Probably French Dips again for me and DH...I had some roast beef, sauce, and rolls left. The kids will be happy with a grilled cheese and soup.

Here is the French Dip Sandwich recipe ...they are quick and so good! I add provolone cheese to mine and put them under the broiler just long enough to melt the cheese.

2 tablespoons butter
1 shallot, chopped
1 tablespoon all-purpose flour
1 jigger dry sherry, optional
2 cans beef consomme, found on broth and soups aisle or beef broth
1 1/2 pounds deli sliced roast beef
Grill seasoning blend for steak, such as Montreal Steak Seasoning Blend, or, coarse salt and pepper
4 torpedo sandwich rolls, split

In a large, shallow skillet over moderate heat, melt butter. Add shallots to butter and saute 2 minutes. Add flour to butter and shallot and cook a minute longer. Whisk in sherry and cook liquid out. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.
Pile meat loosely across your cutting board or a large work surface. Season meat with grill seasoning or salt and black pepper. Set out 4 ramekins or small soup cups for dipping sauce, 4 dinner plates and 4 split torpedo rolls. To assemble, using a pair of kitchen tongs, dip meat into loose au jus sauce and pile into rolls. Set ramekins or cups with extra dipping sauce along side the sandwiches.

I thought I had seen a recipe for Chicken Noodle Soup here, but I don't see it on the first page (though I admit I haven't had caffeine yet). Does anyone have a good recipe?
 

Tonight I am taking a lasagna I previously made out of the freezer and I am gonna try the Paula Deen recipe below for Phyllo Wrapped Asparagus. I saw her make it the other day and it looked delish. I love anything in phyllo!

Phyllo Wrapped Asparagus Recipe courtesy Paula Deen

8 or 9 asparagus spears, depending on size
1/2 (16-ounce) package frozen phyllo dough sheets, thawed
1/4 cup butter, melted
1/4 cup finely grated Parmesan

Preheat oven to 375 degrees F.
Snap off the tough ends of the asparagus. Unwrap the phyllo and cut the stack in half lengthwise. Reserve 1 stack for later use. Cover the phyllo with a damp towel to keep it from drying out. Take 1 sheet of phyllo and brush lightly with some melted butter. Sprinkle with some Parmesan. Place 2 to 3 asparagus spears on the short end of the sheet. Roll up, jelly-roll style. Place each piece, seam side down, on a baking sheet. Brush with more melted butter and sprinkle with more Parmesan. Repeat until all the asparagus spears are used up. Place baking sheet in oven and bake for 15 to 18 minutes, or until golden brown and crispy.
 
I think it will be tortellini and marinara sauce--some garlic toast as well.

Yay! I'm glad you liked them! They are on our menu for next week sometime! I think I'm addicted! I served them over Tostitos Hint of Lime chips, and they were yummo!

I wish I had one! I love the stuff. Hmmm, something to search for, I guess.
 
Crock pot Italian Chicken here! We love this, and I love that the crock pot does all the work for me! Not sure on sides yet. I'm thinking rice pilaf and maybe some brussel sprouts. Surprisingly, I made some last week, and the kids loved them! Nice to have a veggie that all my picky eaters will request! I'm getting kind of tired of steaming broccoli, cauliflower and green beans all the time. Brussel sprouts make a nice change.

I think I'm doing Chicken Pot Pie tonight. They had it on the Today show this morning and it looked great. Hubby was on the phone when I mentioned it and he thought it sounded great so chicken pot pie it is!
 
Crock pot Italian Chicken here! We love this, and I love that the crock pot does all the work for me!

I am making this also today! My husband really likes it and when I get home I just toast up some garlic bread slices and cook the pasta.

Last night was chicken enchilladas in the crock pot.
 
I also have some chicken breasts to cook. I have no clue what I'm going to do with them..I was going to make Swiss Chicken Casserole,but someone ate most of the Swiss.

Ohhhh guys - it was fantastic! I had to come back to say that the asparagus came out great - it's a keeper!! I used the very very thin kind of asparagus and put three in a roll and it was perfect.

Cold and rainy night here- we are having chili con carne and beer and watching the Duke/Wake Forest game. :happytv:
 
I'm stuffed! I ate too much of the dinner I made tonight. It was really good. The original recipe was called Oriental Chicken & Rice, but it's really not the same anymore because I changed so many things.

1 box of Rice-A-Roni Chicken flavor
2 Tablespoons margarine
1 can chicken broth plus water to make 2 1/2 cups
boneless, skinless chicken breasts (as many as you need) cut into 1 inch pieces
1/4 cup hoisin sauce
1 package of frozen Birds Eye Broccoli Stir-fry vegetables, I thawed it in the microwave first

Heat large skillet over medium heat, melt margarine and brown the rice.

Stir in broth, water, hoisin, and rice seasoning packet. Bring to a boil, cover and reduce heat to low. Simmer for 10 minutes.

Stir in chicken and vegetables. Cover and simmer for 10-15 minutes or until chicken is done. Remove from heat and let stand 5 minutes.

Next time I think I might marinate the chicken pieces in hoisin or soy sauce. Everything was very good, but the chicken needed a bit more flavor.
 
Strawberry Fluff

1 large box strawberry jello.....
Dissolve in 1 1/2 cups boiling water.
Stir in large container frozen strawberries. [the type in syrup, not the bag kind.]
Stir until strawberries are separated and jello is soft set.
Blend in large or extra large cool whip.
Add 3 bananas and 1/2 cup or more of chopped walnuts.
Refridgerate for at least an hour.
 
Fabulous summer salad--it's so simple too.


Dressing:

1 cup mayonnaise
2 Tablespoons poppy seeds
1/4 cup vinegar
2/3 cup sugar
small carton whipping
whisk in the whipping cream slowly or the mayo will get lumpy.....

Red onion sliced thin
sliced strawberries
Romaine lettuce

Add the berries to salad just before serving so they stay crisper

Hi S.C.! The first stawberries of the year (from Plant City, FL) are already out and on sale at Publix and I can't stop eating them. This really sounds yummy to me!!

The berries in the salad sound good, too.

Hi, I LOVE strawberries. Let me know how you like the strawberry fluff if you make it. It is yummy!
 
We are having leftover veggie soup and cornbread. I did something interesting to the soup. I always add a ground meat of some kind. I browned up ground turkey this time. Well I got to thinking about how I could kick up the soup a little bit. So after the turkey was browned, I browned up some sweet Italian turkey sausage. Oh my word, it was to die for!!
