Hey, anyone have any experience with spider bites? DD has this really odd bite on her leg. It's been really red and swollen since Sat. She's complained about it hurting but never itching. :confused3 Might take her to the dr. just to be safe.

I agree with Nancy...take her to the drs. Caili was bit on her ear a couple of years ago and they told me to give her Benadryl and apply hydrocortisone to the bite site.

I don't know what's for dinner here yet. I have to go to the store later. I am even out of butter. :eek:
 
Stephanie - One of DD's therapists got bitten this summer by a spider. Small bite area, but kept swelling for several days. That place on her knee was HUGE before we convinced her to go to the doctor. She ended up having to get an antibiotic and the Dr fussed at her for waiting so long to come in - so I would take your daughter, if for nothing else but the peace of mind.

Nancy - the menu sounds great. I have never tried to cook two different roasts in the same pan. Wouldn't the flavors co-mingle, sort of? :confused3 The only help I think I can provide is the potatoes. If you are making them ahead anyway, couldn't you just put them in a crock pot on low around mid-day and take them to her house in that? You could always add the sour cream and cream cheese just before serving.

Glynis and Becky - Both those stories were just disgusting. I can't imagine having to drink either. Yuck!

Janice - Hope you feel better.

Lauren and Kathy and Janice - I'm thinking about placing an Omaha order. What, other than the sole do you like?

Tonight's dinner is Chicken Boudine with sugar snap peas.

Sheryl, honestly I haven't been disappointed with any location I've stayed in. You did tell them you had to have a first floor unit or in an elevator building, didn't you? DD can't do stairs (lack of bi-lateral coordination) and she's too big for me to carry up or down, so I've stayed in Bldg 62 (elevator) on the 2nd floor and in first floor units at other times.

The elevator units are near the hospitality house with Olivias, Goods food to Go and the main pool. Bldg 62 had a lovely view of the golf course and the pond with the fountain from the balcony.

But if you prefer to be away from the hustle and bustle and since you will have a car, you could request a villa near one of the quiet pools. Those have been some of our favorite locations so far. We felt like we had the entire place to ourselves.

We have also stayed in Bldgs 25 and 26 which were close to the first bus stop. We were able to see the higher Illuminations fireworks from the patio.

Olivias has been roller coaster like in its quality the past few years. Really good in 03 and 04, not so great in 05, but good again in 06. You shouldn't need ADRs for breakfast or early dinners. Anything after 5:30 or so and I would make some just in case.

Goods to go is the quick service window located sort of behind Olivias, facing the main pool. We don't care for it very much, although Kenny said the breakfast croissant was ok. When we get the burger/fry craving, we actually prefer to take the very short ride to POFQ and hit their food court. And once we discovered Giordano's would deliver there, well, we were set.

I hope you enjoy your stay there. We love the peaceful surroundings and the large rooms. Maybe a little too much. I can't get Kenny to agree to try anywhere else. :confused3

We did request a HA room with a roll in shower. Glad to hear that all areas are good. I read on a thread that 62,63 & 64 were the elevator bldgs, but only 63 is designated as HA on the map, so I'm just confused. And the CM wasn't much help. We requested something close to the Hospitality area, so that would probably be 63 or 13. Do you think bldg. 63 is going to have a lot of road noise?
We know what rooms we like & work for Bob at BC, & have been able to request that, so going outside my comfort zone makes me a bit nervous. So, if it's a great place, I can understand why Kenny won't go elsewhere. Since doing the parks won't be our only focus this trip, we decided to try something else. Although we did try for BC first & it was booked, so we are in a rut, just like Kenny! When you know you really like a place it makes it hard to go elsewhere.

I didn't really notice a lot of road noise in Bldg 62. The only noise issue we have ever had was with some of the guests above us. And as you well know, that is always a gamble. All in all, we have found OKW to be very peaceful and a great place to relax and get away from the hustle and bustle of the parks and crowds.

I did forget to tell you about your check-out day. If you are planning on sleeping late on your last morning, UNPLUG THE PHONE and hang the do not disturb sign on the door. The last two times I have been to OKW, mousekeeping was in a rush for us to leave and called the room a little before 8:00.

Heirloom tomato, mozzerella and fresh basil 'salad" drizzled with balsamic vinegar adn olive oil, salt and pepper

Make ahead mashed potaotes (sour cream and cream cheese) topped with fresh chives

Fresh green beans and cherry tomatoes seasoned with a little basil and fresh garlic

Spinach gratin on top of portabello mushrooms

Boneless prime rib

Prosciutto Roast pork

Some sort of gravy ( I only want to make one)

rolls and butter

Cake ordered from a Franklin Ave bakery ( I really don't want to make dessert


I am trying to have food that I can prep ahead of time. She has only one oven, although I can use the microwave as a convection oven if I need to. I have never done this.

I am going to see if I can fit both roasts in the oven at the same time, I will need to get them in the same roasting pan, I think.

I want to make the stuffed mushrooms like a casserole, sliced mushrooms for the bottom and topped with a spinach and gruyere and parmesan cheese mixture almost quichlike, I think recipe calls for heavy cream, a little flour, tons of chopped onion and some nutmeg.

I can change to a crabmeat stuffing if you think it works better.

Wonton cups can be made ahead of time, I an going to buy the filling at Costco..I think it is pretty good. I do have to see if I can fit in the convection oven, I need to heat the potatoes somewhere :confused3

There will be about 20 people. I have two bottles of Rosa....do you think it will be enough to bring? I don't think I can get more, and Gail and Mike do have a good wine selection at there home.

Nancy, That sounds wonderful!!! Can I come? ;) If she has an advantium microwave oven, you could do the pork roast in there, ham & pork come out great in mine. But don't try to cook your prime rib in it, I haven't had any success with beef in mine. On the mushrooms, does the recipe call for the whole dish baked together in a casserole. I'd be worried that the mushrooms might exude to much liquid & make the dish runny. Maybe bake or grill the portabello's first before putting them in a casserole?:confused3

Anyone ever cooked fresh okra? They had some at the veggie stand really cheap so I bought some but now I'm afraid to cook it! I know being a southern girl I should know this, but I've only tried it fresh once for gumbo & it came out slimey, yech! Why did I buy this stuff?;)
 
Okay, Ladies....I need so help this morning. Remember teh dinner party my sister wants for her DH...well soon to be DH, they are getting married Sept 14 in Mexico. Tomorrow is the dinner.

Nancy - The menu sounds great. The only thing I would suggest is not cooking both roasts in the same pan if you can avoid it. That pork roast has so much flavor going on I kinda feel it would infuse into the prime rib.

Also as Sheryl suggested, pre-cook the mushrooms. As for having enough Rosa, there's never enough:love: but if they have a nice wine selection and you're serving it with dessert, that should be fine.

We love their filets, top sirloins and they have what they call "au gratin" potatoes, which are not au gratin at all to me but we all love them. They're more like a mashed potato ball with a crispy crust. You may want to order when they have a special. I get e-mails from them pretty often, next time I get one I'll post it.:goodvibes

When you're cooking it throw in a sliced lemon. It somehow reduces the slime factor.:thumbsup2

My favorite unit by the quiet pool was on our last stay and I can't remember the building number. I'll check with Kenny tonight when he gets home. I'm sure he'll remember.

Stephanie, Love the new pic of your two beautiful children!!! :goodvibes They are gorgeous! If she doesn't typically have reactions like that to bug bites, and after 2 days it's still red & swollen, I'd take her in to the dr. Better safe than sorry.

Why don't you do a creole smothered okra? Onions, ham, tomatoes, basil & Tabasco, served over rice.

Yep surgery is Wednesday, he's actually at the hospital now doing pre-op. Let the fun begin.:rolleyes1

Hi Gretchen!

The Stuffed Sole with crabmeat and scallops is very good. I believe Kathy and I have had the conversation that they are really good...not the best, like homemade or at a great seafood restaurant, but I would definitely order them again. Very easy to pop in the oven.

The Potatoes Au Gratin is very good. Some people do not like these but we do...I think Kathy does too. Again, very easy. I have heard good things about the stuffed baked potatoes.

I think my favorite thing of all time are the Mediterranean Sirloin Skewers...very tasty.

I did like all the beef (filet mignon, bacon wrapped sirloin,) we have gotten, the pork chops are good, the hamburgers are just OK, the hot dogs are pretty good but very thick (I like my sabbretts better).

Everything comes packaged so nice...that is a plus. I hate wrapping meat for the freezer.

Watch for good deals too...sometimes their offers are too hard to pass up...:thumbsup2

Tonight I am making coconut-basil-curry chicken, and coconut jasmine rice. Plus something green--I have not figured out that part yet.

I need some critique on my menu plans to make sure you think it will be balanced and will work out for a buffet type meal. She is hoping that Mike will have the garage cleared out because I believe that space will be better there. Mike can arrange for his brither and his roommate to enter the home from the front, but dinner would be in two separate rooms and way too crowded IMO. TIA for your help.....DSIL is working on the computer, spell check is not enabled yet and I cannot spell and type at the same time....sorry :confused3

Your menu looks really good to me. Here's a little tip I've learned: you can make your mashed potatoes right before you leave home, tranfer them to a heated crockpot, cover the top with butter, and then plug it in when you get there. The butter on top will keep it from getting too crusty on top. I do this every Thanksgiving, as I have limited stove/oven space. It works really well!

We are having BBQ grilled chicken breast and I am not sure what else...maybe some home fries or tossed over a salad.

Morning! Well, DS woke up in true form this morning refusing to eat breakfast--maybe I should have warmed up some spaghetti:confused3 ;) Tonight is going to be Glynis' Lime chicken Nachos/Tacos. Yummo!

Does it have a ring around it? I would take her to the doctor. When Katie was 2, she was bitten and her bite never itched, but it hurt. It developed a ring around it, and the sking around the ring started to turn black. Turns out, she was bitten by a brown recluse spider (baby one, luckily). The doctor put her on heavy duty antibiotics, but the skin around the bite had to "die" before it could get better. It was really horrible looking. I wish I'd taken her to the doctor earlier!
