Super Bowl Eats

Probably chili and chips...what type is still TBD (I have a hankering for my vegan pumpkin/black bean one, but I might have to add some ground pork or turkey if I go for that one to appease the spouse...or even have some crumbled bacon as a topping:))...
 
I'll be cooking crockpot shredded buffalo chicken served with homemade blue cheese dressing on slider rolls or on chips with baby carrots and cut up broccoli.

My husband would like meatballs, so small amount of Costco meatballs cooked with chili sauce and some cranberry sauce or leftover homemade grape jelly and I mix in some red pepper or siracha with again option of slider rolls.

I'll be making stuffed spinach artichoke dip in bread bowl. I use greek yogurt and some lowfat cream cheese with touch sour cream, frozen spinach, cut up jar artichokes, sun dried tomatoes, shredded cheeses poured/pushed into a bread bowl.

Always cut up veggies and fruits and likely a brownie in the kitchen.

We really like football food if you can't tell...
 

My family is requesting brats and sauerkraut, I'm just not sure yet what else we will have with it. I'm thinking a 7 layer bean dip, spinach dip, and a few other fun finger foods.
 
I told my kids that I wasn't watching, so I wasn't cooking this year. I figure, they're old enough to do it themselves if they're interested. They came up with:

wing platter from Walmart (I'm willing to buy this--they're very tasty)
ranch oyster crackers
fruit and dip (just yogurt/Coolwhip mixed)
7layer taco dip with tortilla chips
potato chips


All very easy. Interestingly, no dessert or drinks listed, but they'll figure that out eventually. I do have a gallon of Hawaiian Punch, left over from a small party a few weeks back. And my teens love to make desserts--DD17 makes a mean scratch chocolate cake with homemade frosting, and DS14 has been asking to try making cheesecake. So, whipping up a batch of cookies or something would be very easy for them--I'm the lazy one who would use a box mix; they now refuse to.
 
Just the 3 of us who live here. Making chili and I have tortilla chips if anyone wants to make chili cheese nachos. We only flip to the game for the commercials and half time show.
 
Not watching this year. I will probably click in every once in a while. I was planning on having wings this weekend anyway....if my husband will make them.
 
We will probably make pizzas and a big salad. I seem to prefer our own pizzas these days over anything we can get delivered!

So, with the Stromboli and Calzone that I’ll make, my DH requested my healthier version wing bites. I cut up chicken breasts, sauté them and toss with wing sauce. He also wants steak and cheese sliders.

Can you guess what we will have for dinner on Monday night, too?
 
Same as usual, nothing. Not into the Super Bowl or Pro Football. And I have to be honest, there have been times I was caught off guard when the NFL was mention because it never really set in that they were actually playing in the pandemic.
 
Wings from Buffalo Wild Wings

We really enjoy the wings from Buffalo WW, but the nearest one to us is about 30 minutes north and the last pickup time for Super Bowl sunday is 3PM. We've picked up a few times in years past, but buy the time I get home with them, then try to keep them warm in oven or crock pot, they just don't seem that great come game time. So...didn't order them this year. I meant to pick up some of their sauce but completely forgot...so this year we will make them ourselves.
Next time I'll remember to get the sauce at least!

We'll be having the usual stuff, wings and various dips & chips, potato skins, onion rings & brownies

Well, we ended up with:
  • Chicken wings, drumsticks and thighs cooked in the air fryer which took about 1.5 hours total (3 different batches).
    Coating sauces: Thai curry, mild buffalo, sweet chili, teriyaki mixed with minced garlic and honey
  • Homemade collard greens with ham hocks flavoring.
  • Cornbread with jalapeno, but this time used sour cream with milk. Perfection.
  • Pepper dill bread came out really well on dark crust setting.
  • Inspiralized zucchini noodles with avocado/lemon/corn/tomato peso sauce made in the blender.
