Yes, pickles, and sometimes sliced veggies with hot peppers, very hot.
But I read and article about vegetable consumption and it noted that in Asian nations it was a lot higher than the US. Then another article that links pickled veggies to cancer and it noted that Asians have higher incidence. It noted they eat less fresh vegatables than the US the difference is all pickled vegetables. But wether the pickled vegetables have a true link to the cancer is questionable.
The whole thing was about the acid in vinegar affecting the digestive track. Of course Americans drinks a lot of soda that no matter the kind is acidic. This wasn't in the article so I'm not sure the studies are very well done.
Hmmm...so it was the acid? I always find these studies interesting. Acetic acid, which is vinegar, has a pH of about 2.5 The pH of the gastric juices is about 1.
Hmmmm....that is very interesting. We eat sauerkraut with sausage and in our ruebens. However that is maybe 1-2 meals in as many months. We occasionally have pickle with our sandwiches, but don't eat a lot of pickeled veggies.
The most is when I make cucmber salad with Rice vinegar and it marinates for 1/2 an hour.
