Tonight I think I am making mushroom panini--I won't have a lot of time because I need to finish organizing and packing, we are leaving Saturday for vacation.
 
I have no idea about today. Maybe I will get the tank for the grill and do some chicken. I could make a party of it and do hot dogs and burgers with my friend and her kids. Poor girl got roped into taking my DM to Target to buy a deck box.
 
This was a St Pat's Day cake I did for fun to practice my Course I skills.

Easter Cake. This one was so yummy. It was a two tiered lemon cake with lemon curd buttercream and a raspberry filling.

This is the cake we sold. It was for a simple bridal shower the bride's volleyball team had for her. It was a almond cake with a simple vanilla buttercream. Please ignore the ugly bow....yeah it's still bothering me.

Those look great!!! I wish I had that talent, but I tried it, and it just wasn't for me. I don't have the patience. I made a deal with my sister. Whenever she has to do a cake, I go to her house, babysit the kids, take care of her house, make dinner for her family, and she does all the cake work! I like to watch her do it, but just can't do it myself!

I have a yummy pan of HM clam chower on the stove made with fresh "quahogs".

I have some chicken breast sitting here for dinner..I have a ton of kalamata olives from the deli so I'd like to somehow combine that into dinner.
 

Jenny, since you are in RI, I have to ask how you make your chowder. With cream, clear, or tomato?

I never make Red Chowder..I can make clear chowder, but I just really prefer *white*..Mine has heavy cream and butter and is NOT figure friendly,lol

Oh, good. Your chowder sounds like mine. I was going to call the red the "dreaded tomato chowder" but I did not want to insult you if that's the way you made it. :)
 
I had a post all ready to go earlier, then the power went out here and I lost it!

Anyway, it's snowing here!!! Can you believe it?!? I mean, don't the weather gods know it's supposed to be Spring?????

Dinner tonight is creamy cajun chicken with pasta (I think it's Kathy's recipe). It's one my family loves, and we need some comfort food with this weather going on! I've also made a batch of cookie dough (Hannah's Bananas), and it's sitting in the fridge until later this afternoon. I'll bake them up and we'll have them for dessert! Yummy. I'm still trying to figure out a veggie. Probably something I have in the freezer; peas, corn or broccoli.

Jenny - I'm glad your chowder is "white." That's my favorite! And I don't think chowder is supposed to be figure friendly. Just comforting!

It's shorts weather here - and very humid. Spring lasted about a day.


I just had the most fabulous lunch at Blue Mesa. Does anyone have one near them? Yummy grilled mahi mahi with sweet potatos and asparagus. Only 415 calories! :banana: Course that doesn't count the basket of sweet potato chips I ate. :rolleyes1

I'm making (finally!) chicken parmasan with angel hair pasta. It's been on the menu for over 2 weeks. It's good TV night and I can't WAIT!!! :woohoo:
 
All this talk about clam chowder has me craving some. I am the exception here, I prefer Natural or the "Dreaded Red" myself. DH loves white.

Only chowder I prefer white are corn or fish! Being a NE I would not refuse any chowder served to me!

WFD- DH's favorite this time a year, burgers! Easy, but if it were up to him it would be ever meal during grill season.

Here is my asiago cream sauce, I serve it over penne with grilled chicken

4 T butter
4 T olive oil
4 T flour
4 tsp garlic, minced
1 cup white wine
1/2 cup water
1 1/2 cup half and half
1/2 cup sour cream
1 1/2 cups asiago, grated

Heat the butter and olive oil. Stir in flour and cook out raw taste. Add garlic, water, salt and pepper. Add in wine, half and half, and sour cream. Turn off heat and stir is asiago.
 
Hello everyone. It is a little raining here tonight. For the last couple of days we have been in the 70's.

Tonight we are having chicken piccata with pasta of course, and a salad.

I hope Sheryl is ok just busy.

Lovely cakes, Mrs. Kreamer. I can bake, but cakes...not so much. My cookies are famous worldwide though (wherever DH is stationed ;) ).

Laura- We live on the cape, so we drove up to provincetown to see the whales, if the boston whalewatch boats are running yet, maybe you could fit one in your schedule.

They are running, but I think it might be a little too chilly for the kids...okay, and me...yet. I definitely want to put that on the schedule for this summer though.

Most of my food is not figure friendly. :laughing:

Tonight we had swordfish that was marinated in lime juice, cilantro, garlic and jalapeno. It was then pan-fried and served in tortillas with lettuce, tomato, cucumber, sweet onion, chipotle/sour cream sauce, and guacamole.

The Chicken Parmasean over angel hair pasta was really good and really easy. Thanks to whoever posted it originally! :thumbsup2
 
Dinner tonight was Panera. A friend and I went out shopping and I had a gift card. I got a cookie! :sad2:

So tomorrow night has to be a good night (I usually allow myself to be "bad") I went and got a new propane tank and will have chicken and I am going to try grilled asparagus and prosciuto(sp?).
