Oh Lauren, I am so sorry. I did not know that your Mom was not well and will certainly say prayers for her and for your family as well. I know how difficult it is to have this kind of role reversal with a beloved parent, and I know that when you have such a wonderful relationship it seems to be even more stressful.

Prayers for your Seymour as well. Please let us know how he is.

How to explain??? It's kind of a mixture of mayonnaise and ketchup. Totally a Utah invention. It's really good on fries, because it's just not as sweet as ketchup.

Wow, that Road Trip is sounding like a Real DREAM vacation!!! That would be so cool, touring the country with a bunch of fun, food loving, cool girlfriends!!! Well, we can dream can't we! Maybe one day we can make it happen!:wizard:

Ok. If we get the Rv this trip is ON! Any of you Mainaaah's got a place to park a 30fter? I'll throw Kathy and Sheryl in from here. All of us pitch in and get Glynis a ticket from Salt Lake to Lauren's or Nancy's. We'll drive up pick everyone up and break in Maine for Lobster and steamers, before heading back south.

Everyone pack local treats and we'll taste around the US! Glynis....can I request fry sauce from Mcd's? They don't have that here, but I loved it when we were out there! Making it from scratch just isn't the same.

Someone mentioned brining a chicken before putting it on the can. What does brining do, how do you do it?

It isn't. It is something new I'm trying tonight. If it is good, I'll post it tomorrow. You make it with polenta and not only does my small town grocery store not carry it, no one there had ever heard of it. You should have seen me trying to explain what it was. Heck, they even had me spell it at one point. Luckily for me I work in a larger area, so I picked up some at Publix today on my lunch hour.
 
I'm back. I stopped at the store and picked up some steak and some boneless pork chops to marinate and toss on the grill. Roasted potatoes with garlic and olive oil, and some kind of veggie.

I am totally fried today. I went with DD to the allergist and it was a disaster. Kady is generally well behaved but today she was not. The Dr had no patience nor people skills, so by the time he got through DD was frazzled....Kady was lucky to be still alive.

He did skin tests...no life threatening allergies, but after all of that he wants to eliminate milk, eggs, wheat and soy from her diet. Yep.....meals are gonna be a picnic in this house.

So we decided we detest the Dr but are going to try this, Risa just hated him, but I'm wondering if when the NOLA's head our way....maybe we can find an old freezer....it does not need to work, I'm not storing this package in my house
 
Did anyone see Regis & Kelly live here in NOLA today? I t-vo'd it and am going to watch it now!

That may have been me. I like to brine my chicken before I cook it on the can. It's supposed to make the meat moist and juicy. I can't find my brining solution recipe right now, but check out this site. http://http://virtualweberbullet.com/brining.html
Or maybe someone else here has a recipe. I know mine has water, salt, brown sugar, and some herbs; but I don't remember the amounts.
 
I forgot to post WFD. Cheese ravioli, with meat sauce and peas.

I don't have to cook tomorrow night because DS and I are going to Islands of Adventure for his 5th grade field trip. We're leaving his school (on a deluxe motorcoach:thumbsup2 ) at 6:45am :scared:

It does make the chicken more moist & juicy. I think liamsaunt told me how - 3 Tbsp salt rub into chicken, wrap in saran wrap and refrigerate 24 hrs.

The dish sounds good, let me know how it comes out. Polenta is really just yellow corn meal, you could use a courser ground corn meal or yellow grits (if available) if you can't get the polenta.

Nancy, So sorry the Dr is a Jerk! I don't know why but every allergist I've seen also had zero people skillls. That on top of that nasty scratch test sure makes for a horrible test for Kady. :hug: for her!

I really hope they were able to give y'all some advice for her diet! To take all of that out of her diet isn't going to be easy. Milk's substitute is usually soy, so what are you going to use to replace the milk? Plus take out the eggs & wheat! I really feel for y'all right now. Thank you all for the well wishes. The doctor is waiting on the results for some of mom's other tests so the ulcers are all we know for now. She is never one to complain but recently she is. Thank you all again.

Nancy, sorry you had such a hard time at the doctors. Poor Kady! :hug:

The vet said Seymour had a very high fever as well...it was a good thing we took him in when we did...

Forgive me for asking, but how are your 2 indoor cats hypoallergenic? DH is allergic to cats, but we have a kitty that he's gotten used to. It seems like after he lives with a cat for a while it doesn't bother him anymore. However, when we visit other people with cats he has a hard time breathing and has to use his inhaler. I was just wondering what you meant by "hypoallergenic".
I hope Seymore heals quickly. That's so great that you're taking care of him.

No need for forgiveness Sandy...my inside cats are Russian Siberians...they are supposed to be hypo allergenic...DF takes so many allergy meds so I am not sure if its the breed or the scripts!!! My bro who has severe allergies to cats, never has a problem here and I tend to lack in the vacuuming dept...thank God for the Roomba!!!! :)

Sheryl- it's funny that you say that they are all jerks....my sister works at Children's in Hartford and she told Marisa to avoid their allergy department....she said that they were jerks.

Lauren- good thing that you got that poor baby to the vet in time :thumbsup2

Risa is going to talk to her own pediatrician before she starts this thing. It is a drastic change, and he may not want to go that route. The allergist basically trashed the GI Dr and the Pedi, but I honestly think that they have had Kady's best interest in mind. They were balancing her weight issue and her reflux with everything else. He may allow it, but Marisa won't start anything without his guidance. I agree with her. I'll keep you all posted :thumbsup2

You can do a dry brine...the 3 tbsp salt on outside of chicken and stick in fridge covered in saran wrap...or you can do a wet brine and stick the chicken in a pot of salted water overnight. DSis likes the dry brine because it makes the skin really crispy. I like the wet brine because I can usually still make gravy from the pan drippings. With the dry brine, the drippings are WAY too salty. Either way, make sure you thoroughly rinse the chicken once you remove it from the brine.

Oh, Nancy I feel so bad for Kady...and for you and your daughter trying to navigate around all those ingredients! There are lots of wheat-free, dairy-free, soy-free products on the market right now...look in the natural/organic foods aisle. Did the Dr say how long she needs to stick with that diet? Is she going back in six months, or does she need to do this for the whole year?

Those scratch tests aren't always right. The most accurate way to test for food allergies is to take a blood sample and check for -- I forget what they are called, but it is sort of like an antibody, but they react to normal things that aren't harmful -- I think it is called a RADZ or RATZ test.

When I was a teenager, I had a scratch test and they said I was really allergic to chocolate. Since I never had any kind of reaction to chocolate, I kept eating Reeses for breakfast and I survived college on M&Ms and hot fudge sundaes. I'm still here...and still eating chocolate (although not quite as often) ;)

Allergists aren't always right. Although, I have to say, the one Liam saw was very nice, so they aren't all jerks either.

Okay, maybe not all allergists are jerks, but this one sounds like it. Liam's allergist was very clear about how long to stay away from foods, and when he should return for more testing.
 
No cooking here tonight- every man for himself. DD is at a friend's, ds had lunch at 3 pm and dh can have leftovers. If I get hungry I'll eat cereal. :banana:
