WooHoo! Flying Fish!
This is my favorite Signature Restaurant. I first ate here in 1999 on what would be my worst ever trip to WDW. The only thing I haven't blocked out from that trip is a visit to the Flying Fish. I had gone back to WDW in 2001, but being a college freshman on a trip w/ my bf of the time we weren't exactly rolling in Flying Fish levels of $. Additionally, her idea of eating adventurously is putting cheese on a burger.

Then last year I had planned to go to Flying Fish, but since I was in Orlando on business and found out I had to be at such and such a place at blah blah time I couldn't go to the Flying Fish.
Then, this trip was planned and nothing was keeping me from the Flying Fish!

My ADR was for 6:45pm and I wandered around the Boardwalk area for about an hour before hand. The Boardwalk is the only Deluxe hotel I have stayed at, which is funny because I grew up on a boardwalk.
I don't know why that's supposed to be funny I think staying in the EPCOT resort area is just wonderful, because you can walk (or boat) to two theme parks. On my next trip I'm contemplating staying at the Swolphin because of my
AAA rate, it's proximity to EPCOT, and since there are conventions there will most likely be less ankle-biters running around.

It was a Sunday so they were kinda busy, but not really busy. When I checked in for my ADR they offered me a seat at the bar/cooking counter area. I said sure, since I 'm by myself and saw that there were other people also seated there. I was stuck off in my own corner by my lonesome.
do i smell or something?
It was off to the left side of the counter and to my left there was just assorted chachkies around me. But to my immediate right was this:
hot flashes! at my age!
I am pretty sure I came out of this meal cooked medium rare. The glass protects you for sure, but there is some serious heat coming off of that thing. I thought about asking to move over or just doing it myself but there was a gaggle of drunk locals over there, so I prefered the quiet. My server ended up being really nice and it was a great meal, but ladies and gents if you sit here- leave your sweaters at home.

For my beverage I had the Magical Star Cocktail- which I have been seeing is a popular choice on these disboard dining reviews.
Magical Star Cocktail- Light up your celebration with: Xfushion Organic Mango and Passion Fruit Liqueur, Parrot Bay Coconut Rum, Pineapple Juice, and a Multi Glow Cube.

This was really good. Not too sweet and defidently a drink that I ordered another of.

The glow cube is great because it changes colors and has a bunch of different color combos. I took it home and my cat seems to really like it, so there you go- drinks for you and a toy for your cat. Win win.

I was brought out a lovely bread basket with warm

butter. Huzzah!
I wasn't exactly starving after my big lunch at Chefs de France, so I decided to forego the appetizers and jump right into the party that was soon to be happening in my mouth.

I ordered the signature dish: Potato-Wrapped Red Snapper w/ creamy leek fondue, veal glace, and red wine sauce. Is there an emoticon for drooooooooool. This dish is the best. It is fishy, so if that isn't your thing you might want to order something else, but I loooves to eat fishies!

The potato that is wrapped around it is like a thin potato crepe almost. It was flaky and crisp. The snapper was melt in your mouth tasty and tasted great with the sauce. The fondue was a wonderful addition and it all just went together perfectly. I can totally see why this is the signature dish- it seems like it might be too much, but it's just right.
After that I need a good smoke, but being a non smoker I settled for a cappuccino. I usually don't drink milky coffee in the evening, but I wanted something more mellow than just espresso to go with my dessert.

Now, as mentioned in previous posts, I don't stand for yucky coffee and this coffee was awesome. The foam was nice and light, froathy, and foamy.

No if I may pull out my food soapbox ....*shuffle shuffle plonk*... I feel that the pear is one of the most underused fruits. Everyone loves their citrus, maybe they like to grab a peach at the market, and who doesn't love a nice crisp apple, but it seems like pears get left behind and forgotten. I have found this to be especially true in SoCal where I see nary a pear anywhere on menus or in amigos kitchens. I'd like to thank Flying Fish for having a wonderful dessert with one of my favorite fruits:

Left to right we have; little pastries that had pears and cranberries in them. The cutest little half pear you ever saw- baked and filled with a white chocolate mousse. And last, but not least a pear cobbler in a tiny-winnie little skillet. This meal was so precious I almost couldn't handle it. I like little things. Tiny teacups, tapas, travel sized toiletries, and so on, so this was right up my alley.
As I understand it (and I may not at all) they change out what the "study" is for the dessert with the seasons. If you ever see the pear one though, give it a try. Pears aren't as flashy as other fruit, but they are still a great treat.
Noticing that the fire was about to flare up again for another round I paid my check so that I could leave without being a totally crispy critter.

This meal totally lived up to the hype I had in my mind, even with me skipping on the appetizers this round. We shall meet again at the end of September and I'm only going to be F&WF booth tasting that day, so I will be able to pace myself and leave some empty belly space for Crab Cake I spied on the online menu.
Thanks again for reading to all you commenters and all you lurkers. I must say, if you are a lurker, come out of hiding on the boards. You don't have to do it here, but I did and I found lots of lovely people who are hilarious and informative on the boards. Be not afraid! Any pal of Mickeys will surely be a pal of yours.
