Thanksgiving dinner

Most if not all restaurants that take reservations will do a Thanksgiving meal.

It depends on where you go as to what you get. The Disneyland Hotel meal is the most popular and is a buffet. But it's very expensive. The in-park options are usually served. We'll be going for Thanksgiving this year (we usually go the 3 days before instead, but timing just worked better), so I've been doing some research. Can't wait to see what the exact offerings are.
 
Be prepared to book as soon as it is out. If I remember correctly, these sell out in a day or two.
 
Goofy's, Storytellers, and Pacific Grill will all offer a Thanksgiving buffet in addition to the Disneyland Hotel's buffet. Most if not all sit down restaurants will offer a Thanksgiving meal on the menu.

Will those dining options be more expensive on thanksgiving evening than the other evenings? (I somewhere read about holiday pricing but couldn’t find specifics)

Storyteller's was more expensive the last two years for Thanksgiving dinner than for regular dinner because they now add characters for the Thanksgiving meal.
 
I can’t wait for them to release more info on turkey day, this will be our first year spending thanksgiving at the parks and I’m so excited 🤗

Just a word of warning, they usually release the info the morning of the dining release I believe. So people in the know are already booking. I would suggest a search on thanksgiving dining disneyland and see what has gone on years past to have a head start. My calendar is already marked for Sept 30th/Oct 1st t get my ressie.
