Welcome Glenda! Lindsay does a fantastic job keeping the recipes posted, doesn't she?

Tonight we are having baked salmon with a salad and some sort of side dish. I found a recipe for a balsamic vinegar glaze so I think I will try that.
 
Turkey breast (one of those pre cooked jobbies) stuffing, mashed potatoes, baby peas.

I'm not sure what we're having for dinner. DH mentioned taking me out, so I'm not planning anything. That way, when dinnertime rolls around, and there's nothing planned, he'll HAVE to take me out! However, I didn't do the calzones from last night, so I could feasibly make them tonight!
 
We are either going out (hoping Chinese) or staying in and ordering pizza. It's my night off from the kitchen! :woohoo: Whoo hoo! Doesn't matter to me which we do. I love both! :)

Velvet Shrimp

1 Tbsp. butter or margarine
1/2 c. chopped green onions
1/2 tsp. each salt, dry mustard, basil and cayenne pepper
1/4 tsp. each garlic powder and thyme
1 lb. medium shrimp, peeled and deveined
1/2 tsp. minced garlic
1 c. heavy or whipping cream
1/2 c. shredded Muenster cheese

Heat a 10 inch skillet over high heat about 1 minute. Add butter. Stir in green onions and 2 tsp. of the seasoning mix; cook 1 minute. Add shrimp and garlic; cook stirring occasionally, 2 minutes. Stir in cream and remaining seasoning mix; cook 1 minute. Remove shrimp with slotted spoon.

Boil cream in same skillet, whisking constantly, 2 minutes. Stir in cheese, then shrimp. Serve over pasta.

I made the Velvet Shrimp tonight and it was fantastic. It was the best thing I have eaten in a long time! Dh and I raved about it the whole time we were eating. He was sopping up the the sauce with bread. Thanks so much for posting the recipe. It's a real winner!!

Now that would be amazing! I am so disorganized with my recipes that the cookbooks on my favorite recipe sites, and page 1 here are my lifesavers!

Anyway, dinner did not go as planned.....again......my neighbors dropped in for coffee and drama down the street....a lake formed on my neighbors property he was hip deep.... so we had tuna sandwiches.


I hope the salmon will be okay if I cook it tomorrow....can it keep overnight? I usually cook fish the day I purchase it and this was frozen.
 
Nancy - the salmon should be fine tomorrow. What I do is either put it in a bag or bowl with cold water and salt, then rinse tomorrow!:thumbsup2

Thanks Kathy. It does not take much to throw dinner off on a Friday because it is usually just Buddy and me , and he would take a sandwich over a hot meal. But between the firetrucks all over the neighborhood draining property and my awesome gossipy neighbors I was all over not cooking!
 
I saw Paula Deen making a Bacon Cheeseburger Meatloaf on FoodTV this afternoon and it looked really good, so I decided to give it a try, and it was really good!

Here's Paula's recipe, from foodtv.com:

Bacon Cheeseburger Meatloaf

1 pound ground chuck
10 slices bacon, cooked and crumbled
1 (8-ounce) package sharp Cheddar, grated
2 large eggs, lightly beaten
1/4 cup bread crumbs, toasted
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup ketchup
2 tablespoons prepared mustard
1 (3-ounce) can French fried onions

Preheat oven to 350 degrees F.

In a large bowl, combine the ground chuck and next 8 ingredients, mixing well.

In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.

Press meat mixture into a 9 by 5 by 3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake another 10 to 15 minutes, or until meat is no longer pink.

Today we are going to go see Amazing Grace. We haven't decided if we are going to pick up sandwiches or something for dinner or not. I have been toying with the idea of making us a breakfast for dinner tonight.

Me too Lindsay...I use to have this delicious recipe that you prepare the night before by pouring eggs over some thick french bread slices...there was more to it but you would let it stay overnight in the frig and the next morning cook it...it was really good. I should try to find it...it I have time. I am working on my teaching portfolio for the state education department...it is sooooooooo much work...unbelievable!!!

In case you can't find your recipe. You can do that with any french toast recipe if you want to make it extra special put a little Grand Marnier in the egg mixture and make some orange butter on the side. I'm making myself hungry.
