We got back from Disney yesterday.
Friday we had dinner at Big River Brewing Company on the Boardwalk. Then we took the boat over to Beaches & Cream, where DH and DS split a No Way Jose sundae, I had a Lime Rickey. We saw a "Kitchen Sink" being made. They really do put a whole can of whipped cream on it!
Saturday we went to SeaWorld and I made the mistake of taking DH to The Hospitality Deli for lunch. They serve free beer there and he took advantage. :rolleyes: We had dinner at Pop Century.
Sunday, another BIG mistake. Do not eat at the Sonic inside Walmart on Osceola Parkway. YUCK!

Not sure yet what I'm making tonight, something with boneless, skinnless chicken breasts.

Well I'm finally allowed back in my kitchen after a LONG weekend of take-out - YUK!!

Oops, got the name wrong before, it's Big River Grille & Brewing Works. To tell you the truth the place smelled kind of funky, but I think that's because of the beer. DS and I got the Blackened Mahi Mahi Sandwich - spicy seared filet on a baked roll with leaf lettuce, sliced tomato and Chipotle Mayonnaise, served with kettle chips $11.99
We don't like blackened stuff so we asked for it just grilled. They forgot the lettuce and tomato and looked at me strange when I asked for it. :confused3 It was good though. DH got the special, which was a breaded pan-seared mahi mahi fillet with roasted red pepper sauce $16.99. I tasted it and it was very good, but a little too rich for me.

Well, after a long weekend with 4 sick kids, I think we're on the way up! No fevers here, and no more barking, croupy coughs!!! The older 2 are going back to school today!!! Hooray!!! Mom will get her sanity back!!!!

For dinner tonight, we are having the Polynesian chicken that was posted on this thread. I'll make some brown rice to go with it, and probably steam some broccoli. This is the one veggie that all my kids will eat without giving me grief! I'm so up for that!!! For dessert we'll finish the peach pudding I made yesterday. It's not that great a recipe, so I don't think I'll post it. It was interesting, but not one that I'll make again!
 
Does anybody have a basic white icing recipe (or almond icing recipe) for drizzling over a coffee cake? :confused3
 
The chilli did turn out to be good - I am still surprised. My husband really did like it.

Tonight we are having macaroni and cheese with ham in it.

I made 4 dinners yesterday for the week - makes the week so much easier.

I don't bake much, but I've seen Paula Deen do powdered sugar with just a little milk in it for an icing. I think she may have put some lemon juice in it too.

I found it. It wasn't milk.

Glaze:
4 cups confectioners' sugar (wow, that's a lot)
1/3 cup fresh lemon juice
1 lemon, zested
3 tablespoons vegetable oil
3 tablespoons water

To make the glaze, sift the sugar into a mixing bowl. Add the lemon juice, zest, oil, and 3 tablespoons water. Mix with a spoon until smooth.


Here's another super easy one, if you don't want lemon. Just combine 1/2 cup confectioners sugar and 2 1/2 tsp. water. Drizzle over cake. If you want almond flavor just add a little almond extract.

I saw a recipe in a magazine for Cranberry Coffee Cake. It is a recipe from a bed and breakfast and sounds really good. It has canned whole berry cranberry sauce in the middle and on top - it also has sour cream and walnuts in it. When we get back from our trip to Disney (we leave on Wednesday :banana: ) I'm gotta try it. I'll let ya'll know how it comes out.

Funny though, cause at the end of the recipe it says it can be drizzzled with almond icing - but the picture of it has no icing. I'm think I'm gonna drizzle it with a little icing.
 
Hi All, I am back...I had a crazy week.

Tonight is grilled chicken breast, rice pilaf and string beans.
 
I'm making carne asada tacos with pico de gallo and guacamole,plus refried beans on the side.
 
This one is so easy, I do it regularly after I get off from work. Enjoy!

Ingredients:
1 LB boneless chicken breasts
1 LB spaghetti noodles (or whatever type of noodles you like)
2 cans of Rotel tomatoes
2 cans of cream of chicken soup (you can mix and match cream soups)
1 LB Velveeta cheese (2lbs if you like extra cheesy)

Preparation:
Brown chicken and cut into 1X1 cubes. While chicken is browning boil noodles. When noodles are ready, drain, and mix together with all other ingredients (browned chicken, tomatoes, soup, and cheese). Once Velveeta melts, it is ready to serve.
 
Tonite is a smothered pork chop with mashed pottoes and gravey, green beans and something for dessert. My DS is coming for dinner.


Oh, I got great news today. My DS is sending my DIL home for the Thanksgiving Holiday. He is working for the most part and she would be alone. My DD called him to tell him Erica was feeling a little homesick (she calls me every day and told me she was missing us a lot) so he wanted to surprise her. I can't wait!!!!!!!!!!!

I can't wait! You know, a good friend of mine had the nastiest DIL on the planet, and she told me that she would kill her with kindness. She would never loose her son because of a DIL. Well, with sons you worry, because you never know how the DIL feels about in laws. I woulds have loved anyone my DS brought home because he loved her, but I like my DDIL as well as love her. She adores my son, so I am blessed. My DH refers to Marisa, Kady and Erica as his girls. It is so nice.
 
Dinner tonite was pretty good. The pork chops were good, but after the fried chops on this thread everything else comes in second.

Tomorrow night my sister and my nephew are coming for dinner. I have no idea what I am cooking, I'll fix anything he wants to eat, so I guess I'll find out in the morning if we are having a ham, a Thanksgiving turkey dinner or a prime rib. After nine months in Iraq he can ask for anything he feels like eating!
My sister is not the best cook, but he told me he missed her meals. We don't believe him :rotfl2: . She picked up an apple pie and I am going to make a carrot cake first thing in the AM as it is his favorite.

this sounds yummy. You'll have to let us know how it turns out and then share the recipe.

I stayed home today with DD10 and DD3. I had to take them both to the doctor. DD10 has officially been diagnosed with asthma. Hopefully the meds will help her and she will start feeling better. DD3 is going to have to have her tonsils and adenoids out. I'm hoping they will do them Thanksgiving week so I won't have to miss too much work. The doctor went ahead and gave them both their flu shots today also. Anyway, I let DD10 choose dinner tonight and she wanted spaghetti so I got off easy.

I haven't been here in a while but need to catch up. Last night, we had Sausage & Pepper grinders for dinner and Pumpkin Cream Cheese Squares for dessert. Yum, it was quite yummy. If anyone is interested, I'll post it.

Tonight will be Chicken with Leeks, couscous, and a vegetable I haven't decided on yet. Have a great day everyone.
