Are taxis easy to catch at the peaks and hotels?
We aren't renting a car, but I'm thinking a cab may be easier in some instances over Disney transportation.

I've always found that catching a taxi is very easy. There are taxi stands at all of the parks and most of the resorts have them right outside of bell services/valet. For the Deluxe resorts, I've always been able to step outside and hail one. As the PP said, all of the taxis that can pick-up guests in WDW are run by Mears (there are a couple of different companies, but they're all Mears in the end). I think you can get to most places for less than $25 plus tip.

Thank you for the information!! What about fare to Universal Studios? About how much would that be?

as far as parks go MK would be the hardest to get to or from by taxi as taxis are at the TTC, so you still have to take either the monorail or the ferry boat to the gate or from the gate get to at end of night

A better plan is to take the cab to the Contemporary and then walk to MK.

As Alesia said, it's easier to walk to the Contemporary Resort and get a taxi from there. If you take a taxi to MK, be sure to ask the driver to take you to the Contemporary. If you say the Magic Kingdom, they will take you to the TTC.
