I made an impromtu recipe of turkey salad for dinner tonight. I had leftover turkey breast (Butterball Honey Roasted) from last night's dinner and leftover canned mushrooms and black olives that needed to be eaten or tossed, so I chopped them all up and added bacon for a yummy sandwich.
I didn't measure, but here's what I mixed together, measurements may not be exact.
three 1/2" slices of honey roasted turkey breast, diced
1/2 lb. crisp bacon, chopped
1-2 tbs. sliced mushrooms, chopped
1 tbs. sliced black olived, chopped
1/4" sliced onion, chopped
2 tbs. Miracle Whip
mix all together, serve on favorite roll or bread.
If I would have thought of it sooner, I could have added hard cooked egg. You might also want to try it with diced tomatoes, celery, you name it.
