Steph & Gretchen - both of your pasta recipes look great, they're on my list now!

Gretchen - do you have a recipe for the scallop dish to share???

Jenny - I'm so happy that Ed got to enjoy at least some of your wonderful meal. I know you guys are just so excited that he's home, and I'm excited for you all!!!!

Zilla - the retro candy buffet sounds like a great, fun idea.:thumbsup2

No cooking for me tonight, our computers were down at work this week, so I brought a ton of stuff home to do today and over the weekend.

:idea: Maybe I'll have DH stop at a restaurant near where he works and bring home an awesome appetizer they have - fried green tomatoes topped with shrimp remoulade and a shrimp po-boy for us to share!!!:woohoo:

Ok Kathy, here you go, but its so easy I'm kind of embarrassed to give it to you.

Scallops in Basil Alfredo

2 tbl EVOO
1/2 tbl basil pesto
1/2 tsp roasted garlic
1 lb whole sea scallops
1 cup Alfredo sauce (I use Light)
8 oz angel hair pasta, cooked and hot

Rinse scallops and dry thoroughly. Preheat large sauté pan on medium-high 2 to 3 minutes. Add EVOO, pesto, and garlic to pan. Stir in scallops; cook 3 to 5 minutes, stirring often, until they turn opaque and firm. Do not overcook. Stir in Alfredo sauce, reduce heat to low and simmer 2 minutes or until sauce is thoroughly heated. Remove from heat and let stand until ready to serve. Serve scallops and sauce over pasta.

This is really easy and takes less than 30 minutes to prepare, including the pasta.

I have no idea WFD here! I've been using a carpet cleaning machine I borrowed & have sort of gone nutso with cleaning today!

Well my friends, my marriage may be in trouble. DH and I wer enjoying lunch together at home before he had to leave for work. I just had to confess to him that I was thinking of another man. You see, we were having tuna sandwiches and I could not stop thinking about Buddy.:rotfl: :rotfl2:

shovan - I'm glad you enjoyed the asparagus. :)

zilla :lmao: - The cupcake idea sounds fantastic as long as you send me a dozen of them. ;) Cupcakes are my favorite food.

Jenny - I'm glad Ed ate well. Nothing compares to a home cooked meal.:)

Lindsay - Don't worry about forgetting to put the meatloaf away. Your wheel is much more important. :) I hope everything gets fixed!

liamsaunt - Thank you for recommending Ina Garten's Barefoot Contessa Family Style cookbook. I love the recipes in it. I'm making the pancakes tonight and they sound sooo yummy! I can't wait.


Tonight I'm making breakfast for dinner - banana sour cream pancakes and coffee. YUM! It's another Ina Garten recipe of course

Here's the recipe:


Banana Sour Cream Pancakes

makes 12 pancakes

1 1/2 cups all purpose flour
3 tablespoons sugar
2 teaspoons baking powder
1 1/2 teaspoons kosher salt
1/2 cup sour cream
3/4 plus 1 tablespoon milk
2 extra large eggs
1 teaspoon pure vanilla extract
1 teaspoon grated lemon zest
unsalted butter
2 ripe banans, diced, plus extra for serving
pure maple syrup

In a medium bowl, sift together the flour, sugar, baking power, and salt. Whisk together the sour cream, milk, eggs, vanilla and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.

Melt 1 tablespoon of butter in a large skillet over medium-low heat until it bubbles. Ladle the pancake batter into the pan. Distribute a rounded tablespoon of bananas on each pancake. Cook for 2 to 3 minutes, until bubbles appear on top and the underside is nicely browned. Flip the pancakes and then cook for another minute, until browned. Wipe out the pan with a paper towel, add more butter to the pan, and continue cooking the pancakes until all the batter is used. Serve with sliced bananas, butter, and maple syrup.
 
I took a pork roast out of the freezer- but it's still quite frozen so I'm fantasizing about some General Tso's chicken from our local chinese place....
 
Trying out the Velvet Shrimp recipe tonight. I've been wanting it all week but figured that since today was a no meat day, it would be perfect! Plus I doubt there will be any leftovers and DH won't need a lunch for tomorrow. ;)

Hope everyone is having a good Friday. We'll be running as usual with the kids this weekend. The twins have a track meet and our high school is hosting it so I'm sure I'll get stuck in the concession stand at some point. DD10 has a piano mini-recital in the morning and is serving at church on Sunday so no sleeping in at all this weekend!

last night was just pizza three ways, bianco, margarita, and kalamata olive-roasted leek.

tonight I am making sole meurniere, twice baked potatoes, and roasted asparagus.
