Afternoon all!!!
I have missed a day or two, and I read everything, and tried my best to catch up!!
I hope I cover it all, if I don't doesn't mean I don't love you all!!

Lori--glad to see you around again girlfriend!!! I had a feeling in the pit of my stomach that your absence might be do to your grandmother....I am so sorry my feeling was right......I was raised more by my grandparents then my own parents, and losing my grandfather 7 years ago, still feels like 7 days ago. It was the hardest thing ever, as I knew that letting him go was right, but it sure did hurt!! I am so blessed that my grandmothers is still alive, I know the years are few so I cherish every day!! Please know that we will be with you through it all and ready to give hugs and support!!!

Lauren- you poor thing what an emotianal roller coaster you are on these past few months, with the wedding and health issues...when the dust settles you will be in need of a vacation for sure!! Prayers are sent for you. I am crossing my fingers that it turns out to be something that is more a PITA then anything else. You have two great men in your life to help you through it all, and you have everyone of us right behind you as well!!! Glad to hear that your stomach is feeling better, please let us know how you do with the latest tests!!

Sheryl--I am so sorry that you, and your poor dh are going through such a run around with the van, and bathroom issues. That is just ridiculous how much of a run a round it all is to get taken care of. I am sure that it makes it difficult for dh to deal with, it is very stressful, and I am sure that isn't good for his health either. I do hope that things are taken care of quickly!!! I feel really angry when the state systems go this way on these issues. We dealt with similiar areas on getting home care for my grandmother..... On a happier note your kitchen looks super!!! Can't wait to see the light you go with to finish the deal off.....it did look a little empty though without Marrrrio;)

I do not care how anyone posts pictures as long as they keep coming....As soon as I figure out how to post them either way, I will be adding a few in as well....I want to be able to post our Bar Harbor ones when we get back, and I would love to show off Ross to you too, lol.

Dinner the last couple of nights was nothing special cause it has been grab what you want as things have been hectic.
Tonight we are going to one of our customers camps(they are from Texas) (summer home on lake for those of you not from Maine, I say this as, when we call it camp to those from out of state, they have no idea at all what we are talking about, they think we mean tents etc lol)....they have been a customer for a few years, and we have become good friends with them, they come with their kids and grandkids for the 4th etc. They asked us to join them for drinks, supper, a boat ride and swim.....sounds good to me.....Ross is so excited as he loves their location on the lake!

If you do not hear from me until Monday everything is Ok.....Ross has karate bootcamp this weekend at a local campground, we are helping out at it, and we are going out tomorrow night to get the tents set up, and a few of us are hanging around and having a few drinks around the fire before the kids show up sat morning. Kris and I will head home each night as it is only 20 min away, we don't want to board the dog for it, plus ummmmmmm WE DON'T CAMP!!!!! Ross has no choice as it is part of the weekend. Ross is in a tent with a mini fridge, his video iPOD, cell phone, a queen airmatteress, llbean sleeping bag and quilt,and his things all packed in a pull along suitcase....he is a riot through the campsite with his suitcase.
So meals over the weekend will be hamb hot dogs salads pizza and tequila...no in that order either!!

I hope you all have a wonderful weekend, and those with tough issues have answers to what they need to know...prayers for everyone!!!
 
Morning Y'all,

Last night I fixed the Queen's Royal Chicken, mmm-mmn good!!!! Thanks Kathy that is a delicious & easy recipe!! I cut up the chicken breast & served it over pasta, so I could send some to DD"s house. I wasn't finish cooking it when Alexis' Mom came to pick her up, she begged to take home the sauce (that she kept asking for tastes of) & asked her Mom if she'd fix her noodles for her sauce!

I saw my DD on TV last night! She did an interview with the local cable company to promote her company (planet beach). It was shocking & amazing to see how professional & just plain old grown-up she seems! Oh I'm getting all teary now.

Tonight's dinner will be the Queen's Chicken again, I had made extra sauce so that I could share but it made a ton of yummy chicken & pasta!

I'm so glad everyone, including Miss Alexis, enjoyed it. The sauce is yummy!

I posted on the NOLA thread last night when I saw Angelina. You should be very proud Sheryl, she is beautiful and spoke so eloquently.:goodvibes

:hug: for you and DH with all you guys are dealing with. Hopefully everything will work out and things will start to settle down for you both.

Tests went OK today. It took minutes and I was out of there. It helped that the Tech is going to Disney next week so I was chit chatting about that and it kept my mind off of what was going on. Hopefully I'll know more info within 2 weeks. Thanks again for all the well wishes.

Last night was roasted root veggies in raspberry vinegar and Chinese 5 spice and seared boneless chops with balsamic onion jam. Really yummy, especially the veggies! Raspberry vinegar! Who knew?!? I found a recipe for nonalcoholic raspberry coolers that I got it for-I'll try those this weekend- but it really sparked up the onion, sweet potato, carrot flavors!

Tonight is clean out the minifridge- whole wheat pasta with leftover sauce, kalamatas, artichoke hearts, mushrooms. And a salad. Prolly a bowl of cereal for a snack/dessert. Oh yeah, remember to get milk before I go home.:lmao:

That would have been incentive enough for me to get through all the other courses! I'm sure she'll get through it, especially with all the care meals you provide.

Okay, so dinner tonight was corn on the cob, cucumbers, and I made an egg scramble for me with red peppers, onions, garlic, tomatoes and cheese. It was pretty tasty. The kids had pasta, plus the veggies.

Payday is tomorrow! :woohoo:
 
Oh darn here I was going to eat healthy tonight, but my friend called me to meet up with them a Portillo's they have the best Italian beef sandwiches. They do have healthy food so I may eat a side salad too.

Does anyone have a stuffed eggplant recipe they could share? I do plan on making the eggplant sticks but I really want stuffed eggplant and I can't find the recipe I put on the side in my "try later pile"
 
Sheryl - the kitchen looks great. Sorry about all the troubles you are having with the state and the van. I know the stress of that, remodeling the kitchen, and being supportive of your husband must be difficult. Come here and vent any time.

Wendie - Once again Ross has proven he is wise beyond his years. :rotfl: But I do agree with Lauren, you are much smarter to not be camping at all.

Lauren - I'm glad the test today wasn't very stressful. I'm still hoping for good news for you. The eclair cake isn't really a cake, but here's the recipe:

Éclair Cake - Paula Deen

Cake:
1 (14 -16oz) box graham crackers
2 (3 ¼ oz) boxes instant French vanilla pudding
3 ½ cups milk
1 (8 oz) container Cool Whip, thawed

Frosting:
1 ½ cups confectioners’ sugar
½ cup cocoa
3 tbl butter, softened
1/3 cup milk
2 tsp light corn syrup
2 tsp pure vanilla extract

Butter the bottom of a 13 by 9 by 2 inch pan. Line with whole graham crackers. In bowl of electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in Cool Whip. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.

For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

Note: I couldn’t find the French vanilla pudding at my store. I bought cook and serve custard instead, used the same amount of milk called for in this recipe, and I let it cool before I added the Cool Whip. I don’t know if the French Vanilla would make it any better, but I know Kenny polished off what I put in his bowl and said he would eat more if it wasn’t so rich.
 
So, I ended up being hungry last night, but that weird sort of hungry...you know, when you've eaten too much fatty food earlier in the day, but you are STILL hungry later? plus, DH called and said he was starving. So, I just made a mish-mash of whatever came to mind. Here is a miniature BLTs on brioche--I made a couple of these--they are about 3" across:

For dinner we had chicken that I cooked in the crockpot. Usually when I use the crockpot, I'll add sauces, spices, and/or veggies to the meat. Tonight I just used Jane's crazy mixed up seasonings, Goya's Adobo seasoning, & a few pats of butter. Put the whole chicken in the crockpot and cooked it on high all day. It was great. Moist and flavorful. We had that with baked beans and corn on the cob.

I finally tried these ribs they were pretty good. I may tweek it some more. maybe more garlic or ginger.

Island jump-up ribs

3lbs pork spareribs cut into serving size
2/3 c honey
1/2 c coconut milk
1/3 c lime juice
1 tsp grated lime zest
3 cloves garlic minced
2tbsp minced fresh ginger root
1 fresh red chili pepper finely chopped
4 green onions chopped
1/2 tsp salt

Place ribs into a large saucepan, cover with cold water an bring to a boil. reduce heat to med and simmer for 40 minutes. allow to cool to room temp.

In large bowl mix honey, coconut milk and lime juice. stir in lime zest, garlic ginger, chili pepper,green onions and salt. Toss the ribs with marinade cover and refrigerate overnight turning on occasion.

preheat oven 350 arrange ribs in shallow baking pan, bake for 30-35 minutes

Sheryl- we all have issues, and I have found that they are easier to deal with when there is such a wonderful group of friends who will support you through them. Somehow they are a little lighter after I have come here. I hope that we can lift yours a little bit :hug:

Lori- can you share the cooler recipe? My DS and DDIL do not drink alcohol and I would love to have something that the whole family will enjoy together. We tend to get together every Sunday and have a nice couple of hours just relaxing with some finger food before dinner. These sound like they would go well.

I am also a member of her fan club. The women on this thread have awesome cooking skills, but I have never seen a home cook who dresses food the way she does. Beautiful!

Lauren, I am thinking of you, and I hope everything turns out OK.

Tonight DH requested burgers. I don't eat red meat so I am going to make turkey burgers. Turkey burgers have a tendency to be dry, so I am going to try and think of a way to moisten them. Two ideas I had were to finely chop mushrooms and add them to the meat, and to put some kind of cheese in the center of the burger. One thing I am definitely going to do is make them long torpedo shaped and serve them on toasted baguette. I got that idea from the Jasper White's Summer Shack cookbook that came in the mail the other day. :thumbsup2

Last night DH had to go to a business dinner, so I went to my parents' for supper. They made grilled cornell chicken, roasted potatoes, and a zucchini-summer squash saute. No picture--I told you that my Dad gets irritated when I photo my food! Thanks to everyone that compliments my pictures, BTW. I appreciate it!
