How do they do with food allergies with walk ins? They at least know what is in the food right (not like some Olive gardens and the like).
I typically have an idea of where we want to eat before we go and try to think through the possiblities. When I talk to Brenda before the trip she usually gets back to me with some ideas for each place, then when I make my PS or even when we walk in, I tell the hostess that I've got food allergies and a member of the kitchen staff is usually right at our table from the beginning of the meal.
Obviously if you have more allergies and need something special made just for you then walking in and expecting that will lead to disappointment. But if you're willing to be open-minded about the choices given, then walk-in seating wouldn't be a bad thing.
They do have an ingredients list at the CS restaurants, you'll have to ask to see it and they sometimes take a bit of time to find it. Normally I walk up & ask if I can see it, then we peruse the listings and wait in line to order when we know there is something I can have. Keep in mind that most CS places have one central fryer so if an item you'd like is deep-fried, it may have cross contamination from other items cooked in the same oil. This is not always the case , but I'd err on the side of caution. Brenda can also help out with CS restaurants.
It does sound like the Jan crowd (at least from the DIS boards) is adding up. We weren't going to make too many PS arrangements but when the park hours are set, we'll probably make some more concrete plans so we won't be disappointed!
