the diz in 2012! help!

My boyfriend and I are headed to Disney in January of 2012.....& we have a ton of questions!!!
1. What is January really like?
2. How are the crowds?
3. Weather?
4. What about dining reservations? Will we really need them with it being the slow season? If so, what are some of your favorites? Anything we should/shouldn't miss?
5. Do we need one of those touring plans?
