Sad morning.....

We walked the older to kids to the front door this morning to say goodbye for school and a metal framed topiary tree that we have on either side of our front door was laying on the ground. The metal frame looked like to two globes and a mama bird had made her nest and hatched her little babies in the safety of that globe. Such a clever place for her nest. Well, we've been watching the process ever since she started building the nest and eggs hatched about a week or so ago. The kids love seeing the birdies from the window.

Obviously I was so upset and confused as to how the topiary could have fallen down, way too heavy for a bird to do it. Eric says it must have a been a cat or maybe an owl. Well, the nest is empty except one bird...don't know what to do and can only hope that mama is ok and will come back? Anyway, our little lesson in nature sure took a sad turn. Wasn't prepared to teach the little guys about THAT part of the circle of life.

What a sad story! If you have a "Wild Care" type place you might think about giving them a call about the baby bird that is left. Did you hear the crash? It is very likely that the Mama got away as she is probably very fast and if it was a predator, they would have focused on the weaker of the occupants. I'm so sorry that the kids had to see this.

We're doing fairy crafts and having a yummy sante fe chicken (now there's some hearty "fairy" food for you). I was going to make some little tea cakes and tiny sandwiches for fairy food, but I'm a single parent AGAIN this week so crockpot food was more my speed.

I thought I'd post the recipe in case anyone wants it.

Ingredients
3 boneless skinless chicken breasts (I throw them in completely frozen)
1/2-1 package taco seasoning (I buy this in bulk so I just sprinkle some on)
1 can corn (drained)
1 can black beans (rinsed and drained)
1+ cup salsa
1 8oz. brick cream cheese

Throw the chicken in the crock pot along with the beans, corn, taco seasoning and salsa. Cook on high until the chicken is done (it's about 3-4 hours when I put it in from a frozen state so judge accordingly). When it's done take the chicken out and shred it. Cut the cream cheese into squares and throw in the crockpot (the first time I made it I had about a 1.5 inch block of velveeta left so I threw that in also and make it that way all the time now). Cook on low one more hour (I usually add a little more salsa at this point). Stir it all up and enjoy.

Here are some ways we enjoy it:
On tortilla chips
Rolled up in tortillas with sour cream and salsa on top.
I make a packet of spanish rice and put the chicken mixture and spanish rice in tortillas and cover with enchilada sauce. Sprinkle lightly with cheese and bake until heated through.

It's really yummy!

Good Morning All!

I have been so terribly busy lately at work. I had to get caught up from that conference and now I am leaving tomorrow for a Girls Trip to Savannah!! Woohoo!
