I think I did this right, it has white specks on it that I can't clear up. YES I Boo Hoo'd at the photography studio when they pulled out the big 11x14!

Whoa! Talk about boo-hoo! That's no baby boy any longer, he's all grown up! Kathy he looks so much older than the pic we saw just a few months ago! But gosh so handsome!!! Thanks for posting the pic! And remember we're here for you as your baby starts jumping out of the nest!
 
Kathy- the girls are tight, he is no baby! Your handsome son has grown up a lot in the past year, you have every reason to be so proud of him....handsome, an athlete, smart to boot..... and picks up green tomatoes for his Mom :thumbsup2

Piglet -- That buffalo chicken dip cajunmommy suggested is addictive. However, if your DH doesn't like cream cheese, he wouldn't like it. What about buffalo chicken wings? You could use a package or two of the frozen wings, cook according to package directions, then toss the wings in a bottle of Wing It and a stick of melted butter. If you can bring your crockpot, you could keep them warm in that. The wings are traditionally served with celery and bluecheese dressing, but you could bring along some ranch for DH.

Also, I made an easy bean dip the other night that would be good for a crowd:

2 cans black beans, well rinsed
1/2 bottle beer (I used Sam Adams lager)
1/2 jar of your favorite salsa
1 stick pepper jack cheese (like Cabot), cut into tbsp-sized slices.

Cook the beans and the beer together until the beans start to get mushy and most of the liquid is gone. Add the salsa and heat through. Add the cheese one slice at a time until melted,and continue until all the cheese is added and melted. Add hot sauce if desired.

Serve warm with tortilla chips.

You could keep this warm in your crockpot too.

I'm not sure what's for dinner yet tonight. My neighborhood is having a happy hour with drinks and snacks, so depending on how much snacking I do, I may not need dinner.
 

First of all, learning to cook for a crowd takes time, especially if you have been cooking for two. Don't beat yourself up, it will come along.
How much notice do you usually have so that you know what is coming towards you?

I love your wine cellar...

Buddy will drink red wine but he doesn't care for the big reds, I usually buy a blend or a nice Pinot Noir. He sometimes will have Merlot also. Ii buy Red Truck because I like it as well, but as I sometimes buy for th bottle I will look for something that will tickle him...I tried for Party Pooper but ended up with Old Fart, told him I got it just for him :rotfl2:

Buddy drives for a living, he moves heavy equipment for a construction company, so he generally will not even have a glass of wine if he is working the next day. I think he would be fine for his size but he will never jeopardize his CDL. We do enjoy the front porch in the evening and will enjoy a glass or two on the weekends, especially now that the evenings are so beautiful.

Piglet, When I was first married, many many moons ago, my poor husband ate some really bad food. Do any of y'all remember the hot dog cookers that sort of electrified the weiners? Yeah, I fed him a lot of those! He did a lot of barbecueing in those days! And I still freak out when cooking for a crowd! I 'm fine with up to 4 maybe 5 people but holidays still stress me out!

Nancy, Buddy really makes me & Bob sound likes WINEAUXS! He won't have a glass of wine the night before he's working! Wow! I'm impressed, but also now concerned as to whether or not we need to make a call to AA! ;)

Do you have one of those rubber stoppers with the vacuum pump for your wine? I find it does keep the wine fresher. We do have some wine left in the bottle, occasionally!!! :laughing:

Baked Chimichangas
1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely chopped Preheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.


I steam the cabbage a bit until soft, and I mix the cheese into the rest of the ingredients. You can use 8 or 10 inch tortillas. You can make them ahead and then reheat, or make them ahead and pop them into the oven.
 
Lastest news on the weather. It is likely heading here, but as just a tropical storm on Saturday. Weathermen said we just have to watch that it doesn't get stuck out there in the warm waters. Hopefully just a lot of rain & a little wind.

Nancy, Earlier in hurricane season, we tend to get more notice. Maybe four or five days. They form way out there & tracking is easier. This time of year they tend to bubble up all of a sudden in the Gulf. The steering currents aren't as strong, so they can't tell as easily where it's going to go. Like now, they are saying it probably won't be bad, and most won't need to evacuate. But we could wake up tomorrow or even Saturday and YIKES it's something big! It really makes it hard to plan anything. And right now landfall could be anywhere from the Florida Panhandle to Texas. So figuring out where we would go is also hard.

Naw, he is just at work so early that any random drug testing makes him nervous! He is not a big drinker and he never worried before, but the past few years he has seen so many guys lose their CDL's that he just will not chance it. I don't know if you've seen it down there but we have had 2 very bad truck accidents here, and while one thing has nothing to do with the other, the DOT is all over the place pulling trucks over. HE was pulled over Monday again and even though his truck is well maintained it is nerve wracking.

Hi all.. I know I haven't posted here in ages..My food is really boring in the summer,and we have had houseguests for 3 weeks...My daughter is now a vegetarian so my meals are chaning a bit..I have a ton of ricotta cheese to eat so tonight the meat eaters will have pepperoni, ricotta and provolone cheese calzones and DD will have spinich calzones

Baked Chimichangas

These all sound really good. I have copied down these recipes and I thank you for them. I am not gonna try SO hard to please DH for the tailgate party - surely there will be something there he can feed on. I just want my dish to be something I am proud of. Anything in the crock-pot I think might be the easiest - or something that can set out a room temp for a while.
I may try these chimichangas for dinner one night though...

Feeding him dinner at night is when I get stressed out most.
I only have to feed him a couple nights a week and maybe on a sunday evening. I love all food and want to try things and make him try things - but most of time he's not interested. He wants pizza, burgers, spaghetti, ....
Granted - that's all easy stuff to make - but I enjoy cooking and being in the kitchen. I feel a sense of accomplishment when I make something that we both like. (Or even if I like it and know its good - but he's just being picky)
Sheryl - at least your DH tried the stuff you made. DH won't give it a try if its not something he knows he likes. I Can cook - I have put out many good meals - and a few flops here and there (mostly while entertaining giving the illusion that I can't cook) I just want to rebuild my reputation as a cook and overcome the hurdle with DH. Thats how I landed on this thread I guess!! :)

Kathy - While I'm thinking about it - about 30 pages back you posted that you were having Shrimp Boil with potatoes, corn and sausage for dinner.
Did you have that? Will you tell me how you made that? If its corn on the cob - DH just might eat this...as long as there is nothing "funky" in it.... :rolleyes:

Sure - the best thing about a shrimp boil is that you decide what you want in it, so anything goes!!!! Get a large pot and fill about halfway with water. Season with Zatarains crab boil, sliced lemon, and lots of salt. I also add cayenne pepper, whole heads of garlic, bay leaves, chopped celery and sliced onions. We like small red potatoes, smoked sausage and the small frozen ears of corn in ours. Got this from a web page for ya:

New Orleans SHRIMP BOIL
Boiling shrimp is a little different, in that the shrimp cook in about 3 minutes. I'll do this in a big pot in the kitchen rather than outside, unless I have a ton of people coming over.

Use 1 pack of Zatarain's Crab, Shrimp and Crawfish Boil seasoning per 5 pounds of shrimp. Bring it to a boil with whatever else you're putting in with the seafood -- corn, potatoes, onions, lemons, etc. -- and let that boil for about 10 minutes, until the corn and potatoes are cooked. Add the shrimp and let boil for THREE MINUTES only!. You may then strain and eat, but I like to dump some ice into the pot and let the shrimp soak for a while -- the longer they soak in the seasoned liquid, the spicier they get!

Gretchen - The Pork Tenderloin with Plum Sauce was a big hit, but the wine/plum sauce is a very strong flavored sauce. Here it is:

Pork Tenderloin with Plum Sauce

2 tsp. garlic salt
2 tsp. poultry seasoning
1 tsp. black pepper
1 3/4 lb. pork tenderloin, rinsed and patted dry
2 Tbsp. EVOO
1 c. red wine (recommended Pinot Noir)
1/2 c. Chinese plum sauce

Preheat oven to 400 degrees.

In a small bowl combine garlic salt, poultry seasoning and black pepper. Season all sides of the tenderloin; set aside.

In a large cast iron skillet or heavy bottom, oven proof pan, heat EVOO and sear tenderloin until brown on all sides. Transfer skillet to pre-heated oven and roast for 10-14 minutes or until internal temp is 165.

In a small saucepan, bring wine to a boil over med-high heat, reduce to 1/3 c., about 10 minutes. Stir in plum sauce.

Let tenderloin rest 15 minutes before slicing. Slice 1/2 inch thick slices at an angle. Drizzle plum sauce on top.

That looks good. I think I'm going to add it to next week's menu and see what happens. BTW, I agree with everyone else - your little boy has become a very handsome young man. I would have been crying in the photo studio too. Sometimes when I look at DS, I can see the teenager he is becoming. (Sigh)

As to your DH, no one here will ever tell you to cook something he does not like...(except me if I am miffed at my DH) ........ He did not even think he was a high maintenance meal man :lmao:, actually he still doesn't think so.....but we are not going to discuss his reaction to last nights dinner :rotfl2:

It's really easy - chopped cooked chicken (I use Tyson's Frozen Grilled Chicken strips if I'm really lazy) combined with a block of softened cream cheese, hot sauce (like Crystal or Frank's), a bottle of either blue cheese or ranch dressing, and shredded cheddar cheese. Serve with Fritos Scoops, tortilla chips & celery sticks. I'll update with the exact measurements if you'd like (even if you'll probably be serving this to a bunch of BAMA fans!)

I'd like the measurements. My BiL would LOVE this.

We make shrimp boil here in SC (call it Frogmore Stew). It is:
water
Old Bay seafood seasoning
onion, sliced
smoked sausage (sliced in sections)
corn on the cob (small ears, can use frozen)
red potatoes (If they are larger than a lime, I cut them in chunks)
shrimp

You fill a very large pot about 1/2 full with water, add a lot of Old Bay (1/3 of the can approximately), and add the onion. Turn the heat on high and when the water boils, add the potatoes. Let the potatoes cook for 8 - 10 minutes in the boiling water and add the sausage. After the sausage has cooked for about 3 minutes, add the corn. When the corn and potatoes are just about done, add the shrimp. The shrimp should be done in 2 - 3 minutes.

Drain and serve with butter and cocktail sauce.

I also have a tailgate recipe that my sister and I make all the time. We have never had any left over and normally double the recipe. The men seem to love it.

Sausage - Rotel Dip
1 lb Jimmy Dean sausage (hot or medium, to taste)
1 can Rotel (hot or medium, to taste)
1 brick of cream cheese

Brown sausage and drain. Combine cream cheese, sausage, and rotel in a casserole and microwave until cream cheese is melted, stopping and stirring every 2 minutes. You will need to reheat just before serving. You can also heat it in the oven at 350, but I haven't noticed a taste difference.
Serve it with scoops or tortilla chips.

I promise you won't have any left even if your DH doesn't eat any. My husband says it is addictive and he isn't a fan of cream cheese or sausage.

I also have a bacon recipe which is just bacon and dry mustard with brown sugar. If you're interested, I can look up the proportions and post later.
 
Hey all I just have a quick second as I just got in with Ross...he had intramurals at school, then we headed over to the farmers market, he has an hour and 45 min before karate so it is crunch time on the homework front.....aaarghh!!!

Kathy---I literally had tears in my eyes when I saw Kyle's photo...my goodness what a change from earlier pictures. He is a man....I am sure you still your baby boy in the pictures though...I think we all see that in our own as they grow.

Nola girls--Now about this storm heading your way....I am doing my best to get it to go away...prayers and good thoughts galore!!!

Nancy--one of our bestfriends will not drink except on the weekends, and as long as he isn't going anywhere. As he can not have anything to drink at all, and drive any vehicle or he will lose his cdl if pulled over. He drives a pulp truck to the mill. At the lumber yard Kris works for he has seen plenty of guys have a drink the night before, then get hit with a random drug test and have it suspended. He gets called all kinds of names when he calls them in to his office and tells them they have to go pee in a cup, lol. It is usually the young ones who think they won't get caught.

The ice storm hit on January 8th with just rain, as the day went on it quickly became freezing rain, and by 3 in the afternoon we were in a state of emergency.....January 8th is my anniversary....we spent it with a flashlight at the grocery store trying to get powdered formula for Ross, and some propane for the grill. Our meal was grilled cheese in front of the fireplace. We now go into winter with 3 tanks of propane, plenty of paper goods, and a stocked pantry and 2 freezers full of food.
We had Ross in his snowsuit the whole 8 days in the house, as the fireplace isn't like a woodstove, more for the mood then warmth...though it did keep the pipes from freezing, the chill out of the air, and we could cook in it.
They say that it was the first one in 100 years, and I hope it is another 100 before we have another one like it, but my guard is up for sure!!


Piglet--Nancy has given you some wonderful advice, and if you keep giving us clues as to dh likes etc we can come up with some things for you to try I am sure. Have you talked to dh about wanting him to at least try new things?

I have to laugh at the part of your daughter becoming a vegatarian, as in high school I became one too, but for a totally different reason then your dd I am sure....my mother can not cook a can of beans, so I figured this was one way to get out of having to eat her food....at home I just ate the canned vegetable that she would open and some rice, and I worked at a local pizza joint so I would bring home salads and cheese pizza, lol. When I told my dad the real reason he almost died laughing...and I think he was jealous that I thought of it!!

Ok time to unpack my bag from the market....they had grapes today so I am very excited...I might try my hand at some jelly!!!!

Tonight's dinner, if my child will allow me to cook it, is a scallop stir fry. It's a new recipe, so we'll see how it goes.

I am laughing at your vegetarian reasoning! Marisa won't eat red meat but when she was in HS she went to Europe for 3 weeks. On her first day in Paris she was offered Les Escargots, took one look and then spent 3 weeks eating bread and drinking water...told everyone she was a vegetarian because she would not touch anything else :lmao::lmao:

I feel so badly for your poor little Princess :sad1:. I hate it when the little ones are sick and it is so much worse when they want you to make it better and you cannot. You know if she is not eating then her mouth was pretty sore and even if it is better now she remembers how it felt. When Kady's reflux is bad she goes back to square one and won't eat becasue she knows it hurt her the last time.
