My guess is that we won't be seeing Laura on here for a few days. Her DH got in last night for his leave. Good--another person to boss around in the kitchen on Sunday!! :laughing:

How wonderful! I know everyone was really glad to have him home.

Dinner tonight is Glynis's pot roast with rice and gravy and some leftover green beans. I made DH and the kids a peach cobbler last night (diet safe - I hate peaches...long, long story). They will have what's left for dessert tonight.

I'm exhausted trying to finalize our ressie's again. ;) I think I'm done. I made ressie at Cape May for breakfast on our last day.

We are going to Crystal place, Coral reef, Artist Point,Fulton crab house, Lecellier,Tony's, Boma, Chef Mickey and Hoop Dee Doo what do you all think?

Sounds like a great lineup to me!! I stressed so much over our ADRs, it's tough planning for 11 nights when DH, DS & DSGF all want the very best food there is, so we'll end up paying OOP for a few. But this may be our last trip for a while and we're maxing it out!!:woohoo: I'm re-thinking breakfast on our last morning I think we'll be sick of food by then.
 
I decided to try my hand at homemade pizza dough tonight. The dough is rising now. I'm going to top it with fresh mozzarella, proscuitto & basil, can't decide if I'm going to use a tomato sauce or just olive oil. Here's the recipe I used for the dough.

KitchenAid Crusty Pizza Dough
14inch pizza
1½ hours 1¼ hours prep
1 package active dry yeast
1 cup warm water
1/2 teaspoon salt
2 teaspoons olive oil
2 1/2-3 1/2 cups all-purpose flour
1 teaspoon brown sugar
1/2 cup club soda

1. Dissolve yeast in warm water & sugar in warmed bowl, allow yeast to proof (bubble) about 5/10 minutes.
2. Add salt, olive oil, and 2 1/2 c. flour
3. Attach bowl and dough hook, turn to speed 2 and mix 1 minute.
4. Continuing on speed 2, add remianing flour, 1/2 c.
5. at a time, until dough clings to dough hook and cleans sides of bowl Knead on speed 2 for 2 minutes.

I found the dough to be much too dry & crumbly. I added about 1/2 cup of club soda, enough until the dough formed a good (pretty moist) dough ball.)

6. Place in greased bowl, turning to grease top.
7. Cover, let rise in warm place until doubled in bulk (about 1 hour).
8. Punch dough down.
9. Brush 14 inch pizza pan with oil.
10. Press dough across bototm of pan forming collar around edge to hold filling Top with fillings and bake at 450 degrees for 15 to 20 minutes.

I baked it on a pizza stone with corn flour underneath to slide it from the peel to the stone. Preheat the pizza stone to 450 degrees & keep a close eye on the pizza. This dough came out nicely crusty on the bottom but was a thicker more breadlike, chewy crust. I think I could have rolled it out thinner & made two pizzas but we like it on the thicker side.



Alexis & I just pulled out the yummy Ghiradelli brownies out of the oven! She helped with the pizza dough & the brownies. I wished I would have pulled out the camera to get a pic of her face covered with chocolate batter! :goodvibes

We are taking our oldest DD back Yuma AZ, to meet her husband coming home from Iraq, then DH and I are going to DL, the Grand Canyon and Yellowstone before heading back home. And our youngest will be heading back to Baton Rouge.

Tonight for our special "last night at home" meal (sniff, sniff) I am making stir fried scallops with fried rice.

I ended up getting one of those Bertolli dinners Gnocchi with a tomato sauce. Not bad just not Ghiradelli brownies ;)

wow I have to hand it to you, I'm overwhelmed trying to plan all the ADR's for just 5 nights next month.
They are finally all booked with the exception of one TS which is gonna be a whatever we feel like/whatever's available that day.
I know, it's near blasphemy to not book an ADR during free dining, but between breakfast, lunch, and dinner, I'm assuming there will be space for 2 at one of the restaurants somewhere on property....right??

arbeywolf With making my last minute ressie's I found I could get in to most places I could just about name my time. I couldnt' get into Ohana's though before 8:45 I can't eat that late. You'll do just fine. I stress if I don't have something on my spread sheet. :rotfl:
 
shovan, do you have a kitchenaid with the dough hook? I can't make pastry or bread of any kind on my own, even though I'd like to. I am wondering if you have good success with the machine doing the kneading. I don't own a stand mixer, and am thinking that it could be a valuable addition to my kitchen collection.

Tonight as I said earlier, we had a "breakfast for dinner." Poached eggs on top of a hash of potatoes, chanterelle mushrooms, leeks, red onion, scallions, bacon, and arugula. No making fun of my bad looking poached eggs--I just can't make them look nice and smooth the way the restaurants do! Not pictured: baguette and cultured butter.

I only had to plan dinner, we don't do breakfast and do CS for lunch, so it's not that much really. The hard part was we picked so many signature restaurants and had to narrow those down.:rolleyes1

I did know about that technique, but look at the picture! If I cut the edges off of THOSE eggs there would be nothing left! I am just a bad egg poacher. I actually went and bought one of those special "egg poaching" pans a while back, but it just made eggs that looked like egg mcmuffin eggs, which looked too funky for the times I want poached eggs--generally nestled on salads, etc. I've tried all the usual methods: the swirling, the vinegar...oh well, at least it tasted good.

I think with everything you crank out in your kitchen, you really would get a lot of use out of a KitchenAid. DH bought the KitchenAid Artisan for me last Christmas. I used it today for the mixing the brownies & made the pizza dough. This was the first time I used the dough hook, it worked great! This is the first time I've made a pizza dough I've been happy with. I haven't attempted any bread yet, but after my success with the pizza I will soon. I'd love to be able to do french bread baguettes, but probably should start with something a bit easier.
 
Hello all--

I am a bit late getting on here today....I spent the day with my mil and we actually had a nice day...breakfast...shopping, and then the farmers market. I avoided all conversations that would anger me, and when she tried to have them I just changed the topic. I am trying to "Err on the side of graciousness" as Lady Bird Johnson always said.

Laura and the kids must be having a wonderful time...I am so happy for all of them.........Now Becky give him at least one Sunday before you have him chopping onions, lol.

Lori-- my dear friend....My heart goes out to you and your family. Please know that all of us are with you. Your sweet grandmother is now whole again...and every time something happens in life that makes you think of her....that is her way of saying Hi and that she loves you........safe travels my friend!

I hope that we hear from Glynis while she is at her mothers, as I just heard that there was another collapse at the mine, and I just hope that her husband is ok. Prayers for them all.

Kathy- speaking of prayers....many sent your way that the tropical weather brewing fizzles out before becoming anything of concern!

Welcome again to all the new posters...glad to see more joining our happy wfd home!!

Speaking of dinner......we had fresh green beans from the farmers market, along with rice, and turkey burgers that I put a bunch of different spices in and cooked in some EVOO and served with gravy on top. This is one of Ross' all time fav meals and is super easy!! We had apricot scones from the farmers market for dessert with whipped cream and fresh apricots. Yummmmm!
