I grilled a tequila lime chicken breast. I sliced it and had it over romaine lettuce with garlic dressing and queso blanco cheese grated on top. It was one of my better salads. I was going to have ice cream tonight instead but since Alex is staying by his dad ( he bought a house 1/2 block away) and may stop in or worse ask what I had for dinner sorta healthy won out.

Don't worry I will have dessert ( apple dumpling with whip cream) :rotfl: It was a rough day at work The week got longer since I realized it was only wednesday. I somehow have dropped wednesday in favor of two thursdays. :rotfl:
 
Jenny, are you going to rent an electric wheelchair for Ed from someplace off-site? I'm just thinking that since the chairs at Disney are manual push--electric might be easier on you guys. Or maybe an ECV? Your dining plans sound really good. I like almost all of those places.
You can rent a manual (push) wheelchair or an ECV from either the parks or off-site places.
Power wheelchairs can only be rented from off-site. Because they are actually much harder to drive than an ECV, the companies that do rent them will only rent them to people who already are experienced drivers.
 
Tonight is leftover Tuna Casserole (made w/ chicken). Boy was it good!

Tomorrow is my last day at my current job so a bunch of us from work are going out to a Mexican place tonight. I can't wait! DD will be working so DH and DS are on their own.

I have missed A TON....my goal today is to get caught up by bedtime......
OH and please please think of me today as I am going to breakfast with mil....and then she is going to help at ds school today................I am looking at 4-5 hours of trying to keep my mouth (semi) shut...............................

Hope all have a good day...........................oh yeah geez........wfd: I am making homemade fish sticks out of haddock, with a salad, and tater tots I season up with some lawry's and cheese.

Tonights will be grilled chicken sandwiches with olive tapenade and some grilled veggies.

Today is Liam's last day of school. I wish it were a little nicer day because our neighborhood arranged to have the ice cream truck waiting at the bus stop when the kids come home. It is going to be awfully cold eating those ice creams while walking back to our house.

I think I am making a small chicken pot pie for dinner tonight. Like I said, it's dreary, so comfort food is in order and I have leftover chicken from the other night. The kids won't eat that (more than one food in a dish is a no go) so they'll have kid food...chicken nuggets.
 
Dinner tonight will be leftover reubens for me (yummo), and for DH and the kids, I'm attempting one of Jenny's stromboli's. I'll make it with the pizza toppings they like, and lots of cheese. Broccoli will be our veggie. No dessert, since we had cookies last night.
 
Good morning ladies!

Kyle is doing much better today. He slept well last night and woke up starving. I gave him a light breakfast, so we'll see how that goes. The knucklehead wants to play ball this evening, I told him we'd better give it another day.

Wendie - I'm thinking of you my friend.:hug: Let us know how it went, hopefully it will be all good!

Today is DH's birthday. It's always just a few days from Fathers Day so we will celebrate then. I am fixing one of his favorite dinners - Beef Stew, lemon/parm broccoli and biscuits.

I finally decided this evening's dinner. American chop suey and garden salad. Or as we call it........Babaloo! I can make it and it will be fine if my family is at the farm tonight.
 
Reubens, salads, and baked potatoes for us tonight. We have so much fruit right now, so dessert will be watermelon.
 
Morning or Afternoon Y'all,

The electricity was out about 2 hours yesterday from a storm that came through. So we had the leftover pork chops, which was still yummy.

Lauren, thought I posted the Cosmo recipe before the electricity went out, but just scanned back & didn't see it. I'll try to get to it this afternoon for you.

DH & I are already fussing about the kitchen remodel! So I might just boycott the kitchen tonight!

Lots of reubens going on! We are having tossed salad and reuben quesadillas.
I got this recipe from Southern Living- we love it and have them whenever corned beef is on sale at the deli counter.

Take a flour tortilla and spread about 1 TB of thousand island dressing over it.
Take corned beef and pile on half of tortilla, top with swiss cheese and sauerkraut you have squeezed excess moisture out of. Fold tortilla over and grill on grill or on a sprayed cast iron skillet on stove over medium several minutes on each side. When golden brown take off stove/grill and let sit a minute before cutting into wedges. :yay:

Sheryl - I can sympathize with you, renovations have been on going here since Katrina and it's a :headache: !!! Your dinner looked very yummy and it always helps to show the cocktail.;)

Kathy, Part of this remodel is still trying to fix things messed up from Katrina! My floors in my kitchen& part of my dining room have never been repaired. Because the fridge never fit properly to begin with, it hasn't been pushed back all the way against the wall. (I can't open the freezer door when it's in place.) I still have messed up ceilings in the kitchen & den.... Well you know, what I'm talking about.:sad2:

Lauren, Here is the Limoncello Cosmo recipe:

Limoncello Cosmopolitan: Combine 3/4 oz. vodka, 1/4 oz. cranberry juice and 1/4 oz. Limoncello. Pour into martini glass and garnish with a lemon wedge.

I added probably about 1 1/2 to 2 oz. more cranberry juice & a squeeze of lemon juice.
