shovan - I am TERRIBLE at making up dishes and being creative with leftovers, I mean I really need recipes! You seem to be the type of gal who can spot an ingredient and make a meal around it, which is something I have never been able to do.:goodvibes

Me either. My DH's jaw dropped one night when I cooked without a recipe. I do have to say your recipes sound great, though. I've been going through them all trying to make a grocery list.

Shovan, the pastry puff things sounded delish! Say it with me...Pelican Point ;) . I could be there for dinner in like 15 minutes :rotfl:
 
Haven't read all the posts after this to see if Sheryl answered yet, but here goes. It's a sweet dessert type wine. Sparkling like champagne, but not dry. Would be an exceptional gift...at least in my opinion. This is what DH and I use to toast any special occasion now. They sell it at the Italy pavillion in Epcot and give you little dark chocolates to eat with it. It is YUMMMM-O!

Definitely want to try that!

How about trying Velvet Crawfish with leftover crawfish? ;)

My mom, in NOLA, is making Velvet Shrimp for dinner tonight. She loved it when I made it for her when she visited.

Tonight I am making buttered egg noodles mixed together with some sauted veggies.

Julie, I will keep you guys in my prayers...Here is the Chicken Cordon Bleu recipe...I am making it with lowfat cheeses. I'll let you know how it comes.

Ingredients:
4 boneless skinless chicken breasts
8 slices of boiled ham; thin
4 oz Bleu Cheese (or Swiss if you prefer)
1 Tablespoon melted butter
1 Large egg; beaten
3/4 cup Parmesan cheese
Pound chicken breasts to about 1/3" thick. Place ham on breast then 1/2 oz of bleu or swiss cheese. Roll up; securing with a toothpick. Dip each breast-roll into a mixture of the melted butter and beaten egg. Roll in Parmesan cheese and place in buttered baking dish. Bake at 350ºF for 30 to 35 minutes or until browned and tender.
Serves 4.

ETA: I added salt, pepper and garlic powder to the egg wash and paprika to the parmesan cheese...it was yummy!
 
Has anyone done the Velvet Shrimp with chicken? I think someone did but I can't remember who...TIA!

Now that you mentioned your DH, I remembered that mine commented about how come I don't need a recipe for gumbo or red beans & rice. There are a few things that I've always done on my own, VERY FEW!!:woohoo:

Well thank you very much maam! But you flatter me!;) Remember I did say, I started with changing the BeadPirate's Crawfish Crepe Recipe!

Here is what I usually do with seafood boil leftovers:

Fish Filet (whatever type you have or like)
Peeled Crawfish or Shrimp from your seafood boil
mushrooms
corn (removed from cob)
onions
whatever other veggies you usually put in your boil
butter & lemon

Place fish in large sheet of Parchment Paper. Place veggies on top of fish & a couple of slices of lemon on top. Dab with butter & fold to seal.
Bake about 7-10 minutes depending on size of filet

If I use Trout, I call it Trout Seafood Boil en Pappillote!

Serve with Smashed Garlic Potatoes (also leftover from the boil)

Peel the potatoes & garlic, mash together with butter.

Menu change! I am really tired (stayed up for the Sopranos last night and then had bad dreams all night afterwards!). I don't feel like putting together all the components for the tacos, so instead I am making a mushroom pizza with basil and fresh mozzarella.

Thanks for all the nice comments on my photos. I am trying. I don't know how well my photos will come out during the week--we eat late and it is dark, not good for photo taking.

I have a short day at work tomorrow. Leaving at noon, because DH and I have tickets for opening day! And they are awesome seats too--DH is in the fan club (Red Sox Nation), and won a ticket purchase opportunity in the members pre-sale ticket lottery. He scored seats two rows back from the visitor dugout! Whoo-hoo! GO RED SOX!!
 
Tonight we had Chicken Marsala, Rice-A-Roni chicken flavored rice, and broccoli. I really need to make chicken marsala more often, it was so good. Next time I'll thicken the sauce a little more though.

I haven't posted in a while so I'll list what we've been eating the last few days.

Easter at the in-laws ~ ham, creamed potatoes, canned beets (YUCK!!!), deviled eggs and Paula Deen's Tomato Pie (that I made). I wasn't used to such a small amount of food. When we have holiday meals (or any meal really) at my families' houses there's always a ton of food. I really missed being with my family this Easter, not just because of the food. ;)

Saturday ~ Spanish Rice and broccoli

Friday ~ Big Chicken Fajita salads


Now I have to go back and read everything I missed. :)
 
I made it with the shrimp but when DH was tasting it, he did comment that it would taste wonderful with chicken also!

The cordon bleu was amazing! DF said it was like something you would get in a restaurant and that it was the best thing he ever ate!!! He told me yesterday that I am the best cook!!! :) :) :)
 
I'm still on Easter leftovers, but I think I'm going to try that Velvet Shrimp tomorrow. It sounds lovely. :)

I wish I had some leftover Easter ham. DH's mom put together a plate and made sure to tell us that it was just for DH. WTH?! :confused3 I think I'm going to do my own "Easter" dinner this coming weekend to make up for yesterday. :rolleyes:

We have about 2 lbs. of turkey and 4 lbs. of ham leftover, so if you want to come over . . . ;)

Ladies, you all are using recipes and I need a support group because I have not met a recipe that I can manage not to tinker with . I just tossed out the almost apple pie because I did something wrong. It was almost edible :confused3.
Buddy thought he saw it there yesterday, and "poof" it was gone today.
