I have been loving getting cards from all of you. My dh thinks it funny when a few times there has been more DIS friend cards in the mail box, than relatives or neighbors. :rotfl2:

Jim does too, he thinks it is very funny that we got more cards from Fockers than from family members:lmao:

I'm really bored today, I just can't be bothered to do anything :confused3

I just opened my present and... I LOVE IT! I really can't tell what it is, because you all will know WHO my ornament ss is... or are we telling now?

I got a few more cards today, but still no ornament. Maybe Ed's is for me???

I did get my SS gift a few days ago and it was cool. The girls loved it! I won't tell who it came from, but it was great!

I've been working on my cards this afternoon. I keep meaning to get them out, but then something else comes up. I got DD4 to take some Advil this afternoon, so she's feeling better. It's really amazing what that will do. She's up and playing and wants to put some clothes on! Of course, her fever will probably go up again when the meds wear off. I'm still hoping that it will break overnight and that she'll be able to go to her party at school tomorrow. :guilty:

The boys are home, D is in Massachusetts, at least, and I have dinner ready as the crock pot meal yesterday wasn't quite ready in time for just the boys and I, and also because I hated D to miss it.

I had a bit or two last night as I was shredding the beef, and it was awesome, so here goes:

Ropa Vieja:
2 flank steaks, total weight of 3 1/2 pounds
3 bell peppers, any colors, sliced
1 large white onion, sliced
2 cloves garlic, sliced
1/2 cup canned jalapenos, sliced and drained
1 bay leaf
1 tsp. ground cumin
1/2 tsp. dried oregano
1 tsp. salt
1 can (14.5 oz.) whole canned tomatoes in juice

In crock pot, stir together jalapenos, bell peppers, onions, garlic, cumin, bay leaf and salt. Top with the flank steaks, cutting them if needed to fit into the bowl. With kitchen shears (I just used a butter knife) coarsely slice the whole tomatoes, then pour them with the juice over the steaks. Do not stir. Cover with lid, cook for 9 hours on low (I definitely felt it needed 12 - like my Italian beef, I think it just gets easier and easier to shred the longer it goes.)

With slotted spoon, transfer steak and vegetables to a large bowl. Discard bay leaf. With two forks, shred steak, with the grain, into fine strips. Skim and discard fat from cooking liquid. Stir cooking liquid into steak mixture. (I just skimmed the fat first and then shredded the beef directly in the crock pot - this method seems like unnecessary dishes and steps to me...) Spoon into serving bowls and serve with warm tortillas if desired.

*I think I'm going to definitely serve with tortillas and probably some rice. I'm sure you could add or subtract heat with the amount of jalapenos. :thumbsup2

Here's a suggestion for those whose kids mostly get gift cards and cash but still want a full looking tree.

What I/we do is stick the gift card or cash in a box we already have at home and then wrap that. It could be a DVD box, CD, shoe box, whatever you have handy. That way they still have a present to open and the tree looks full. :teacher: Also to throw Alek and Erich off of guessing what is in the boxes I also put in pennies and marbles to disguise what could actually be inside.

Mmmm... that sounds good! I suck at cooking. I guess it's because I don't try very hard. :confused3 I need to make some of these yummy meals and stop eating out so much.

So there was just a showdown in our kitchen. Mom went into the fridge and started getting angry because a bottle of coke she bought a few days ago was no longer there. I didn't drink it and Erich says he didn't drink it and nobody else has been in the house since she bought it. I gently suggested that perhaps she drank it already and forgot. Well she blew a gasket and is now mad at me for calling her senile (not my wording, hers). :rotfl:

You'r ahead of me.. I have not received anything yet... but I have been keeping a running list when someone says they have sent out something... then a few days later.. people get something....
I have narrowed it down to 4 suspects;) but 2 are on the hot list :rotfl:

Well, I run into that all the time, and I don't. I only really cook when D's here - otherwise it's mac & cheese or frozen nuggets or spaghetti & frozen meatballs. ;) But I don't mind cooking and have some favorites that are good. This one I just got from Good Housekeeping.

I am sure this is no where near as good as Katt's Beer Cheese soup, but here is my Weight Watchers Beer Cheese Dip:

1 can or bottle light beer
1 tsp. dry mustard
1/4 tsp. ground red pepper (cayenne)
1 pound low-fat cheddar or colby cheese, shredded (I use the 2% kind for this)
3 T. flour

Boil the beer in a saucepan, add mustard and pepper.

In a bowl, toss cheese with flour. Slowly add cheese to beer, stirring. Continue stirring until mixture is smooth and thick, about 6 min. total.

This is good, but I do find that it requires restirring after a while. We usually have it for Bowl games. :thumbsup2

Oh, and for the WW folks, a 1/4 cup is 2 points.

Yeah Mine has a little more fat involved... I generally use american( Velvetta. and the 2% version) as cheddar can get lumpy :scared: I still add some.. it's just not my main cheese.. but it give the soup the flavor it needs.
 
Katt- All of those pictures are fabulous! Are one of those ornaments you showed from the ornament swap?

Your real tree looks soooo soft!
