Nita- We use whole wheat pasta now and it is really good, now that we are used to it.

Gretchen- Procrastination only put it off by one day. I have to meet Gail tomorrow morning at my brothers and then off we go. I have promised her Thursday and Friday. I need to get my yard work started over the weekend.
 
Dinner was amazing tonight. I made a garlic pan chicken, baked sweet potatoes, baked potatoes for Kady and Jeff, beets, and a big salad. It is a core WW recipe.

I doubled the ingredients. When the chicken was done I did reduce the sauce in the pan and then added the chicken and served it that way.

Pan-Seared Chicken with Garlic Sauce
[FONT=&quot]1 tsp paprika
¼ tsp black pepper
½ tsp dried rosemary
½ tsp salt
1 tsp dried thyme
1 tsp oli (I used 2 or 3 of olive oil)
12 garlic cloves, halved
1 lb uncooked skinless, boneless chicken breast (4 pieces)
1 c ff chicken broth

1. Preheat oven to 450.
2. Combine first five ingredients in a small bowl. Sprinkle both sides of chicken with herb mixture.
3. Heat oil in a large ovenproof skillet over medium-high heat. Add chicken and cook 2 minutes on each side. Add garlic and ¾ c broth. Place pan in oven. Place pan in oven and cook at 450 for 10 minutes or until chicken is done and garlic cloves are cooked. Cook chicken about 12 minutes. Remove pan from oven. Transfer chicken to a platter; keep warm. Add remaining ¼ c broth to pan. Mash garlic cloves with a fork. Cook garlic mixture over medium heat for 2 minutes or until thoroughly heated; stir. Serve garlic sauce over chicken.

Well dinner tonight was good but needs a little tweaking. I had Shrimp Egg Rolls and Egg Drop soup.

I decided to "fry" the Egg Rolls in a tiny bit of olive oil on the stove but the heat was too high (really need a new stove) and they didn't crisp up very good. The filling was great though.

The Egg Drop soup I completely messed up, it tastes good but the egg kind of dispersed rather than sticking together in threads. I put it in while the broth was boiling rather than taking it off of the heat. And I scorched the green onion I put in it. I was trying to do too much at once, cutting the veggies for the egg rolls and trying to saute the onions and get the pan ready for the filling. :sad2:


Shrimp Egg Rolls

4oz shrimp diced
1 C shredded carrot
1 C bean sprouts
1 C mushrooms, chopped
1/2 C snow peas sliced
3 cloves garlic, diced
1 t olive oil
Egg roll wrappers

Saute everything but the shrimp for 2 min. Add the shrimp and saute until done. Let cool. Brush a little water around the edges of the wrapper then place about 1/4 to 1/3 C in the center, fold over one side, then the ends and roll. Place on a cookie sheet that has been sprayed with cooking spray. Spray the egg roll with cooking spray evenly. Bake at 350 until golden brown. Will make 8 to 10 egg rolls.

What cake decorating class do you take? My sister took the Wilton series of classes, and really found her passion. It is incredible what she can do! She's become so well known that she makes a wedding cake a week! Lots of baking. My favorite is her white chocolate cake with raspberry filling. Of course her carrot cake is nothing to sneeze at, either.
Yes I am also taking the Wilton classes. I am finishing up Course II tomorrow, and next week starts Course III. I love it. I take the classes with my stepmom and we are having the best time. We have started to make cakes for her office, and we actually sold our first cake(just for cost since we are still learning) two weeks ago.
Tonight I am actually making a chocolate chocolate with raspberry filling for class.

Easter Cake. This one was so yummy. It was a two tiered lemon cake with lemon curd buttercream and a raspberry filling.

This is the cake we sold. It was for a simple bridal shower the bride's volleyball team had for her. It was a almond cake with a simple vanilla buttercream. Please ignore the ugly bow....yeah it's still bothering me.

Aimee, dinner got a mixed review. The kids and Kenny really liked it, and I thought it could have been better. The sauce was a little too thick for my tastes and I didn't have any more milk to thin it with. So my suggestion is if you give it a try, have extra milk on hand in case you need to thin the sauce. (The measurements below are the amounts I used tonight).

2 tablespoons butter
2 tablespoons flour
1 (12 oz) can evaporated milk
1/2 cup milk
1/4 cup chicken broth
1 cup grated Asiago cheese

Melt butter over medium heat. Whisk in flour until blended. Add in both milks and chicken broth and stir. Heat until sauce thickens, stirring often. After the sauce thickens, remove from heat and add the cheese, stirring until melted. Salt and pepper to taste.

I sauteed chicken breasts in some olive oil with chopped onion and minced garlic, salt, pepper, basil and parsley. I added this to the sauce and served over penne pasta.

It sounds good; I think I'll try it and have milk on hand in case it needs to be thinned. Thanks!

We are getting wicked storms again and I was afraid we would lose power in the middle of cooking so I just ran through Taco Bell. Their new chicken bacon club gordita is SO good and tastes exactly like the chicken club tacos at chili's but for a fraction of the cost.

I wish I had bought more than one.

What was I saying last night about the diet??? :sad2:

Yeah...I do not own an iron because when I did, I always set clothes on fire. I even had an iron at my office that I used to press skirts on when I was going out for dinner after work, and I set a fire there too. Look, we all have special talents! My special talents just do not include ironing. The upside is that my dry cleaner/launderer is giving us some Red Sox tickets as appreciation for our business. :laughing:

I find it really hard to fry in olive oil. It starts to smoke too much, and then I set off the smoke detectors! I do cook with olive oil, but not for pan frying--more for setting off onions etc that I am building into another dish. I hear you on the new stove. I HATE mine. In fact, I hate my entire kitchen, which is nicknamed "the closet."

That was the problem tonight, the oil started to smoke. Our stove only seems to have three settings anymore, high, simmer and nothing. Once we get the tax relief check we are getting a new one.

Stephanie - The cakes look fab! I have a baking disorder and cannot seem to make it work out for me.

Merle - I feel your pain on the stove. I had to replace mine about 2 years ago. I used it for the longest time with just 2 burners working (1 large, 1 small) and those burners worked on high or off. After I lost 1 of those two, I went on a cooking strike until we got a new stove. It only took a couple take out meals to make getting a new stove my darling husband's priority.

Tonight for dinner the kids are having chicken and pasta leftovers. Kenny and I are having sushi.

Wow, I was gone for one day, that's alot of catching up. First of all, irons are for my daughter's melt-a-bead projects ONLY. Whole wheat pasta is awful, I'd rather have less of good pasta. The barilla plus is fine and ronzoni also makes one in a purple box, but never again regular whole wheat.

Aimee- I have a really good asiago sauce I make for mother's day every year, I'll have to find it later.

Laura- We live on the cape, so we drove up to provincetown to see the whales, if the boston whalewatch boats are running yet, maybe you could fit one in your schedule. I can't believe how many we saw just from the beach

I have no idea what's for dinner, I'll have to go check out my freezer stash.

Our stove is only 8 years old, it was bottom of the line that came with the house.

We actually bought a foreclosed home and when we went in to look at it the first time it was horrid.:scared: The place was filthly and all of the appliances, the lighting fixtures and the shelves in the closets had been stolen :confused: We tried for another townhouse in the same neighborhood and didn't get it, we went back to this house and they had replaced the carpet, cleaned up and replaced all of the stolen things but the fridge. The dishwasher had to be replaced about 3 or 4 years ago and now the stove.

Of course the ones we would love to have are way out of our price range. :rotfl:
 
Sheez, ya'll have been chatty the past couple days! I did read that CONGRATS are in order for Glynis! How exciting for you!!!!! And welcome to all our new members (I was wondering why everyone was welcoming me back--till I realized there was another Stephanie around!) Silly me!

The philly cheesesteak ala Cooking light was forgettable the other night. Decent but could find something better. Last night was tacos, not sure about tonight

They had that on the news, about how many there were and the fact that it was very unusual.
 
We went to Applebee's last night and I had a Peach Sangria...it was soooo good!

Here are the ingredients that were in it...it is perfect for summer! :thumbsup2

Peach Sangria

White Zinfandel (chardonnay can be subbed)
Peach Schnapps
Pineapple Juice
Sprite
Cut up peaches, apples, oranges, etc.

I didn't get the measurements but experimenting is always fun! I think I will make mine with peach nectar, a hit of brandy and seltzer...:goodvibes
