Me too!!! We call it "Grandma's Stuffing" because that is where we got the recipe. I finally wrote it down when I moved out of the house.

Every once in a while...my MA would put creamed corn over mashed potatoes...they went together quite well...

we usually do Thanksgiving at the in-laws and everyone has their special additons to dinner.

Turkey - the biggest you can find
Stuffing - sausage and Stove Top for the kids
Potatoes - mashed
Sweet Potatoe/Apple Casserole - my mil make this and is one of my favorites along with her
Green Bean Casserole
Turnips
Squash
Cranberry Sauce - yuck
Pearl Onions
Rolls

dessert: My job at all functions

Homemade Apple Pie, Pumpkin Pie, Pecan Pie, Cookies, and whatever is my new favorite of the moment - this year it's the Apple/Cream Cheese Pie. For Christmas I make a killer cheesecake with Raisins, Rum, and Walntus for the topping.:teeth:

Ok, I have a recipe for stuffing that is SO good! I have NO idea how much you would need for a 15lb. turkey, though.

You get the bags of dry stuffing to start off with (not stove top!!:eek: )

You will also need:

yellow onion
celery
butter (not margarine)
tube of sausage
orange juice
salt as desired

Sautee the diced onion and celery in the butter. Cook the sausage as directed. Pour the bag of dry stuffing into a large bowl. Add sauteed onion and celery. Then add the cooked sausage. Now for the different part. Instead of adding water, use orange juice instead. Bake as directed. It is REALLY good! :hyper:

No water...I use the homemade broth from the turkey...oh sooo sooo good.....
 
We have a huge Thanksgiving feast!

Starters - shrimp, fruit tray, veg. tray, deviled eggs
Salad
Stuffed Shells
25-30 lb. turkey
mashed potatoes
sweet potatoes
asparagus with hollandaise sauce
corn
cole slaw
stuffing - (old fashioned bread stuffing)
cranberry sauce (homemade)
desserts - apple pie, pumpkin pie, lemon meringue pie, cheesecake and trifle!

The next day I burn off all the calories but going Black Friday shopping!
 
My aunt does T-Day normally, but SIL may do it this year.

The size of the turkey varries by how many people will be coming, but last year I think we had a 20 pounder.

We also have:

Mashed potatos and gravy
Green bean caserole
cranberry sauce
bread/rolls
Stove Top Stuffing (hey, it's easy and everyone likes it!)
and one or two other dishes that vary from year to year.

And for desert, pumkin pie and one non-pumkin desert. Last year my brother made the most AMAZING cheese cake from scratch. It's the best I've ever had, better than Cheesecake Factory. It looked like it CAME from Cheesecake Factory, truely picture perfect. Only I didn't have to pay $7 a slice :).
 
Since we moved to Florida, we've spent Thanksgiving at my sister's MIL's house and she makes the traditional Thanksgiving meal.

However, I still bring the stuffing which is cornbread and sausage stuffing with bell peppers and onions. It's a favorite and I always make extra.
 
Small turkey, usually, about 10-12 lbs for four to six people.

OYSTER dressing!! Saute chopped celery and onions in butter. When brown, pour in one can of beef consumme. Heat thoroughly. Tear up one slightly stale loaf of white bread in bowl. Pour consumme over bread (saving a small mugful for Dad to drink :p ) Mix together. Add in about half pound of fresh oysters (with liquid). Place in casserole dish and bake at 350 for 35 minutes.

*sigh* I can't believe I have to wait two more weeks!! :teeth:

We eat at my sister's, but I usually do a bird here over the weekend because no one ever got enough on Thurs. Believe it or not, my family wanted....LEFTOVERS!

Anyway...

menu? Pretty much the same as everyone else's except we have corn pudding, which is similar to a soufflé.

I do potato filling (stuffing or dressing for the rest of you) and what doesn't fit in the bird just goes in a casserole.

Potato Filling
from Grammy Barnes
4 – 5 stalks celery, diced
4 – 5 potatoes, diced*
3 Tbl butter/margarine
2 tsp chicken bouillon
1 c boiling water
2 tsp celery seed, ground (or celery salt)
2 Tbl parsley
2 eggs
1 c milk
12 – 15 oz bread cubes (I use the dried ones in a bag)

Recent additions:
2 apples, diced (NOT red delicious)
¼ c dried cherries

Sauté celery & potatoes in butter until tender. Cool. Dissolve bouillon in water. Put bread cubes in a large bowl, sprinkle with spices and pour bouillon over to soften. Stir in celery/potato mixture. Beat egg & add milk. Stir in egg/milk mixture. (Do not add egg/milk while the rest is still hot as it causes the egg to “cook”.)
*For a faster alternative, use the frozen hashbrown cubes.

For what doesn’t fit in the bird - bake in a casserole. I usually cover the filling with the "heels" from a couple loaves of bread - with the crust up. Try to completely cover the casserole to avoid spaces where the moisture will "leak out" & the filling will brown/turn crispy. If you're not worried about the extra fat, buttering the bread also helps. Cover the whole thing tightly with tin foil. I forget how long I bake it outside the bird, but think it's probably between 20 & 30 minutes.

NOTES: If using apples & cherries…sauté the apples with potatoes. Add cherries when adding bread cubes. I used to cover the giblets with water & simmer to use that broth for the filling and for giblet gravy. DH detests the taste (calls it “gut gravy”) so I use bouillon now.
 
Mal - We also have Oyster Filling, but our recipe is a little different....and for those of you saying "Eeeeeewwwwww" it never, ever goes inside the bird! *shudder*

Oyster Filling

1/3 c butter
4 c crushed OTC crackers
1 pt oysters (or just broth)
½ tsp salt
¼ tsp pepper
2 c oyster juice & milk

Combine butter with crackers. Layer crackers & oysters, topping with liquid. Bake at 350 for 30 – 35 minutes.

[NOTE: This wasn’t enough liquid. I used 3 cups & that still wasn’t enough! Another recipe said to cover the crackers with milk. That might be a better guess on amounts.
 
We usually prepare a 17-20# turkey for about 5-6 of us. My husband always insists on a fresh turkey, but I personally think a Butterball tastes better. Since he won't be here this Thanksgiving, that's probably what I will buy. ;)

We also have cornbread stuffing...

Mashed potatoes with gravy

Steamed green beans with slivered almonds

Fruit salad of some sort

Rolls & buttah

Cranberry sauce (canned but BOTH kinds---we are so classy!)

Relish tray

Pumpkin Pie and also some sort of apple dessert (going real gourmet this year and just buying an apple and cranberry cobbler I saw premadea t the Costco bakery). :p
 
We usually do 3 stuffings. My grandmother makes a meat and bread stuffing with italian sausage and hamburg. My Father makes a bread with fruit stuffing that he stuffs the 20 +lb turkey with, and I provide the oyster stuffing.

We also have:
mashed potatoes
yams
ham
eggplant parm
lasagna or stuffed shells
green beans
mashed carrots & turnips
butternut squash
rolls
all sorts of desserts and appetizers.

BUT! I have the day befor Thanksgiving off....I'll prepare some things then...

I'll make a small batch of oster stuffing...I can bake it in a bread pan covered with foil...

Jeez....that potato filling...YUM!

If there is leftovers...so much the better!

PLUS! we'll be doing another turkey at Christmas....then my Superbowl Party....
