Okay I made homemade beef patties in gravy served with rice and green beans , a different version of Banquet salisbury steaks !
Kat I would love to come to NYC but for sure the week before is out I possibly could come after on Sunday and Monday my days offI could prolly fly done saturday night !! This is all a maybe but I would LOVE to see NYC at Christmas !!MY dd really wants to see the Macy's Parade up close sometime . She has never been to NYC and me only once on a day trip to shop!!

It's actually pretty cold here (I'm sure it's nothing weather to you), but to us Miamians I busted out the sweats and socks and slept under 2 blankets.:rolleyes:

T: How'd the organizing of the closets go?
I would've given an idea on a recipe, but as for steps and ingredients I'd be at a loss since I don't really cook. But my mom would've stewed (is that a word?) the chicken in a pot with the vegetables (mainly carrots) and potatoes and some spices and stuff and made some white rice. Which is my favorite meal from her that we call Arroz con pollo guisado (rice w/ stewed chicken). Yummmy! :lovestruc

Oh look I Googled a recipe:

Ingredients:

4 portions of boneless, skinless chicken breast
2 medium potatos
2 teaspoons of salt
3 tablespoons of sofrito
1 8 ounce can of tomato sauce
5 olives
2 bay leaves
1 teaspoon olive oil
1 ounce green bell pepper
2 cups of water

Procedure:
Place the chicken in a pan with ehough water to cover the chicken by 1/2". Add 1 teaspoon of salt. Cook at moderate high heat until the water starts to boil, then lower the heat to moderate and cook for 45 minutes. Remove from the heat and drain all the water. Let the chicken cool for approximately 15 minutes. Cut the chicken into 1/2" pieces and set aside.
Peel and dice the potatoes into 1/4" size pieces. Set aside
Dice the green bell pepper into 1/8" pieces. Set aside
In a pan add the sofrito, 1 teaspoon of salt, tomato sauce, olives, potato, green bell pepper, bay leaves, olive oil, and 2 cups of water. Cook at moderate heat until it starts boiling. Lower to moderate low heat and simmer for 20 minutes. stir once while simmering.
Add the chicken. Continue to simmer at moderate heat for 1 hour. Stir every 15 minutes.
Makes approximately 8 servings

Ingredients:

3 cups long grain white rice
3 3/4 cup of water
1 1/2 teaspoon of salt
2 tablespoon of vegetable oil

Procedure:
Place the water and salt in a pan over moderate heat. Mix until the salt has dissolved completely. Add the oil to the water.
Rinse the rice and add to the water. Let it come to a slow boil. Move the rice once while the water is boiling.
When the rice is almost dry, set the heat to low, move the rice and cover it.
Let it cook for 15 minutes then move the rice. Cover the rice again.
Let it cook for another 30 minutes.
Makes approximately 6 servings.

Ok, so I priced the tentative Dec. trip and it came out to $312 without the discount. :dance3: Now I just gotta get everyone in line on the dates. :hyper:

So I slept really good and woke up earlier than normal, so I'm here watching the movie Leatherheads and DISing.

Christmas Wrapping by the Waitresses is my fave Xmas song! Oh, and the Mariah Carey one. (All I want for Xmas is you...)

Here is the recipe for Quesadillas (in case anyone else wants to make them)

Chicken Mushroom Quesadillas

1-2 pkgs of small flour tortillas
2 lg. chicken breasts, cooked and shredded
1 8oz. pkg shredded cheese, your choice
1 pkg. of portobello mushrooms (I buy the large sliced ones and dice them)
1/4 C butter
1/4 diced onion
2 or 3 cloves of garlic, minced
1 tsp. oregano
2 1/2 tsp. chili powder
salt and pepper to taste
1/4 C chopped fresh cilantro (which I leave out because Bob hates it.)

I bake my chicken in the oven at 365 for 25 mins. Then I shred it when it's cool enough to handle.
You can leave the oven on or see note below*******
Melt butter in skillet. Saute onions and garlic till clear.
Add diced mushrooms to skillet. Saute until cooked through.
Add seasonings and cook on med/low for 5 or 6 mins. (Just to make sure flavors blend and mushrooms are done)
Take off heat. Add in shredded chicken. Mix well. Add in the cilantro now if you are using it.

Lay out tortillas for the bottom, add cheese (to taste, I don't use much) then a scoop spread out of the chicken mixture, then a bit more cheese and a top tortilla.

*****You can prepare these quesadillas a couple of ways. I like to put mine on a cookie sheet in the oven and flip carefully after about 5 mins. I give them about 10-12 mins in there, just to get the tortilla crisp and the cheese melty but you could also cook then on a griddle or frying pan on the stove or on a grill!

I use my kitchen shears to cut into 1/4's. I serve with salsa and sour cream.

Hope you like them. There's a "REAL" recipe out there somewhere but it had WAY too many mushrooms for me, and I didn't like the prep. instructions so I just sent you the way I make them.

I ended up finding some good Christmas compilations both old and new so I got me some good stuff! KC is not too into the xmas music but when we put up the tree I need some music! My very fav is The Chipmunks! I used to listen to the 8track w/ my mom putting up our tree!

I am cranky and debating opn making more pumpkin gobs for desert tomorrow when K's uncle is here. I tried to explain to him that he invites people over but I am the one actually doing the "entertaining". Urgh.

Nat King Cole songs (Chestnuts roasting I think), some Sinatra, Mariah Carey's All I want For Christmas (is you), Bon Jovi has a nice Christmas one, also the song "It's the Most Wonderful time of the year" which was actually on the radio the other day on my way to work :santa: , and of course my favorite Weird Al Yankovic's "Christmas at Ground Zero" :rolleyes:

We were at 75 I think, but it was 34 this morning when I got up! I woke up to a nasty smell last night and it was our heater kicking in for the first time all season. :rolleyes:
I wish it would kick on right at 7:28 every morning. :idea:

Aww...that's so sweet. We do Toys for Tots every year. I let M&E pick out gifts for others. I think it's important for them to understand how fortunate we all are.

I need some help with baseball hats! How do I wash them? I just cleaned my Mud Room and need to wash the ones I want to pack for WDW... but they are DIRTY from the summer.

I wash them in the washer and Shape them and let them air dry.. Look like new.

Two dental checkup's today... NO CAVITIES..:yay: :yay: :woohoo: so we were off to Chuck E Cheese.
