3 cups flour
Cream the butter and sugar until light and fluffy. Add eggs, water, and vanilla and blend well. Sift together the baking powder, salt, and one cup flour. Combine the sifted mixture with the first ingredients and beat well. Add final two cups of flour, a little at a time, until well-mixed.
Refrigerate overnight or for at least four hours. I flatten the dough in a gallon sized ziplock bag, so it's easier to break off pieces and roll out.
Preheat oven to 375 degrees.
Roll out dough to about 1/4 inch thickness. Cut into desired shapes. Carefully transfer to ungreased cookie sheets and bake 6-9 minutes (see tip below). Remove baking sheet from oven and allow cookies to cool slightly before transferring them to paper towels.
When cool, frost and decorate. Depending on the size of your cookie cutters, each batch of dough should yield 3-4 dozen cookies.
Tips my mom and I have learned over the years:
1) Roll out dough in small amounts. Keep rest of dough chilled until you need it.
2) Use as little flour as possible when rolling out your cookies, since too much flour will make the cookies tough and dry. But, find a happy medium and be patient, because this dough can be very sticky!
3) The thickness of the cookies will determine how long they need to bake. Watch them carefully and bake until set, but not brown.
4) These cookies freeze well. After frosting has set, layer carefully between sheets of wax paper in an airtight container.
5) Powdered dry fondant, purchased at a candy supply store, makes a very nice glaze for this cookie. We also use colored sugar crystals...sprinkling the sugar on the fondant before it sets.
6) Be patient, patient, patient! These cookies can be very time-consuming, but the end product is delicious!
