Katt - I like the house. It's very pretty and I love the wood floors. But, I'm surprised at how expensive it is! Something like that around here would be about 100K less. Just saying.......:rolleyes1 The school system around here is really great too!

Well, I've been cleaning and cooking all day. I decided to do the self-clean on my oven at 3:30 this afternoon, so I couldn't start anything until it was done. I ended up stopping it about an hour early, so I didn't have to stay up all night baking. I just pulled my pumpkin cheesecake out of the oven and I'm getting ready to put the apple pie in. Then, I've got to start on my stuffing and clean out the bird. I'm hoping to get to bed at a normal time tonight (around 11pm) since I'll have to get up early to get the bird in the oven tomorrow morning.

Anyway, hope everyone has a wonderful Turkey Day! :grouphug: You guys are definitely on my "Things to Be Thankful For" List this year too!

Yeah... especially with this economy They can not expect to get that.. unless they get someone from an area moving here where this would be a cheap home.

Alrighty all you smarty pants, look what I just made:

Sausage and Apple Stuffing
Prep Time: 20 min Inactive Prep Time: hr min Cook Time: 1 hr 0 min
Level: Easy
Serves: 8 to 10 servings

2 sticks plus 3 tablespoons butter, divided
2 cups water
2 large bags of your favorite dried cornbread stuffing mix
1 pound pork sausage (not links)
1 large onion, diced
3 cloves garlic, minced
2 stalks celery, diced
1 teaspoon dried thyme leaves
1 teaspoon dried sage leaves
1 cup chopped walnuts
3 medium apples, cored, sliced
2 to 3 cups homemade giblet stock or low sodium canned chicken broth



In a large pot melt 2 sticks butter in water. When melted add dry cornbread stuffing stirring to incorporate liquid, set aside.
In a large saute pan set over medium-high heat melt 1 tablespoon butter and add sausage. With a wooden spoon break up sausage and saute until lightly browned and cooked through. Transfer sausage to paper towels to drain. In the same pan melt remaining butter and saute onions with the garlic, celery, thyme, and sage until onions are translucent and celery is crisp tender. Add walnuts and saute for 1 minute. Add apples and saute for one minute more. Remove from heat. Combine cornbread stuffing with sauteed ingredients and stuff turkey. Roast turkey as usual.

Alternatively: fill a 10 by 15 by 2 inch pan with the stuffing, moisten with the giblet stock, and bake in a preheated 350 degree F oven, covered with foil for 1/2 hour. Remove foil and bake until top is lightly browned, about 15 minutes more.

Pumpkin Gooey Butter
CakesPrep Time: 30 min Inactive Prep Time: hr min Cook Time: 50 min
Level: Easy
Serves: 6 to 8 servings

Cake:
1 (18 1/4-ounce) package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can pumpkin
3 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 (16-ounce) box powdered sugar
1 teaspoon cinnamon
1 teaspoon nutmeg


Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer. Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

To make the filling: In a large bowl, beat the cream cheese and pumpkin until smooth. Add the eggs, vanilla, and butter, and beat together. Next, add the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 40 to 50 minutes. Make sure not to overbake as the center should be a little gooey.

Serve with fresh whipped cream.

Variations: For a Pineapple Gooey Cake: Instead of the pumpkin, add a drained 20-ounce can of crushed pineapple to the cream cheese filling. Proceed as directed above.

For a Banana Gooey Cake: Prepare cream cheese filling as directed, beating in 2 ripe bananas instead of the pumpkin. Proceed as directed above.

For a Peanut Butter Gooey Cake: Use a chocolate cake mix. Add 1 cup creamy peanut butter to the cream cheese filling instead of the pumpkin. Proceed as directed above.

Level: Easy
Serves: 20 servings

2 (14-ounce) packages gingerbread mix
1 (5.1-ounce) box cook-and-serve vanilla pudding mix
1 (30-ounce) can pumpkin pie filling
1/2 cup packed brown sugar
1/3 teaspoon ground cardamom or cinnamon
1 (12-ounce) container frozen whipped topping
1/2 cup gingersnaps, optional


Bake the gingerbread according to the package directions; cool completely. Meanwhile, prepare the pudding and set aside to cool. Stir the pumpkin pie filling, sugar, and cardamom into the pudding. Crumble 1 batch of gingerbread into the bottom of a large, pretty bowl. Pour 1/2 of the pudding mixture over the gingerbread, then add a layer of whipped topping. Repeat with the remaining gingerbread, pudding, and whipped topping. Sprinkle of the top with crushed gingersnaps, if desired. Refrigerate overnight. Trifle can be layered in a punch bowl.

He's going to need surgury. They sent the films up to his ped ortho and they want me to call first thing in the morning. Doc just called an hour ago and said surgury it is.

I took BabyGirl to the ENT yesterday and she is going to have to have surgery. No surprise there. They recommended last Jan to have her tonsils and adenoids removed, but we wanted to wait because she had just turned 3. Now they have to remove one of her tubes and the ENT said her tonsils look even worse. Might as well get it all done in 1 go. They called to schedule the surgery today, but I missed the call. They want to do it on Dec 4, but Mr Diz is having his hernia surgery on Dec 5. I'm going to try to get her surgery the following week.
:hug: :hug: That's awful. :hug: :hug: I hope they can accommodate on the scheduling. DS11 had to go through a similar operation at around 3 or 4. She was having lots of infections and difficulties with hearing that were impacting her speech.

i haven't been on lately. been busy, but kinda also in a "funk". i don't know how you girls who have husbands that travel all the time do it! it's been hard being here all alone and trying to take care of 3 kids. then, when my husband does come home for the weekend, i have to go to work. i so wish i was a stressful noneater cuz i've gained about 10 lbs in the last few weeks!!:scared1:

then, mike calls me on thursday and says they have a big project and he has to work this weekend (last weekend). i guess this is what a real attorney job is like . :rolleyes:
You are pretty much describing my life at a big firm. Mrs. T actually brought the kids to the airport once to meet me for dinner as I was passing through Atlanta. I can tell you it's pretty lonely from the other side. I'm pretty thankful that I could step off that path 4 years ago, although I have to say with the work slow down the last couple months I've been pretty concerned that I might have to get back on it. I'm not sure how long Mike has been at the "real" attorney job, but he's welcome to call if he wants to talk to someone who's been there, done that, almost burned out, and walked away. Feel free to PM me, and I can get you my contact information.

On the contacts discussion, I used to wear them. I got my first pair when I was 11 or 12. I could not nap or sleep in them. Sometime in my late 20s; I had to stop wearing them. My eyes would deposit so much gunk on them that I needed a new pair every 3-4 months. I went to the disposables and that worked for a while. In 1999, I gave up and had the lasik procedure. I've been 20-20 with no astigmatism since then.

Well, two birthdays down and one holiday to go.

We took DD9 (time to update the signature) to dinner tonight with a friend. It went well. The staff brought her out a rainbow colored sombrero her, a sopapia with ice cream and chocolate and honey drizzles with a birthday candle on top, and sang her happy birthday in Spanish. Since we had arrived before Mrs. T, she and I had told the staff that we were actually celebrating two birthdays, but apparently they had forgotten Mrs. T. :sad2: Mrs. T makes a point of avoiding refined sugar, so I guess it's not quite as bad. I brought her a no sugar added birthday pie last night, so that's the plan for this evening.

I'm heading downstairs for some pie and conversation with Mrs. T. I hope everyone has a terrific turkey day tomorrow! TTFN! :grouphug:

Had a very busy day, not a bad one just BUSY!!!Finally got home after 14hours of work :scared1: and had to make the pie with the kids !!:rolleyes1 Sorry I was running so late I forgot the camera till it was to late !! :sad2: But the Applie pie looks really good ,the kitchen is clean and we have planned our KMart morning ! :banana: the girls are coming with me and they have electronics , I have Toys and clothes !! They are much quicker at getting to the electronics than this ol' gal!!:rotfl2: Sam is quite the pushy one too, while Steph kinda holds back !!

I really like it! Nice floors and sunroom. The taxes are about 1/2 of ours and our house cost about 1/2 as much. :rolleyes:

thanks!! mike graduated from law school in 2006 and has been looking for the right job ever since. he wanted to work as a title atty., but with the housing market down there was nothing!! he found a job as a title atty for a gas/oil company. it seems really great and the company is awesome. they usually work 9 hours m-th and only 4 hours on friday. but, they had a huge project with a past due deadline, so they had to work the weekend. mike talked to the other 3 title attys and they said whenever they have to work long hours, they will recieve a bonus in addition to the yearly bonus they receive in feb. they don't usually have to work that many hours and the company is pretty understanding. i'm hoping it's not a routine thing!!
