The OP can't use Uber, since they need a Car Seat, as the Daughter is just 5.

And when can you request a Car Seat from Uber in California? I know it is offered in New York City (Uber Family using UberX) I never have heard Uber/Lyft offering car seats in California.

Oh, I saw it was an option at WDW in August and I assumed it was available everywhere. I have only used Uber in Orlando so far.

Here is something I have seen mentioned multiple times (Bubble Bum Inflatable Booster Seat), and since the DD is 5, should work (and is legal in the US).

So you would order it and bring it with you, but it greatly expands your options, and you wouldn't have to pay the rental fee from a rental car company.

One drawback, you would have to carry it with you (It compacts but still something to think about) if you use Uber/Lyft to head to the beach.
