I told you I over pack! LOL. Maybe I will edit down my list! LOL

In my defense, my boys spill a lot, especially the youngest and I always have an extra outfit on hand....
I am the queen of overpacking, but when it comes to going to DLR, even DH no longer tries to dissuade me from bringing twice as much as the kids and I need. (He packs his own minimalist bag!)
In addition to the things other people suggested on this thread, we bring little Disney surprises for the kids. We also bring costumes for the kids, as both DD9 and DS6 love dressing up. (Favorite boy costume is a Mr. Potatohead costume I found online at Target last year. It has eyes, nose, and mouth that velcro on. At Goofy's kitchen last year, Alice kept stealing the pieces and pretending to put them onto her face.

)
Other things we bring that end up getting a lot of use are: Mad Libs books, Lots to Do in Line and Hidden Mickeys books, Magic Pen books, coloring/drawing supplies, etc. Some of this is to occupy us while waiting in line, and other things (the Magic Pen books, coloring/drawing things, etc.) are for the kids to do while we're at sit-down restaurants, as the adults on our October trips enjoy long dinners, cocktail hours, etc. and we don't allow our kids to play on "screens" during meals, even long ones out at restaurants. Mad Libs are really fun for everyone to play together, too, especially if it's taking a while for food to come and folks are getting cranky.
And yeah, so glad we're driving this time instead of driving so I don't have to worry about weighing the luggage!
