I forgot to tell you guys that my brother finally replaced the bottle of Rosa he broke on Mother's Day. I don't know how he does it, but he managed to make me feel guilty about him paying for it. :confused3 I bought myself a bottle when I was in the liqour store the other day, but haven't tried it yet.

Nancy ~ Sorry about your bathing suit blues. I know how you feel. I've gained almost 10 lbs since DS has been out of school. We've been spending a lot of time cooking together, which is fun, but not great for my waistline. Last week we made homemade butter. LOL, probably not the healthiest thing we could have done.


WFD? I'm planning to have grilled shrimp, grilled zucchini, and wild rice.

All this talk about bathing suits leads me to give a plug for lands end. If you guys have not checked out their suits, you should! They have all sizes, different styles, including slimming ones, and larger cup sizes, etc. I swear by them, they are the only kind I will wear! If you look online you can create a virtual model of yourself by plugging in your measurements, and then "try on" the suits to see how they will look on you.

Here is a photo of last night's dinner. It is REALLY hard to get tomato sauce to look good in a photo. It kind of has that "traffic accident" look to it. Oh well, here it is anyway, manicotti and eggplant:

The manicotti was awesome. The eggplant was TERRIBLE! I just can't make breaded eggplant, I guess.

Not pictured is the lamb I made for DH. He really liked it and the recipe is simple so I will post it here, though I am not sure if you guys eat lamb? I don't remember seeing many people mention it. Anyway, here is the recipe:

Parmesean-Crusted Lamb Chops

4 single-rib lamb chops, bones freched, all fat removed, lightly pounded to flatten slightly
1/4 cup freshly grated parmesean cheese
1 egg, beaten
1/2 cup plain dry bread crumbs
1 tbsp. vegetable oil

Dredge the lamb in the cheese, pressing lightly with your fingers to adhere. Then dredge the lamb though the egg, then crumbs, pressing to coat.

Discard any remaining cheese and crumbs. Sprinkle lamb with salt and pepper.

Heat the oil in a heavy non-stick skillet until quite hot, then saute the lamn until crumbs are nicely browned on both sides, about 2 minutes per side.

This will give you medium lamb. If you want it cooked through, put in a 375 oven for about 5 more minutes.

Today we are having grilled cumin-crusted cornish hens with mango salsa, fresh green peas, sauteed zucchini and summer squash, macaroni and cheese, and baguette with spiced dipping oil.

Nancy -- I haven't had a bathing suit I've liked since the pink flowered bikini I had when I was four. (I do agree with Beck that the Land's End ones are better than others out there, I just don't like the ones I have. I liked them more in the catalog.) I hope you had so much fun with Kady you forgot about the suit.

We are trying camping out tonight in a tent in the backyard.

No cooking for me today - Kyle has a game at 1:30 then my guys are taking me out for dinner since Kyle will be out of town at camp when my birthday rolls around. He boards the bus at 11:00 tonight for his week long Young Life Camp in Jasper, GA!!!!!

Dinner tonight is barbecued chicken, eggplant sticks, broccoli, and potatoes. I haven't quite decided what I am doing with those yet.
 
I think I'm going to do breaded chicken fingers for dinner... don't know what else. I have some coconut and corn flakes in the cabinet that I need to use up.
 
Hey friends----I am going to try to catch up here on what I have missed, then I will tell you all what has been going on in my life, lol............first things and most important things first.....you all!!

Glynis--I am so very sorry for your miscarriage......it is such a hard unexplainable thing to go through.....you have a wonderful outlook, and family and someday it will make sense.....until then stay strong, and know we are here for you always!!!

How is Jacob's toe doing? I broke two of mine last fourth of July, and it hurt like crazy...they still look a little wonky too, lol!!

Gretchen- Hope you have a great anniversary...though with that gift basket there isn't anyway you could go wrong....all you need is some magic shell, and a boa from Lori to complete it, hehehehe!

Becky- Glad you are feeling better, and that your cold didn't become anything worse for you!

Lauren- I understand the whole field trip worries too.....I signed Ross up for Rec this summer, and they have a bunch of field trips to go on, some don't worry me as much as others. The first one he is going on is to a water park 2hrs away, that one has me worried, as I worry he will lose his group he is to be with, or get lost etc......I have to keep telling myself that this is the first year for him, but not the first year that the rec has done this, and they haven't lost a kid yet, lol.

Sheryl- I hope that you are finding the answers you need for DH .....if I can help in anyway please let me know. We are all here for you!!

I am sure it will be hard to send Kyle on his way this week, but you have raised a very smart young man, it was a great thing to research where he was going, as that will help a bit with peace of mind.......It sure is hard to loosen the apron strings isn't it........

Nancy--boy oh boy do I feel your pain in regards to the whole bathing suit issue..............I have been trying for a month now to find 2 that I like for our cruise in Dec. I have ordered 6 and sent back 5 so far........I kept one that I like OK that is a reg suit and I will put a swim skirt over it....this one is more sporty and will work for snorkling and the day on the island, and for water parks and such, but I am trying to find one that I like for just hanging out by the pool on the cruise and also for when we go on weekends around here etc. I actually reordered one I had sent back as it was the best I have found and it was actually very pretty and sexy, and not frumpy at all for a swim dress....I like to have my thighs hidden and I need one that will (ahem) lift the girls as well, lol.
I think I would rather have my wisdom teeth pulled then shop for a bathing suit..............cause your farm help would know for sure that times aren't tough up here, lol.

I am sure I missed someone.....I missed so much these past days and I apologize.....if I did miss something please know I think of you all, just a lot on here to catch up with, lol.

To explain what has been going on here I will cut and paste my message to Kathy as it sums it up quite well and I have already written a book on here.....this all started on July 3rd which was a day after I realized that the 4th was 2 days away and we have a huge party here as we live on the parade route and are walking distance to the fireworks that night...:

-My grandmother whom we take care of, but lives alone (93 years young, lol) dropped a kettle on her foot (while making bread pudding) ,breaking her toe and splitting it open needing 17 stitches...this was July 3rd and I got the call while I was grocery shopping for the party, so I had to leave my basket and go take care of her....I didn't get back to shopping until 3pm....
-we had 63 people at our house for the 4th of july
from 9am until 10pm......I think this says it all......
- my father called me from florida (pm July 3rd while outside decorating)to say he had to call 911 for my mother, (who weighs a whopping 90lbs) and we still don't know what is wrong..........they thought it was another heart attack and went in yesterday to put some stents (sp) in, and found out her heart was fine so they don't know what is wrong.....she is having some upper and lower gi tests done tomorrow and was given 2 pints of blood today.....she is so weak she can't pick her head up off a pillow....(still haven't heard from my dad yet on what the tests showed today....I will call him later when I know he is home)
- I had 5 10-11 year old boys at my house last night cause, I couldn't say yes to one and not the others to sleep over....That was a day ago, yet they all were back here this afternoon to hang out until I sent them home at 5:30 before the thunderstorm rolled through and they were all stuck here inside, lol.

So my grandmother is ok, but her toe keeps oozing and I have to take her back next week to get her stitches out......she is a tough old bird though,and is just making the best of it.....she was just glad that she didn't ruin her bread pudding, lol.

If you could spare a prayer or good thoughts for my mother that would be great.....she wasn't the best mother, and we have had our issues over the years, but I do love her and don't want her to suffer.I hope we get some answers soon!
I feel bad for my dad he is just exhausted, and not eating well at all. I think at times like this he wishes they hadn't moved to florida away from me, or my brother in North Carolina. This was a big bruhaha when it happened, as they left their parents (both only children) and Kris and I have had to be the main care giver....just my grandmother is left now.

Ok I have totally taken this thread away from Lindseys meaning of it...so I will stop now and leave the martyr in law story for another day......

Hello I read this thread daily but have only posted a couple of times. I just wanted to say THANK YOU for posting about the Rosa Regale wine. I sure had to look hard for it around here but did find it and now I'm hooked. Just one thing we couldn't get the cork back in the bottle (didn't finish the whole bottle) so I put it in a washed out pop bottle. I just couldn't throw it down the drain. For supper we had fresh salmon husband and son caught today with sugar peas and fried potatoes. Thanks Again everyone. Lauri
 
Changed our dinner plans again! I was going to do chicken fingers but pancakes and bacon sounded better. I threw in some blueberries I had in the freezer and some leftover almonds. Delicious and easy!

We have Omaha's flat iron steaks, roasted veggies and grilled bread. If you have never tried grilling bread you must try it. Get a good slice of french bread and brush on olive oil and grill until just toasted. :thumbsup2 Carefull it's very addictive.

I experienced something really said today and wanted to share...we had a late lunch today (Tom decided he may want to trade in our car so it screwed up my day) at the local pizza place that we like. Its a family run tavern...the BEST pizza!!!

We were leaving and saw a little boy in a hot car by himself!!!!!!!!!! :scared1: :scared1: :scared1: The windows were cracked and it looked like he was trying to hand a blanket in the window for shade...like he has been in the car by himself before!!! This got me riled up and we waited for a few minutes to see it anyone came out...no one. Well, I am a really confrontational person and if I approached these dumb a** people, I would have punched them....it was 84 - 90 degrees today. Needless to say, we called the police.

We checked back at the scene to make sure the cops came and saw the people who did this (we live around the block)...they were sitting right next to us in the restaurant with NO view of their car!!!! WTH????

Thank God the boy was safe...I just had to share. It was really pathetic. People are so stupid.

Oh, we didn't trade our car in. It would work out to be about the same payments so it didn't make sense.

I don't understand some people! We just had a grandmother here in Utah charged with manslaughter for the death of her 2 year old grandson. She left him in the car while she ran into the store "just for a minute." She didn't leave the car on, so it got very hot. It's been triple digits here lately, so they are estimating that the temp in the car got up to about 124-128 degrees. Poor baby!
 
Lauren, that is horrible!! I can't get over how some people are.....I am glad you noticed and called the police. Do you know what they did?

We are going out to eat with my ILs after church, so no cooking for me today. If we get hungry, we have leftovers from last night we can eat.

ETA: Hey Glynis, I got a ton of compliments about your roast last night. My trainer's husband is not a huge roast fan, but he dug into it like there was no tomorrow. I said to him, "You like it, ok?" He looked up at me, shook his head, and said, "It's not my mother's." I busted out laughing! THAT'S why he wasn't a big roast fan! :lmao:
