Glynis, The pictures are beautiful, The girls in your family are so pretty! And that cake was something else! Your sister made that??!!! Wow, what talent! Glad your Mom wasn't hurt too badly & is doing well!

I just love to brag on my sister! She really is a cake artist. She took the Wilton cake decorating series because she only had one child (at that time), and was kind of bored, just staying home. She found she really had a talent for it. Word got out, and she started decorating birthday cakes, and it just ballooned from there. She will typically do 3 wedding cakes a month, and she definitely could do more. I keep telling her husband that he needs to put an OSHA approved kitchen in the basement so she could charge what she deserves on those cakes! The thing that gets me, is that she makes all the cakes and fillings herself, too! And they all taste amazing!! My favorite is her white chocolate cake with raspberry filling!!! Oh boy, now I'm craving cake!!!
 
I bought the following fruits and veggies that I need to figure out what to do with...if I try them all, it will give me 15 points on my biggest loser challenge:

Broccoli/clover/radish sprouts...these are yummy. just had them on a sammie...spicier than the old alfalfa sprouts.

Jicama
Kiwano
Rappi
Oca
and some type of orange melon

With the exception of the sprouts, the only one of the veggies that I've tried is jicama. I like it in a salad, or just simply cut in sticks like carrots or celery!
 
We're keeping a close eye on the development of this system, not sure where it's going yet or how strong it will be.:sad2:

I love those cucumbers, too! Only my mom always submerged them in apple cider vinegar and a little bit of sugar! Yummo!!!

My DH Mom used to dice onions and serve them with cider vinegar and black pepper. I make this for him when I have hot dogs and sauerkraut.
 

I loved all the pictures and I am so glad your mom is okay. How did they get the girls' hair into such perfect ringlets?? I always try to do that for Caili when she competes, but the curls always fall out before she gets on the ice.



I think there are a lot of family members on this thread, Glynis, who would put you in a category above us. The pot roast, the ranch potato salad and most recently the blueberry muffins are legends...if this thread has such a thing. :)

I never have any luck with the ringlets, either. We set up a party for all the girls at a local beauty parlor. The only thing we were told was to bring them in with dirty hair. I guess that helps hold the curl. They also used a lot of hair spray while they were curling as well. For my two little girls, the curls were still in place the next morning, after sleeping on them!!

Thanks for the compliment! I'm just really good at finding easy recipes. I am getting a bit more adventurous, though, thanks to everyone here!
 
I agree with you about our Glynis! My family knows if it is a Glynis recipe it is going to be good! I also think that flops are a part of cooking. It is funny, people generally expect miscalculations in every walk of life but most people who fix meals for their families are disappointed if their dishes turn out "wrong". I think it is because you cook meals for your family with your heart.

Now you're making me blush!!!

I agree with you, though! I take it a lot harder, if a meal I've planned doesn't turn out the way I think it is supposed to. It's a way for me to show my family that I love them, and I want it all to be perfect! Bless my hubbie's heart, he's always so supportive of any experimenting that I want to do in the kitchen!!! He'll never say something is awful. Now, my kids, on the other hand, have no trouble telling me they hate something I've cooked.

Lately, I've just decided to cook to please Alan and me. If I expect my kids to eat "grown up" then they will. They know they have to eat as many bites as they are old, so they are getting a good taste of everything. My oldest, Katie, has really matured, taste-wise. She now tries everything without any preconceived notions. Hopefully, the younger 3 will join her soon!
 
Not sure WFD, yet. I got hit with a tummy bug yesterday at 1:30, and spent the rest of the day (and night) in bed. I'm feeling about 80% better this morning, so I think I'll go to the store and pick up stuff for chicken noodle soup. That sounds good and comforting!

Everyone who cooks has flops. There are Sunday linners where Becky and I dislike nearly everything we made. We make faces at each other across the table and quietly abandon the offending dishes. When I cook for guests at my house, which is pretty infrequent, I have learned to cook dishes I am completely comfortable making. If I am stressed because I am worried about how something will come out or one dish is taking longer than expected, then I can't enjoy myself and my guests, even if it is my family or ILs, feel uncomfortable too.

This is the best cooking advice I have had in a while. Thanks you Laura.
I am supposed to go to a Tailgate Party on Saturday and take something.
There will be probably 20 people there - mostly guys.
I have no clue what to take - but I always look at things like this as an opportunity to try something different.
A lot of times though it crashes and burns then I look like a b**b in front of 20 hungry people.
It can be depressing. I guess I should either try the recipe the day or week before - or make something I know will be good to take.
Right now I'm just bummed out about cooking and I may just go buy a 7 layer dip at the store with some chips.

So - WFD? Well, DH will be home tonight (most nights he is in karate until past my bedtime) So I need to make something. But - I have no idea what to make. It is soo hard cooking for him! He doesn't like meatloaf, casseroles, sheppard Pie, anything with mayo or sour cream, he doesn't like mac and cheese, or ANY vegetables (except a potato cut into sticks and fried) and he doesn't like breakfast items. When he eats out for lunch everyday its typically some fried chicken sandwich or chicken fingers or chicken nuggets - so for dinner he says he's tired of chicken.
What's a wife supposed to do??? :confused3

Its soo frustrating sometimes and today I am particullary bummed out about this whole cooking thing for some reason. I see ya'lls posts and pictures of these wonderful meals you have made ... and I want so bad to make these dishes and be the wife that has dinner ready when DH comes home - just like my mom always did for us and my dad. None of us were picky -we'd eat just about anything. (I will eat anything - as long as its not bleeding or still has its organs in it - and I LOVE to try new things)

I can hear it now ... "Just cook stuff and make him try it - if he don't like it he don't have to eat it"
Been there, done that - thrown out too many meals that he came home and didn't want to eat or try. It hurts to spend the time, effort and money on something for him just waltz in, turn his nose up, and make a sandwich or something else he knows he likes. Why do that to myself?

Ok - I've gone on enough....

I'm another person who loves cucumbers in vinegar. I add a thinly sliced onion and some whole peppercorns to mine.

Tonight DH has to host a business dinner at Mortons. He has one client that will only go to Mortons. There are a zillion restaurants to pick from, but he won't go anywhere other than there. So, tonight DH will be eating a ribeye steak, creamed spinach, sauteed mushrooms, potatoes lyonnaise, and chocolate cake.

I, on the other hand, will be going to my parents for dinner. They are having a flank steak, so I am making myself a gruyere omelet, and we'll have pan roasted red potatoes and runner beans.

Kathy, Sorry about that! Of course I was going to comment on the storm! Now it's starting to worry me! The center seems to be forming more on the southwestern part & that's not good!



This is a nice line and it is not too expensive. I get the red RELAX for my DH when I can, my wine guy can't seem to keep it in stock. It is not a big red and you can serve it chilled if you like. The Riesling keeps a few days after it is opened and that is a bonus becasue I only will have one glass maybe two if I am feeling frisky, but never can polish the whole thing off.

Nancy, I don't think I've ever seen those. I will go check that out very soon! Buddy doesn't like wine? I'm afraid Bob & I polished off a whole bottle of gewurtz last night! And next week I'll be wondering why I'm not losing any weight! :laughing:

Yeppers - I can talk about wine all day. Having been to the wine country I really have a new understanding and respect for a nice bottle of wine. I don't discriminate - I like all wine equally!! :cloud9:
Right now I'm enjoying a nice glass of Railroad Red - Shiraz Cabernet Sauvignon. Its very good!!

I haven't tried this Riesling - but I have seen it in our Wine Cellar - may pick one up next time (prob saturday) I do however have a bottle of 2006 Abraxas - Robert Sinsky Vineyards in my fridge that is very nice. It is actually a Riesling Blend - with Riesling, Pinot Gris, Pinot Blanc, and Gewurztraminer. Picked it up in the Napa Valley so I don't know where else it might be available. But it is GOOOOD!!!
All you wineaux folks tell me what time we can meet and I'll open it. Ya'll bring some of that good food - and I'll bring my 60 bottles of wine!! :banana:

I hope your feet are feeling better...I know what its like to have foot problems...I had a double bunionectomy, a couple toes straightened and know have really bad scar tissue/arthritis in my one foot (from my sledding accident :lmao: ).

I am so mad that rabbi is broccoli rabe!!! No where on the package did it say that. I thought it was some new type of veggie. I guess I know how I'll make it now.

We had the orange flesh melon tonight. I thought it was good and similar to cantelope. Tom did not like it.

Well, Tom has declared tonights meal his fav and it was really easy...:yay: He raved about it in work today...while he was eating left over shepherd's pie...everyone was jealous!

Lauren, Ouch, I didn't realize you had all of those foot problems!! Well I surely can commiserate with you on that one! I'm going to have to find a better podiatrist & see if there is anything that can be done to help! The last doc gave me more expensive orthotics that I can't even walk in & has no other suggestions for me! On that Rappi, a Wegmann's recipe was the only thing I found referring to Rappi as broccoli rabe. Couldn't find anything else on that. :confused:

Hi everyone! It's been a loooooong time since I posted here (although I lurk regularly), but today I need some foodie input.

I'm making crawfish etouffee. What do I serve with it? I know it goes on top of rice, but I feel like it needs something on the side. Any ideas?

Sheryl--I must have had a bottle of the Chateau St. Michele reisling from the same batch as you, as I hated it...it had an "off" taste or something and I have never tried it again, lol. A friend of mine loves it and was the reason I picked up a bottle but just wasn't my taste I guess.

Wendie, I thought it was just me! Maybe they had a bad batch go out, but that was one bottle of wine I actually ended up throwing out! I tried cooking with it the next day & ruined a dish with it. I should have known better but I just have a hard time throwing away wine!

Glynis, It's a shame they make it so hard for someone to start up a business like that. That cake was gorgeous, and a lot of very pretty cakes don't really taste very good. So if she can make them that pretty & taste great, she really should consider it as a business. We had a local lady who made great cakes like that in her home,(actually a kitchen they built in her backyard.) Her cakes were really pretty, but the fact that they tasted so good kept this lady so busy! If you wanted one of her cakes, you had to call her about 4 months ahead of time!!! Unfortunately she has retired.

Whew, all this multi quoting is tough!
 
Last night's dinner was a hit! Bob was pleasantly surprised, we've never been really thrilled with ground turkey & then this was a diet dish besides! Here's the recipe for Greek Turkey Burgers, a WW recipe I found with the changes I made.

Greek turkey burgers (6 points) Weight Watcher

Yield: 6 servings
¾ cup Fat-free yogurt; plain
2 Cloves garlic; minced
3 tablespoon Fresh mint; chopped
¾ teaspoon Salt; divided
¼ teaspoon Pepper
1 ½ pounds Extra lean ground turkey breast meat
½ cup Feta cheese; crumbled
8 Olives; Kalamata, pitted and chopped
3 large Pita breads; cut in half, whole-wheat
1 large Tomato; sliced
1 small Onion; red, sliced


I also added a Mediterranean Blend seasoning mix, Paul Prudommes Poultry Seasoning, 1 half finely chopped onion, 1 tbsp. chopped fresh basil and 1 tsp. dried Mediterranean Oregano.

Line a sieve with a paper towel. Pour yogurt into sieve set over bowl. Let drain 30 minutes. In bowl combine garlic, mint and 1/4 tsp. salt. Stir drained yogurt into garlic mixture; chill until ready to serve. Preheat grill or broiler. In bowl combine turkey, cheese, olive, remaining 1/2 teaspoon salt and pepper. Form into 6 patties. Grill or broil until cooked through, 6-7 minutes, turning once. Serve burgers in pita bread with tomato, onions and yogurt sauce.

Makes 6 servings. WW Points per burger = 6 Per Burger: Calories 286, Fat 7g, Fiber 1g

Here's pics of dinner, nothing fancy & I didn't add any sides to keep the calorie count down. Which we really need to do, since we drank the whole bottle of wine with it! ;) The greek turkey burgers I served on half of a pita bread with tomato, boston lettuce & marinated onions. I marinated the onion slices in vinegar & a splash of Limoncello, these were very good.

Here's a pic with a wine I highly recommend. I've mentioned it before but Gewurztraminer is a faintly sweet floral & fruity wine, with a spicy finish. It goes great with different ethnic foods like this greek meal & especially Thai & Asian food.

Here's a pic of the label it's a Pierre Sparr wine, we like this one a lot better than some other Gewurz that we've tried.

The slightly cooler but less humid weather around here as really made our evenings more enjoyable! Instead of just sitting in front of the tv, we've been able to enjoy a few dinners lingering on the patio with a good bottle of wine.

Gretchen - The Pork Tenderloin with Plum Sauce was a big hit, but the wine/plum sauce is a very strong flavored sauce. Here it is:

Pork Tenderloin with Plum Sauce

2 tsp. garlic salt
2 tsp. poultry seasoning
1 tsp. black pepper
1 3/4 lb. pork tenderloin, rinsed and patted dry
2 Tbsp. EVOO
1 c. red wine (recommended Pinot Noir)
1/2 c. Chinese plum sauce

Preheat oven to 400 degrees.

In a small bowl combine garlic salt, poultry seasoning and black pepper. Season all sides of the tenderloin; set aside.

In a large cast iron skillet or heavy bottom, oven proof pan, heat EVOO and sear tenderloin until brown on all sides. Transfer skillet to pre-heated oven and roast for 10-14 minutes or until internal temp is 165.

In a small saucepan, bring wine to a boil over med-high heat, reduce to 1/3 c., about 10 minutes. Stir in plum sauce.

Let tenderloin rest 15 minutes before slicing. Slice 1/2 inch thick slices at an angle. Drizzle plum sauce on top.

When I was a kid my neighbor's Babci used to wrap their hair in rags every Saturday night. Those ringlets never fell out!

First of all, learning to cook for a crowd takes time, especially if you have been cooking for two. Don't beat yourself up, it will come along. Try buying magazines like Taste of Home. These are mostly tried and true recipe, just like the ones you will find on this thread. If you want suggestions we can also help, but anything you bring will be appreciated by your friends. I used to try new recipes out on Sunday afternoon during a football game. My family would eat anything if they could eat it in front of the TV.

Next, please do not think that your food has to look like it can be served in a 5* restaurant. We are blessed here because some have a gift of taking their food and making it beautiful. The pictures can help the rest of us "see" the dish, but I know that not all of us can do this, you have not seen any of mine here. I don't know how to post pics, but even so,I am a family style cook so I put everything in bowls. I know that the women posting don't want you to be intimidated by the pictures, they just know we enjoy them.

As to your DH, no one here will ever tell you to cook something he does not like...(except me if I am miffed at my DH) When the two of you eat out, what does he order? Maybe we can come up with a style meal that is similar to what you would have out, but is economical and practical enough to have at home. Some of the challenges you posted remind me of Buddy, and now I am amused by his quirks, but there was a time that I found no humor in his likes and dislikes. He did not even think he was a high maintenance meal man :lmao:, actually he still doesn't think so.....but we are not going to discuss his reaction to last nights dinner :rotfl2:

Give us some time and a little insight into your likes and dislikes and I bet we can help you enjoy being in your kitchen. :hug:

How much notice do you usually have so that you know what is coming towards you?

Buddy will drink red wine but he doesn't care for the big reds, I usually buy a blend or a nice Pinot Noir. He sometimes will have Merlot also. Ii buy Red Truck because I like it as well, but as I sometimes buy for th bottle I will look for something that will tickle him...I tried for Party Pooper but ended up with Old Fart, told him I got it just for him :rotfl2:

Buddy drives for a living, he moves heavy equipment for a construction company, so he generally will not even have a glass of wine if he is working the next day. I think he would be fine for his size but he will never jeopardize his CDL. We do enjoy the front porch in the evening and will enjoy a glass or two on the weekends, especially now that the evenings are so beautiful.

This may work for your 20 Tailgaters (and your chicken lovin' DH)....Buffalo Chicken Dip. It's typically served warm, so you might need a crock pot to help keep it at the right temp. Not sure how fancy your tailgate setup will be.

It's really easy - chopped cooked chicken (I use Tyson's Frozen Grilled Chicken strips if I'm really lazy) combined with a block of softened cream cheese, hot sauce (like Crystal or Frank's), a bottle of either blue cheese or ranch dressing, and shredded cheddar cheese. Serve with Fritos Scoops, tortilla chips & celery sticks. I'll update with the exact measurements if you'd like (even if you'll probably be serving this to a bunch of BAMA fans!)

I used to make stuff for DH to take to his friend's house for their football parties (it was easier sending him to them than having all of them come to me :scared: ). One easy one I did was I grilled up some bratwurst, cut it into pieces, then added it to a foil pan that had sauerkraut and beer in it, covered it with foil and had them reheat it at the house.

I'll try to think of more, but right now I have to walk Caili down to the bus.

This sounds really good - I would love the recipe.
DH hates cream cheese - but I bet you really can't taste it in this.
He also hates blue cheese - so I would have to use the ranch.
keep in crockpot on low? may last a couple of hours?

I think I did this right, it has white specks on it that I can't clear up. YES I Boo Hoo'd at the photography studio when they pulled out the big 11x14!
