Tell me something EASY I can do with piecrust!

We made a quiche a couple of nights ago (ridiculously easy and yummy). We now have an extra piecrust, don't want to make another quiche, and are looking for something super-easy to make with it. Any ideas?? DH eats meat and I don't, so carnivore OR vegetarian ideas are fine. :)
 
Taco Pie

2 lbs ground beef (or turkey)
1 pkg taco seasoning
1 jar (small) salsa
2 cups shredded cheese

Put piecrust in deep dish pie plate. Brown ground beef. Mix in taco seasoning, salsa and 1 1/2 cups cheese. Spoon mixture into pie plate. Bake at 350° for 30 min. Top with the remainer of the cheese and put back in oven long enough to melt. Serve with sour cream.

I use crescent rolls for the "crust". You might want to prebake the pie crust partially so it doesn't stay "soggy" in the middle.
 
Well if you don't mind meat recipes, you can make tourtiere (French Canadian meat pie), or Shepard's pie. Both are pretty easy, very filling, and takes me a very short time to do.

Or you can make blueberry pie, which takes me all of 5 minutes to whip up.
 
My mom always used to just sprinkle some cinnamon and sugar on extra pie crust and bake it. Easy and yummy sweet treat.
 

Not sure which kind of pie cruist you have --the type in a pie plate or the type that comes in the box that you put in the pie plate yourself. If it's the latter my husband rolls it out and puts it on top of chicken pot pie filling in a corningware dish (lest fat, etc than having pie crust on the top and bottom). He's also uses it in the same fashion over a spinach/feta mixture to make a variation of spinach pie (DH is a vegetarian).

Filling
2 eggs
1/2 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 can (12 oz) evaporated milk


In large bowl, beat eggs slightly with wire whisk or hand beater. Beat in 1/2 cup sugar, the cinnamon, 1/2 teaspoon salt, ginger, cloves, pumpkin and milk.

To prevent spilling, place pastry-lined pie plate on oven rack before adding filling. Carefully pour pumpkin filling into pie plate. Bake 15 minutes.

Reduce oven temperature to 350°F. Bake about 45 minutes longer or until knife inserted in center comes out clean. Place pie on cooling rack. Cool completely, about 2 hours.

It is piecrust with its own aluminum pieplate.

My mom used to do this and still does. I like it better than the pie.
 
cut strips of the pie crust and put cinnamon and sugar on it and roll it up.....the kids loved this ....

That is what i was going to suggest! I spread melted butter on it first, then the cinnamon and sugar. My mom did this for me when I was little.. it's how we use the scraps of pie crust. We call it Johnny Cake.

All recipes welcome (I'd really like blueberry pie, shepherd's pie, etc. recipes that were mentioned too :) ).

Here's the quiche recipe we used the other night:
Ingredients:
2 cups Monterey Jack, shredded
4 eggs
1 small can green chilies
1 cup half-and-half
Piecrust

Beat eggs and half-and-half together.

Put half the cheese in the piecrust.

Layer half the chiles on top of the cheese.

Put the other half of the cheese in the piecrust, and layer the other half can of chiles over it.

Pour egg/half-and-half mixture over everything in the piecrust.

Bake in pre-heated oven at 250 for about 45 minutes (our recipe said 30 minutes but it actually took quite a bit longer--maybe even an hour).

Very delicious. Please don't tell me it was high fat--I already know that! :goodvibes
 
If you have some apples you could slice them up (or dice them). Take the pie crust and cut it into smaller pieces. Put some apples, brown sugar, butter, some raisins if you like them into the center, fold the crust up and then bake it. They're like little apple turnovers.

Chocolate Chip Cookie Pie

3 eggs
3/4 cup brown sugar
2/3 cup light corn syrup
1/4 cup butter, melted
1/2 cup oatmeal, uncooked
1 tsp vanilla
1/2 cup choc. chips
8 inch pie crust, unbaked

350 for 45 min - until firm center

Beat eggs until foamy. Add sugar, beat well
add corn syrup and butter, mix well
stir in the rest
pour into unbaked pie shell

Add ice cream or whipped cream before serving
