Tonight's dinner is at DH's request. Today is his birthday, and he requested the dish I have now renamed "Easy Scallops" in honor of Kathy's new nickname.

Would that be the Scallops in Basil Alfredo that I printed out? If so, I must change the name on my copy.;) HAPPY BIRTHDAY to your DH !!
 
We're having an easy dinner tonight, bbq pork chops, tater tots (if we still have A/C, if not I'll have to do something on the stove) and broccoli.

DS and I put up the tent in the backyard and we're going to watch a movie on the portable DVD player out there tonight. I think he thinks he's going to sleep in the tent, but I know he won't do it by himself...
 
Good luck to DS in his tournament! I miss the days of DD's tournaments. They were so much fun.

Tonight is spaghetti and meatballs for us. My favorite and DH loves any kind of spaghetti and any excuse to eat it. I was out of town for a week recently and I think he made himself spaghetti or pizza everyday!


Whoo Hooo ds placed first in kumite (point fighting) he had 3 loooong fights to get there. He didn't place in Kata, just isn't his strong suit, some day maybe. Such a fun day, all the kids on Ds Sports Karate demo team did really well. We were on the edge of our seats for all of them, lol.
We are now off to dinner with the inlaws to Red Robin. I am starving since lunch was some crackers and carrots I packed in the bag we took with us.
I will look over the list of what all ate and did today later this evening or tommorrow.
Dh and I are going to watch a movie and have a bottle of wine tonight after ds goes to bed. :woohoo: :rotfl: After being around about 400 youngsters today I am ready for adult time, lol.

OOPs inlaws are here and our ready to go......have a great night all!!!
 

yep, my oldest are twin boys.......all I can say is I'm glad they were my first so I didn't know any better! After them, the three girls seemed so easy!!!

I totally agree. My twins are my youngest, and because I knew how "easy" singletons can be, the twins really threw me for a loop! I can't imagine being without them, now!
 
It's not exactly what's for dinner tonight but I'm trying to incorparate more fish in our diets for health reasons. My problem is I can't cook it. Does anyone have any great fish recipes? This is new territory for DH and I so any help will be appreciated. Thanks.

I've got some really yummy fish recipes! I'll have to dig them out, but for now, here's the easiest recipe I know for fish.

Really Garlicky Whitefish

4 Tbs. butter
6-8 cloves garlic, minced
4-6 firm white fish fillets (we like Tilapia)
Lemon Pepper

Melt butter in a large skillet, add garlic and cook for just a few minutes. Meanwhile, season the fish with the lemon pepper and add to the skillet. Cook for about 3-4 minutes per side or until the fish flakes easily with a fork. Serve with lemon wedges.

Yummo!!!!!
 
DH and I had a great time by ourselves yesterday! We had dinner at a hole in the wall Mexican place. Why is it that those are the best places ever????? After dinner we went to Cold Stone Creamery and split a creation! Yummy!!! I don't remember what it's called, but it was the sweet cream ice cream, pecans, Bing cherries, yellow cake pieces and honey! It was to die for!!! Since my GB surgery, I haven't indulged much in ice cream, but this was worth the pain I suffered later that night!!! Yummmmmmmmm.

Dinner tonight hasn't really been planned. Unfortunatly, it will probably end up being Macaroni and cheese with a can of tuna and some green peas mixed in. It's a one pot meal that my kids will eat!

It's nice to be back and see that there are some new recipes to try out!

Why yes, Madame Queen, it is one and the same. Thanks for the Bday wishes, I will pass them along to DH.

However, he got the best present last night. DD9, as I told you all before, has autism and is non-verbal. She will sometimes repeat a word or words and will sometimes spontaneously say a word or two, but not often. Last night, she and DH were lying on our bed while I was cleaning my face and she was playing with the rivet on the pocket of his jeans, scratching it with her fingernail. DH started to move his hand into "creepy" position to tickle her and she looked right into his eyes and said "Daddy". She has said "Mama" several times, but it was the first time she had ever said "Daddy".

I thought we were both going to cry. He said it was the best birthday present he had ever gotten. :cloud9:

Sure...these are really good.

Super Sloppy Joes

1 tbsp EVOO
1 1/4 lbs ground beef
1/4 cup brown sugar
2-2 1/2 tsps steak seasoning blend
1 medium onion, chopped
1 small red bell pepper, chopped
1 tbsp red wine vinegar
1 tbsp Worcestershire sauce
2 cups tomato sauce
2 tbsps tomato paste
4 crusty rolls, split, toasted, and lightly buttered

Heat a large skillet over medium-high heat. Add oil and beef to the pan, spreading it around the pan to break it up. combine brown sugar and steak seasoning, then add the misture to the skillet and combine. when the meat has browned, add onion and red pepper. Reduce heat to medium and cook for 5 minutes. Add vinegar, stirring briefly to reduce, then add Worcestershire, tomato sauce and paste, stirring to combine. Reduce heat to simmer and cook Sloppy Joe misture 5 minutes longer.

** We don't like the taste of cooked bell peppers too much, so we always leave that out. The potato salad that accompanies this is very simple, but we really like it.**

Tonight I am making us breakfast for dinner. We are having eggs with cheddar cheese and Canadian bacon, and biscuits. Juice and coffee to drink.

No dinner for me last night I had one of my migranes I just had a bowl of rice. DS had leftovers. Tonight I'll make something to make up for last night. Maybe I'll pick up some fish for the grill.
 
Dinner for tonight is my Pot Roast! Yummo!!!! Instead of throwing potatoes in with it, the kids asked for scalloped potatoes, so that's what they'll get. We're having carrots and a salad on the side, and for dessert: S'more Drops and ice cream. Yummo!!!!!
 
Just coming off lurking to say how much I enjoy this board.

Last night I gave in to a craving and made tempura. I used a mix for the batter and made sweet potatos, green beans, onions and lots of shrimp. It was wonderful, but never again. I'll spare you the details but my digestive system is aging along with the rest of me.

I jumped on a few days ago, i had been lurking for a while too lol.

I cooked up some chicken breasts this am that needed to be cooked, cant decide what to do, but im thinking ill just chop it up for chicken salad either that or King ranch Chicken casserole... MY FAV THING EVER LOL. OR maybe il do half chicken salad and then slap some with pasta and veggies for DS. Yeah that sounds like a winner.
I cooked the Paula Deen's Chicken and Rice casserole on Thursday that a pp mentioned earlier, I didnt love it, but DH liked it and so did his co workers, i sent the rest to share at his work. I think it needed hot sauce and more seasonings, but thats the cajun girl in me ;)
I did the ham yesterday, but it wasnt that great. Dh liked it fine so he will be eating it all week for sandwiches, It was way to salty, but I guess you can expect the world's best ham from his work give away LOL>
Seems like I had a bad cooking week, i didnt love anything i made this week:laughing:
 
Today we are having linguini with clam sauce, crusty bread, and arugula salad.

Yesterday we had seared halibut with a white wine/cream/lemon sauce, roasted asparagus, seared spinach, and macaroni and cheese. The picture of the plated food came out blurry. Here is the halibut, just finshed cooking:

Yummmm, I have eaten so much asparagus in the last two weeks. I still have a bundle Im gonna throw in the oven today. I like to just leave it on the stove top after and snack all day lol.

How do you sear spinach?
 
Dinner tonight is chicken and rice casserole, spinach casserole, and peas.
