I thought of you when I heard this sad story because whenever I see anything about Utah on the news I remember that Glynis lives there. I often wonder what these kids are thinking when they go so far off the path.....:sad2:

The really sad thing is that the shooter was a Bosnian muslim, and his family (who are also grieving) are being harrassed by some people. Alan said they've received some hate mail. It's just sad that they can't be left alone to do their grieving. Luckily, it hasn't escalated. The mayor, and governor have both made statements asking for the public to stop bothering them, so hopefully that will help.
 
Morning. It sure is cold this morning and my coffee tastes yummy! :surfweb: Today we are going to the American Cafe with my bro-in-law. So no cooking for me!! Anyone else really enjoy this place?

Like Lindsay, I am really enjoying the coffee DF made this morning...thank God for Senseo!!! I haven't decided whats for dinner yet. Maybe Kathy's Chicken Rueben...I'll come back and let you know.

:yay: Baseball season officially begins in our household today!!!! I am so excited - DS is a pitcher on his high school team and there's nothing I love more than to watch these boys play. Today is just a scrimmage game, but I can't wait!!

Tonight for dinner we're having garlic & wine grilled shrimp with lemon spaghetti. YUMMO!!
 
Tonight is date night for DH and I. We have a sitter for the kiddos and we are planning on dinner out and a movie (if we can find something decent to see).
 
Last night we just had panini and hung out. It was fun.

My chicken pot pie came out really well--I went back to the first page to see if I had posted the recipe yet--HOLY COW we have posted a lot of recipes! It was fun to scroll through them all and be reminded of some ones I want to try. Anyway, here is the recipe, it's an Ina Garten one, though I add mushrooms:

Chicken Stew with Biscuits

For the stew:

4 cups of cooked chicken (you can roast chicken parts, use leftover or just buy a rotisserie one at the store)
5 cups of chicken stock
2 chicken boullion cubes
1 1/2 sticks butter
2 cups chopped onion
3/4 cup flour
1/4 cup heavy cream
10 ounces mushrooms, stemmed and quartered
4 large carrots, peeled and chopped
2 cups frozen peas
2 cups frozen small onions
1/2 cup minced fresh parsely

For the biscuits:

2 cups flour
1 tbsp. baking powder
1 tsp. salt
1 tsp. sugar
1 stick cold butter
3/4 cup half and half
1/2 cup minced parsely
1 egg, mixed with water for an egg wash

Oven 375 degrees

Heat the chicken stock and dissolve the boullion cubes in it.

In a large pot, melt the butter and cook the chopped onion over mdeium heat until tender, about 15 minutes. Stir in the flour and cook over low heat about 2 minutes. When you add the flour, add the mushrooms and carrots to the simmering stock to cook a little bit. When the flour is cooked stir in the stock, carrots, and mushroooms and cook until thick, about a minute. Stir in the cream, and salt and pepper to taste. Fold in the chicken, onions, peas, and parsely. Place the mix into a large baking dish and bake for 35-45 minutes, until bubbly.

While the stew is baking, make the biscuits:

Combine the flour, salt, baking powder and sugar in a food processor or stand mixer. Cut in the butter and combine until the dough is the size of peas. Add the half and half and combine, then add in the parsely.

Dump the dough onto a floured surface and roll out about 3/4 inch thick. Cut into twelve pieces, transfer to baking sheet and brush with egg wash.

Bake the biscuits alongside the stew 20-30 minutes, or until browned. Portion out the stew and top each with a biscuit. Serves 8-10.

The past two night I have not really cooked. Thursday evening it was just DH and me so we had hot chicken sandwiched and buttered noodles. Last night we had a pot luck type of deal. I wanted our leftovers gone so we all had what we wanted from the week.

Now tonight we are up in the air. I ran errands and then got my hair done....

Decided on the Apricot chicken along with a mixed vegetable, rice and a garden salad with the mango poppyseed dressing from the SOA luau. It was soooooo good! The sauce from the chicken is better than the one that I make with cranberry sauce.

Tonight we are doing a tex-mex kind of thing--corn tortillas, grilled chicken that's been marinating in fajita seasoning, refried black beans, guacamole, queso fundudo (a melty cheese dish with roasted poblanos and spicy sausage), and, if I get around to it, some red rice.

We are having spaghetti and meat sauce. There is a local fish restaurant that had commericals on tv today about 15 times so I gave DH a choice...Cap'n Stevens or spaghetti. Shouldn't have asked! :lmao:
 
Tonight is easy for us. Pizza in a Crescent. Basically, crescent dough sealed into rectangles then filled with pepperoni, sauce and mozzarella. Fold the dough over, seal edges and bake. The kids like them, and I like that they are fast and easy. Today's a crazy day as DH is moving his mother out of her ex's house. Ick! So, an easy dinner is in order.

Here ya go, it's a Rachael Ray YUMMO recipe that is VERY good with any seafood:

Lemon Spaghetti

Salt
1 lb. spaghetti
3 Tbsp. EVOO
4 cloves garlic, chopped
1/2 tsp. crushed red pepper flakes
2 lemons, zested and juiced
1/2 - 3/4 c. heavy cream
1 c. grated Parmigiano Reggiano
Handful flat-leaf parsley, finely chopped
1/2 c. (10 or 12 leaves) fresh basil, thinly sliced

Bring a large pot of water to a boil, salt the water and drop the spaghetti in. Heat a large, deep skillet over low heat, add EVOO, garlic and red pepper flakes. When the pasta has been cooking about 5 minutes, add lemon juice, a ladle of the cooking water from the pasta and cream to the garlic and oil. Raise heat a bit to bring sauce to a bubble. Drain pasta when done. Add lemon zest and half of the cheese to the cream sauce. Season the sauce with salt to taste. Add pasta to the pan and turn off heat. Toss for a few minutes allowing it time to soak up the sauce. Top the plates of pasta with remaining cheese, parsley & basil.

I thought I would share our dinner. It was super easy and very delicious. I did only one substitution I used tomato sauce since I didn't have any crushed tomatoes.

Greek Beef Stew recipe
1 medium onion
4 cloves fresh garlic (about 2 teaspoons minced)
2 1/2 pounds beef chuck or blade roast, cut into cubes, or stew meat
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/2 teaspoon oregano
1 cinnamon stick or 3/4 teaspoon ground cinnamon
28 ounces canned, crushed tomatoes
1/2 cup dry red wine, beef broth or water

Turn the crock pot on HIGH.

Chop onion and add to pot. Add minced garlic. Top with meat. Sprinkle in salt, pepper and oregano and add cinnamon stick or cinnamon. Add tomatoes and wine. Reduce heat to LOW and cook 8 to 10 hours. Meat should be falling-apart tender.

Serve over couscous, orzo, mashed potatoes or rice.

Serves 4 to 6.
 
Tonight I am making hamburger steaks (made with ground turkey) topped with sauteed peppers, onion, and mushrooms. I haven't decided what I'm going to make with it.

Good Morning. I am trying a new Crock Pot Pot Roast recipe...I hopew I didn't go wrong not using the recipe that we all love...thanks Glynis! It has potatoes and carrots in with it but I may have to make mashed potatoes and red cabbage. :love:
 
Ugh, we had pizza again last night. I have to go to the grocery store today, as all we have in the fridge is 1 lb ground beef. I'm definitely going to try the lemon spaghetti and greek stew this week though! Yummo!! Also probably liamsaunt's Thai Curry!

After looking over the Greek stew recipe, I remember I forgot to add the onion but it was still very good, and I used beef broth. My son thinks I'm trying to get him drunk if I cook with wine :laughing: We had it over mashed potatoes.

I love my new crock pot, no more burn spots like in my old one. I love new gadgets :love:

Oh this looks really good! I am trying to ad fish into our diets. DH DSIL and I live it, but DD does not and I hate to cook two main dishes. This would be a perfect answer because she can feast on pasta while the rest of us enjoy our seafood.
