type away!
Your poor sister, I can't even imagine how she must feel inside. How maddening and tired of it all she must be!! It sounds like she has raised some good girls though, and that says a lot right there. At some point in life, either with someone making sure they know what the case really is on their "dear ole dad" or just them putting things together on their own as they get older, they will see what the truth really is to it all.
I just love buddy more and more, lol, that man has a heart of gold!!

Kathy--I love having a nephew to cheer on and be proud of in life...I had to show the picture to Kris, and he thought for sure it was a college grad picture, he loved how the senior pictures are so formal!!

Nancy-I too get some funny looks from people when I talk about my friends as well...my mil will say things like "well they aren't REAL friends" and I just say your right they are family actually...that really really annoys her!!!

Gretchen- I am so happy to hear that she had a good evening and ate a bit as well. I have been so worried about her. How is her mouth looking today?

I loved the sandwich recipe, as it reminded me of one that we used to make at the pizza shop I worked at in high school. It was a favorite to the local construction guys, and college kids. We sold a lot on Sundays during football time as well. I will have to recreate it some weekend, if I can get away with it, Kris is not a fan of sandwiches at home, unless it is fried egg or grilled cheese, as he takes sandwiches a lot to work for lunch. I try to fill in with leftovers or other hot meals for him, but when he is not in his office and out on job sites a sandwich it has to be.
I might be able to pull it off if he is watching football, and I put other goodies with it!

I have to run into town today and get some groceries etc. Ross has football tonight. Supper will be smoked sausage and I am putting Kathy's smothered cabbage with it, along with some yummy artisian bread we picked up from the farmers market yesterday.

Piglet, sorry I missed the comment about the cream cheese. Because of the hot sauce & dressing, the cream cheese just makes this rich & creamy. It doesn't scream cream cheese flavor, KWIM? But, you know DH best, so it's your call.

WFD tonight - Meatball po-boys. My 1st attempt at a crock-pot tomato gravy / spaghetti sauce succeeded, so no take out needed tonight!

UGH..what a crappy situation..I personally cannot relate but i do feel for your sister and definitely understand your disgust...:mad: what a class A. jerk...but again, karma baby, karma. ;)

Sure - the best thing about a shrimp boil is that you decide what you want in it, so anything goes!!!! Get a large pot and fill about halfway with water. Season with Zatarains crab boil, sliced lemon, and lots of salt. I also add cayenne pepper, whole heads of garlic, bay leaves, chopped celery and sliced onions. We like small red potatoes, smoked sausage and the small frozen ears of corn in ours. Got this from a web page for ya:

New Orleans SHRIMP BOIL
Boiling shrimp is a little different, in that the shrimp cook in about 3 minutes. I'll do this in a big pot in the kitchen rather than outside, unless I have a ton of people coming over.

Use 1 pack of Zatarain's Crab, Shrimp and Crawfish Boil seasoning per 5 pounds of shrimp. Bring it to a boil with whatever else you're putting in with the seafood -- corn, potatoes, onions, lemons, etc. -- and let that boil for about 10 minutes, until the corn and potatoes are cooked. Add the shrimp and let boil for THREE MINUTES only!. You may then strain and eat, but I like to dump some ice into the pot and let the shrimp soak for a while -- the longer they soak in the seasoned liquid, the spicier they get!

I promise you won't have any left even if your DH doesn't eat any. My husband says it is addictive and he isn't a fan of cream cheese or sausage.

I also have a bacon recipe which is just bacon and dry mustard with brown sugar. If you're interested, I can look up the proportions and post later.

The sausage dip is a great idea. I have made one before but I've never used cream cheese in mine - just velveeta cheese. I may try that though - surely its not obvious to the taste. Probably just makes it creamy...

Piglet--Nancy has given you some wonderful advice, and if you keep giving us clues as to dh likes etc we can come up with some things for you to try I am sure. Have you talked to dh about wanting him to at least try new things?

Yea - we've had that talk before - he knows how I feel about it - and I think he will eventually come around. "Cause if wife aint happy - aint nobody happy" he's learning this real quick...

I have found though - there are 2 kinds of people in this world.
Those who Live To Eat.
Those who Eat To Live.

I am the first - DH is the latter. A tough obstical to overcome.
A few more things he's not interested in: Pork chops, or Fish (shellfish is ok),
He don't do leftovers ("I had it last night - why would I want it again?")
He don't eat anything green. (one of those silly mental things I guess)

As for pleasing your hubby....just start cooking for yourself. If he wants to eat, he will, if not, there's really nothing you can do about it. However, if you make it a habit, he'll eventually start trying things that you make, and it will be all right in the end. Just don't get frustrated! It takes time, and effort, and you are clearly willing to spend both on this! We are here for you to vent to, celebrate with, etc., just keep it up!!!

I know you said that your DH doesn't want chicken for dinner, but if he does like it, there's an incredible recipe listed on the front page: Baked Chicken Reubens. It is to die for yummy!!!! And since the chicken in baked, it's a bit more healthy than the breaded and fried stuff he's getting for lunch.

If he doesn't like sauerkraut (like my kids), simply leave it off his portion, and add more swiss cheese and thousand island to his.

Yeah - I have seen many delish chicken recipes on this thread. I copied down the ones that I could make work for me and him. I am gonna start trying them anyway. I'm learning to modify recipes to make them DH proof.

Like I said - I'm gonna make it with it in there - what he don't know won't hurt him. I think he will enjoy it. I really think a lot of his aversions are just in his head - that if he will try it he just might like it.

Well last night we had open face turkey sammys. Sourdough bread, turkey and turkey gravy. With chips on the side.
Tonight we will eat out. Friday night is always our eat out night - and 90% of the time its our local fave Mexican Restaurant.

Thank you all for listening. He is so nasty, and has driven a wedge between her and her youngest boy Timmy. Thank God Chris and Debbie were able to crack that tough nut open so that she saw him before he left for Iraq. She has cried for two years and that animal enjoyed it, never caring that his son needed his Mother.

Oh well, enough.....

I am cleaning today so I don't know what to do for dinner. I am dragging my family over to my Moms to move the rest of my stuff...and I have a lot of stuff...so that Gail and I can clean tomorrow. I figure out what to eat as the day goes on.


Piglet- keep cooking, eventually he'll want to eat your good food, and if he likes Mexican....well we do too so plenty of ideas if you want them :thumbsup2
