Tonight's dinner will be scalloped potatoes and pork chops seasoned with brown sugar and Montreal steak seasoning done in a red wine sauce. Maybe green beans with it, not sure yet.
 
I just posted this on the cabbage thread but thought I would post it here in case anyone was interested. This comes out sooooooo good.

Not a casserole, but I love to cook cabbage this super easy way with a baked potato on the side:

Sauteed Cabbage
recipe from Barefoot Contessa

1 small head white cabbage, including outer green leaves (2 1/2 pounds)
2 tablespoons unsalted butter
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core, as though you were making coleslaw. Discard the core.

Melt the butter in a large saute pan or heavy-bottomed pot over medium-high heat. Add the cabbage, salt, and pepper and saute for 10 to 15 minutes, stirring occasionally, until the cabbage is tender and begins to brown. Season, to taste, and serve warm.
 
Dinner was really good tonight. I have been looking for a BBQ rib recipe for the oven and that is low maintenance. I think I finally found it.

Should Be Illegal Oven BBQ Ribs


4 lbs pork back ribs
4 oz honey
4 oz maple syrup
1/ 4 cup cider vinegar
1 teaspoon paprika 1 teaspoon chili powder 1/2 teaspoon garlic powder 2 tablespoons Old Bay Seasoning 1/2 teaspoon onion powder 1/4 teaspoon celery salt 1/2 cup dark brown sugar 1/4 teaspoon fresh ground pepper 1 medium onion, grated or finely chopped 12 ounces barbecue sauce 1/4 cup brown sugar
  1. Place ribs cut in serving size pieces in large roasting pan.
  2. MIx dry ingredients and use as a dry rub
  3. Blend honey, cider vinegar and maple syrup along with the BBQ sauce
  4. Pour over ribs and toss to coat
  5. Cover lightly with foil.
  6. Bake at 325 degrees for approximately 2 1/2 hours.
  7. Turning or stirring occasionally.
  8. Remove from oven, remove teh ribs and reduce the sauce. Glaze the ribs and
  9. Roast uncovered 30 minutes
I doubled the dry ingredients for my rub and used a smokey BBQ sauce. I also forgot the onion.

They were awesome with baked sweet potatoes, fresh string beans, and a tossed green salad.

Glynnis- My DGD has had one cold and virus thing after another since she started kindergarten and this week seemed to be the worst. Hope that your little ones get over their "ick" soon so that you can greet your new arrival properly!
 

I made Glynis's pot roast and veggies in the crock pot today ~ it must have been a huge hit because by the time I got home from work, there was only a tiny sliver left for me, LOL!
 
Day 1 of my Anniversary Week Off with my husband

Today we are going to a matinée, probably "Hannibal Rising" (totally my pick, I read the book). When we get home I will make us the herb de Provence soup with breadsticks. Yummy yummy!!

Very simple here tonight, as I will be running all the errands that didn't get done last week with ds home on vacation, and sick the whole week.
Supper is going to be: Cube steak seasoned with Lawry's, fresh green beans, and rice.

Here are a couple of simple recipes from the other day's posts.

Chicken Parm Bites

1 package of boneless skinless chicken breasts cut up into bite size pieces.
Toss them in a mixture of Italian bread crumbs and parm cheese, salt and pepper.
Cook until done in some Olive Oil, once they are cooked through, pour in your favorite spag. sauce and let simmer.
While it is simmering cook up some Egg noodles and drain.
Toss chicken and sauce with noodles and stir in about 2 cups of Italian cheeses. (tastes even better the next day) I sometimes make a double batch as it freezes and reheats really well.

Hamburg Gravy

2lbs of lean Hamb.
1 packet of onion soup mix
a few good splashes of worcestershire sauce

Mix all of this together then "scramble" in a pan until done. Drain and then pour in 2 jars of your fav beef gravy. Let simmer for about 15 min. stirring often.
This is super yummy over Mashed Potato's, Rice or Noodles.
(Dh likes corn served with it to mix on his plate for a quick shepards pie)
 
Gonna try Glynis peached stuffed chicken tonight--with some sort of veggie!
 
Kabobs on the grill tonight! Marinated steak, pineapple, tomato, onion, yellow and orange pepper, and mushrooms. We like to put shrimp on them, too, but we don't get to do that here.

They are always a great meal though!

QUESTION: Do any of you have an Irish Soda Bread Recipe? I am having a bday party for my son on St Patty's Day so having all the traditional foods that I've never made!!!
 
DD10 has piano this afternoon so we decided to make it an easy night and go out for Mexican food this evening! YAY......no cooking for me tonight! :cool1:

Hope everyone's families get over the crud this week. We've been lucky so far (knock on wood) that no one has gotten sick around here yet.

How do you cook those pork chops and make the sauce? That sounds good!

I'll post the recipe tonight. DH loved them and said it was his favorite of the pork chop recipes.

Tonight is roast beef with baby carrots and red potatoes. Maybe green beans on the side because we had broccoli last night.

Bummer! I was gonna pull out pork chops for tonight! Guess we can have chicken. Again. And have pork chops tomorrow.

I'll probably just bake the chicken with my secret spice blend. Add some broccoli and potatoes.
 
It's Monday in Nawlins yall - beans & rice with smoked sausage.

Glynis - the fruited rice pilaf was so good I could have eaten just that and been happy!:cloud9:

Also I made a mango salsa for the tilapia (my first attempt at a fruity salsa) and it was great!

I'm also interested in that pork chop recipe with the brown sugar & montreal steak seasoning!!
 
I put a roast in the oven to cook all day.. I can't wait for a nice home cooked meal.
 
Love this thread!!! Although I'm not having anything great tonight thought I'd start sharing it with all of you ;) Tonight I'm having bacon cheeseburgers (complete with ketchup, mustard, onions, tomatos, lettuce) macaroni salad that I made yesterday, deviled eggs and french fries.

Yes, yes, yes!!! I have the best soda bread recipe!!! Here it is!

Mom's Irish Soda Bread

1/2 tsp. baking soda
1/2 tsp. salt
3/4 C. sugar
3 1/2 C. flour
1 1/4 C. buttermilk
1/4 C. melted butter
2 eggs, slightly beaten
1 C. raisins or currants

Add dry ingredients to a food processor and pulse 3 times to sift. Add next 3 ingredients and mix until it comes to a ball. Mix in raisins. Knead into a ball and place on a well greased baking pan. mark a cross on top and brush with melted butter. Bake at 350 degrees for 50-60 minutes.

I've done it in the food processor, but truthfully, it's just as easy to do in a mixing bowl with a spoon. It's so easy, and very, very yummy! I like to serve it warm, so I plan accordingly.

Also, some of my kids like fruit in the bread and some don't, so I usually make 2 batches, one plain and one with currants (my kids like these better than raisins). I've never had any left over!

Let me know if you have questions! I love St. Patrick's Day!!! That's my day for Corned beef and Cabbage, Soda Bread, Irish Stew, and "Blarney Stones" for dessert. Yummo!!!
