Sure! I much prefer the choc. zucchini one over the Texas sheet cake... it is so incredibly yummy and moist.
Over the summer, I usually buy up a lot of zucchini, grate it, and freeze it in 2 cup baggies, so that I have plenty to make the cakes through the winter/spring,
Here's the recipe:
Ingredients:
1 cup brown sugar (packed), 1/2 cup white sugar, 1/2 cup butter, 1/2 cup oil, 3 eggs, 1 tsp vanilla, 1/2 cup buttermilk, 2 1/2 cups flour, 1/2 tsp cinnamon, 1/2 tsp salt, 2 tsp baking soda, 4 Tbs cocoa, 2 cups grated zucchini, semi-sweet chocolate chips.
Cream together butter, oil, and both sugars. Add eggs, vanilla, and buttermilk. Stir well. In separate bowl, mix the rest of the dry ingredients together then add to butter mixture. Add zucchini. Put in 13x9 pan. Sprinkle with choc. chips (I use a lot,

) and bake at 325 degrees for 45 minutes.
