Tell me about Maya Grill at Coronado Springs

We have been to Disney many, many times, so I am branching out in looking for restaurants to try. What are your thoughts on Maya Grill? So far the Taco Salad and Fajitas have caught my eye.
 
We had an outstanding bone-in ribeye there twice.

Service has been excellent.

The times we went (pre-Covid) the live music was very nice.
 
We LOVE Maya. Great service. Very good food and drink. Live music (I don't know if that's every night, but we've enjoyed him many times). Great atmosphere.

Ate there last month.

Agree with PP the keyboardist/guitarist is great and the service is also really good.

I had the taco salad and it was good and except way too much meat (was drowning in it like a sloppy Joe) so I removed half the meat and then it was better! Saw the fajitas and they looked good too. Used the mat his to eat some of the extra meat.

I notice they mix some weird ingredients into things. For instance I thought it was a typo when the menu had guac w/ strawberries in it but the waitress confirmed they put strawberries in their guac. She asked if we wanted to order it. That was a no for me dog lol. We got the salsa instead and it had something sweet in it that tasted like strawberry juice so not sure what that was about. Had the chicken tortilla soup - was good except I didn’t expect the chickpeas in there, but I do like chickpeas so all good!

Overall I really liked the restaurant but we went multiple times to Three Bridges as the food there had a slight edge over Maya for us (normal guac and salsa etc ;)
 
Keep in mind it's Mexican food (as in from Mexico) it's not Americanized Mexican food or Tex-Mex. In our opinion, when people are giving food reviews, people need to be very specific as to what they ordered and liked and disliked. Even in Houston we eat at specific restaurants for specific items. I can't tell you how many times I've recommended a dish at a particular restaurant and someone goes and orders something I didn't recommend and then says, we went and it was okay. When I press them at bit, I find out that they didn't order what I recommended! SMH Haha
We stay at GDT quite a bit, so it's an easy reservation to get when we decide we just don't want to leave after getting back from the parks. We've always found the food to be good, but we also don't expect it to be our local Mexican food and rarely order something standard that we can get back home. We have a ton of Mexican food and Tex-Mex in Houston and I've traveled all over Mexico from boarder towns to Mexico City to the Baja to the Yucatan, the food is different in all those regions. My understanding is that Maya is owned by the same Mexico City restaurant group that owns San Angel Inn and La Hacienda de San Angel at Epcot.
The Cochinita Pibil which is a Yucatan region dish was very good on one of our trips.
We had the Barbacoa Empanadas which were good.
The Short Rib was very good as well.
My wife puts it in the top 3 of her Chicken Enchilada's Verde, period.
Even the Caesar Salad was good. (Yes, this may surprise a few, the Caesar Salad isn't Italian, it was created in Mexico! Ha)

I've had my share of nachos, quesadillas and fajitas all over Mexico for the last 45 or so years. I guess you got me on the burger and chili fries! LOL
Nachos are a Mexican regional dish from northern Mexico. The most authentic Mexican quesadilla originated in the south-central regions of the Mexico. Fajita's AKA Arrachera in Mexico has been a staple for ever.
The greater point was, all 3 are owned by the restaurant group out of Mexico City MX, and even the wait staff at both Maya and San Angel Inn laughed when we asked how many people asked for Tex-Mex food. They said, people are all upset when they find out they don't have chimichanga's, crispy taco's and burrito's and tend to leave bad reviews because of it. That's not my opinion, that's what the staff and I discussed on multiple occasions. Haha

They don’t serve nachos, fajitas, etc at the Epcot restaurants-probably trying to stay truer to their roots. My guess is they have to include them on the Maya Grill menu because that is what people from the U.S. think of as Mexican food. Even though they are the same owners, they probably realized they need a more Americanized version to support a hotel restaurant vs. the pretend version of Mexico in Epcot. So you can certainly get familiar dishes at Maya Grill. I happen to like both. My extended family on the other hand hated the food at LaHacienda de San Angel and were annoyed that I had booked that reservation.
